3 tablespoons butter or 3 tablespoons margarine
1/2 cup diced celery
1/2 cup diced onion
3/4 cup diced carrot
3 tablespoons flour
1 teaspoon dried thyme
1 (17 ounce) can cream-style corn
2 cups milk
1 (7 ounce) can light tuna, drained
1 cup bottled clam juice or 1 cup chicken broth
salt and pepper

Steps:

  • Melt butter in a medium saucepan, add celery, onion and carrots.
  • Saute over medium high heat for 5 minutes.
  • Reduce heat to low, add flour and thyme, cook and stir 2 minutes.
  • Add corn, milk, tuna and clam juice, increase heat to medium high stirring constantly until mixture reaches a simmer.
  • Reduce heat to low, add salt and pepper, and gently simmer until vegetables are tender, adding more milk or clam juice if necessary.

Throw this chowder together and let it simmer away while you get the rest of dinner ready and its nearly done. Not only that but this is a light and tasty soup! This is not a thick chowder - when I want to thicken it up a little I mix 2T cold water and 1T cornstarch together, add to simmering soup until thickened (don't bring soup to boil with milk in it though!).

1 medium onion, diced
1 large potato, diced
2 1/2 cups water
1 (6 1/2 ounce) can tuna, drained
1 (17 ounce) can cream-style corn
1 1/2 cups skim milk
2 tablespoons water (optional)
1 tablespoon cornstarch (optional)
1/4 teaspoon cayenne (optional)
1/4 teaspoon fresh ground pepper

Steps:

  • Combine onion, potato and water. Bring to a boil, and boil covered 10 minutes or until onion and potato are tender.
  • Add tuna, milk, creamed corn, black pepper and cayenne, if using, and heat through. Do not boil.

1 (10 1/4 ounce) can condensed cream of potato soup
3 cups milk
1 tablespoon grated onion
1 small bay leaf
chopped fresh parsley
1 (8 ounce) can whole kernel corn, drained
1 tablespoon butter
black pepper

Steps:

  • Combine the potato soup, milk, onion, bay leaf, butter and pepper and simmer the mixture for a few minutes, stirring occasionally.
  • Add the corn and the tuna and heat, but do not boil. Remove the bay leaf and serve.

Been craving for hearty soups recently as it is now autumn here in Melbourne.. and I came up with this recipe this evening.

1 (100 g) can tuna in water, do not drain
1 (100 g) can creamed corn
1/2 onion, chopped
1/4-1/2 head broccoli, cut into small florets
1/2 tablespoon olive oil
1/2 tablespoon flour
300 ml milk, I used skim
salt and pepper, to taste
cayenne pepper (optional)

Steps:

  • Heat oil in pan over medium heat.
  • Add flour and whisk until well blended.
  • Add milk, stir until incorporated, and bring to boil over moderate heat.
  • Add onion and broccoli, simmer on low heat for 10 minutes.
  • Add tuna (and the liquid), corn, salt, and pepper.
  • Simmer until thickens and broccoli is tender - approximately 10 minutes.
  • (optional) Sprinkle with cayenne pepper before serving. Serve with baguette or garlic bread, if desired.

Steps:

  • Melt the margarine over a medium heat, in a large saucepan, then add the curry powder and flour.
  • Slowly add the chicken stock and milk mixing well until there are no lumps left. If this is taking too long you can use a food mixer to help.
  • When mixed and blended add the tuna and sweetcorn. Also add salt and pepper to taste.
  • Bring to the boil, lower heat and simmer for 2-3 minutes.
  • Serve immediately.
