TUNA CASSEROLE
Break out a family favorite: tuna casserole. The traditional comfort food is great for serving large groups. In our tuna casserole recipe, we cut the sauce with chicken broth, but there's enough milk to make this casserole feel indulgent.

- Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
- In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
- Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
- Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
- Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

EASY TUNA CASSEROLE
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a 9x13-inch baking dish, combine the macaroni, tuna, and soup. Mix well, and then top with cheese.
- Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until bubbly. Sprinkle with fried onions, and bake for another 5 minutes. Serve hot.

- Cook noodles al dente as per package directions.
- Combine mushroom soup and milk in a 10 x 10 casserole dish ( or similar in size).
- Add in peas (drained).
- Add in tuna in water (drained).
- Mix gently as you do not want the tuna fish to mince. leave some chunks in there.
- Add in cooked noodles and blend well.
- Top with pat of butter.
- Microwave for 5 minute stir.
- Serve and enjoy.
- *** Prep time does not include time to get noodle water to boil.
- *** Can sizes vary, I generally use the standard size anywhere from 10-14 oz.

- Cook the noodles according to package directions, but undercook by at least a minute since they will cook again while the casserole bakes. While the noodles are cooking, shred half the cheese. Take half of what's left and cube it into 1/4-inch pieces. Stir the shredded and cubed cheddar into 3 cans of mushroom soup. Slice up the remaining cheese and set aside for the topping. Drain the noodles into a large bowl, and add enough of the soup-cheese mix to prevent the noodles from sticking while the rest of the casserole ingredients are prepped. Preheat the oven to 350º. Chop up two onions, as fine or rough as you like. Thinly slice 8-10 ribs of celery. Sauté the onions and celery in about 2 Tablespoons of Canola oil until the onions have softened. Mix them both into the soup-cheese mix. Peel and roughly chop the hard-boiled eggs. Open and drain all the tuna; using a fork, flake the tuna into a medium bowl, then fold in the eggs. Add the tuna-egg mixture to the soup-cheese mixture. Slice up the tomatoes and gently mix them in, then fold in the noodles. If the casserole looks or tastes too dry, add another can of cream of mushroom soup, or 1/2 to 1 cup of any kind of milk. Taste, and add salt as necessary. Put the whole thing into a large dutch oven or other casserole, and bake, covered, for 30 to 40 minutes. Uncover the casserole and top with the remaining sliced cheese. Return it to the oven and continue to bake, uncovered, until the cheese melts, about 10 minutes. Serve hot. This tastes even better as leftovers, thinning with a bit of milk as necessary.
GRANDMA'S TUNA CASSEROLE
I know it sounds crazy, but trust me, this tuna casserole is one of the yummiest things ever. Comfort food madness! Before this, Grandma had never written out this recipe. She doesn't measure anything when cooking this, but it must be tasted throughout.

- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.
- Lay 1/2 of the butter across the bottom of a 2-quart, microwave-safe casserole dish. Crush potato chips, then sprinkle 1/4 of the crushed chips over the bottom and press to flatten.
- Spread the tuna-noodle mixture in a single layer over the crushed chips. Layer with 1/2 of the mozzarella, 2/3 of the remaining chips, followed by the remaining butter, chips, milk, and mozzarella.
- Microwave on high until casserole is hot and cheese is melted, about 10 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of water to a boil. Add egg noodles and 3 teaspoons salt to the boiling water; cook until tender yet firm to the bite, about 6 minutes. Drain noodles. Return to pot and set aside.
- Heat 2 tablespoons butter and 1 tablespoon oil in a large skillet over medium-high heat. Add mushrooms and onion and cook until mushrooms are softened and onions are translucent, about 4 minutes. Add remaining butter; stir constantly until melted. Sprinkle flour over vegetable mixture and cook, stirring constantly, for 1 minute. Stir in milk and stock and bring to a simmer, stirring often. - Preheat oven to 375 degrees.
- Boil egg noodles according to package directions.
- Meanwhile, combine ALL REMAINING INGREDIENTS EXCEPT THE SHREDDED CHEESE in extra large, deep bowl. I recommend thoroughly flaking the tuna FIRST in the bowl with a fork.
- Drain noodles when done to desired tenderness.
- Combine cooked noodles into the bowl of wet ingredients.
- Mix thoroughly by folding noodles in with a large spoon.
- Pour mixture into 13 X 9 inch casserole dish, or smaller if you prefer a thicker casserole.

BACHELORS TUNA CASSEROLE
This is a budget wise, easy, quick way to feed a group of four to six people a nice casserole dinner. Great to prepare ahead, cover and put in fridge-just heat in oven or microwave later.

- In a 5-quart stove-top pot, bring water to a boil. Add pasta and hold at a boil until tender (usually once water starts to boil turn heat down to medium heat and let cook for ten minutes). Then turn off the heat and drain pasta in the 5-quart pot.
- Add tuna, peas, and can of soup. Stir gently to not break the pasta. Pour mixture into a 9x12-inch baking dish or an 8x8 baking dish. Distribute cheese evenly over the pasta mix.
- At this point, you can let it cool and cover it after 20 minutes, refrigerate and prepare for dinner the following evening, or put it directly into a 350°F oven and bake uncovered for 30 minutes.
- Carefully remove from oven with hot mitts and serve. Can be served alone or with hot bread and a green salad.
