ENDIVE SALAD BOATS

Number Of Ingredients 7

4 slices turkey bacon
2 large endives
1 small tomato, diced
1/2 cup fat-free blue cheese dressing
1/3 cup minced red onion
1/3 cup chopped walnuts
Kosher salt and freshly ground black pepper

Steps:

  • Lay the bacon in a large nonstick skillet and cook over medium heat until golden and crispy, about 5 minutes per side. Transfer to a paper towel-lined plate to drain. Chop and set aside.
  • Separate the endive leaves and arrange 14 large spears on a serving platter. Set aside the remaining leaves.
  • Divide the tomatoes evenly between the endive spears. Drizzle with the blue cheese dressing. Top with the red onion, bacon and walnuts. Season with salt and pepper. Chop the remaining endive leaves and use them to garnish the platter before serving.

2 eggs
2 (5 ounce) cans tuna, drained
1 (6 ounce) can crabmeat, shredded
½ cup mayonnaise
1 teaspoon sour cream
1 teaspoon yellow mustard
½ teaspoon dried dill weed
⅛ teaspoon lemon pepper
2 tablespoons dill pickle relish
2 tablespoons sweet pickle relish
¾ cup finely chopped onion

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop finely.
  • In a mixing bowl, combine tuna, crabmeat, mayonnaise, sour cream and mustard. Stir in chopped egg, dill weed, lemon pepper, dill and sweet relish and chopped onion. Mix thoroughly.

2 cans (6 ounces each) tuna, drained and flaked
1 hard-boiled large egg, chopped
3 tablespoons finely chopped celery
1 tablespoon finely chopped onion
1/2 cup Miracle Whip
1 teaspoon sweet pickle relish
4 submarine sandwich or hoagie buns
4 lettuce leaves
4 slices cheddar cheese
8 wooden skewers
Goldfish cheddar crackers

Steps:

  • In a bowl, combine the tuna, egg, celery and onion. Stir in the Miracle Whip and pickle relish; set aside. Make a 2-in. wide V-shaped cut in the center of each bun to within an inch of the bottom. Remove cut portion and save for another use. Line each bun with a lettuce leaf and fill with tuna mixture., Cut cheese slices in half diagonally. For sails, carefully insert a wooden skewer into the top center of each cheese triangle. Bend cheese slightly; push skewer through bottom center of cheese. Insert two skewers into each sandwich. Place on a serving plate. Sprinkle fish crackers around boats.

  • Slice the cucumber into thin slices and add to a bowl of ice water. With a sharp knife, slice the brown cut end from each endive and carefully remove a layer of leaves. Slice off the end again to release the next layer of leaves. Continue the process until you have about 20 leaves approximately the same size. Reserve any unused portions of the Belgian endive for another purpose.
  • Remove the partially thawed tuna from the refrigerator and place on a clean work surface. Using a very sharp, thin-blade knife, cut the tuna into 1/4-inch slices. Add the sliced tuna to a plate and drizzle the vinaigrette over it. Allow to marinate for 5-minutes while preparing the serving plate.
  • Remove the cucumber slices from the cold water and place on an absorbent kitchen towel, blot dry with paper towels.
