3 tablespoons plus 1/2 cup olive oil, divided
3 tablespoons chopped shallots, divided
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 pound tuna steaks (1 inch thick)
1/4 cup cider vinegar
1 tablespoon Dijon mustard
1-1/2 teaspoons sugar
1 package (5 ounces) spring mix salad greens
1 cup cut fresh thin asparagus (1-inch pieces)
1 cup grape tomatoes, halved
2 tablespoons minced chives

Steps:

  • In a large resealable plastic bag, combine 3 tablespoons oil, 1 tablespoon shallots, 1/4 teaspoon salt and 1/8 teaspoon pepper. Add tuna steaks. Seal and turn to coat; marinate for 10 minutes. , Meanwhile, for dressing, combine the vinegar, mustard, sugar, and remaining shallots, salt and pepper in a small bowl; slowly whisk in remaining oil. Set aside. , Drain and discard marinade. In a large nonstick skillet, cook tuna over medium heat for 3-5 minutes on each side for medium-rare or until slightly pink in the center. , On individual salad plates, arrange the greens, asparagus and tomatoes. Cut tuna into bite-size pieces; add to salads. Drizzle salads with dressing. Sprinkle with chives.

1 Tbls Black seasme seed
1 Tbls White sesame seed
1/3 Tsp Chinese five spice
2 Each Scallions (Sliced on the bias)
1 Tbls Red pepper (Small diced)
1 Clove Garlic (Shredded on microplane)
1 Inch Cube peeled ginger root (Shredded on microplane)
1 Tsp Wasabi paste
2 Tbls Braggs liquid aminos
1 Tbls Mirin
1 Tsp Honey
2 Tbls Rice wine vinegar
1 Tbls Toasted sesame oil
1 Tsp Sunflower oil ( Grapeseed nuetral flavor oil fine not olive oil )
8 Each Cucumber slices (Very thin slices )
1/ 2 Each Asian pear (Thinly sliced )
1 Tbls Coconut oil
1 Cup Arugula salad blend

Steps:

  • Gather all ingerdients
  • Mix ginger, braggs, garlic, vinegar, honey, mirin, seasme oil, sunflower oil, wasabi paste, whisk to fully incorporate. Let sit for minimum 30 minutes. It is important to use micrplane for ginger and garlic you do not want chunks of either in dressing.
  • Mix white, black seasme seeds and chinese five spice place on plate and press tuna into mixture to fully coat
  • Plate arugula, pear slices and cucumber slices
  • Sear tuna steak on very hot skillet in 1 Tbls sesame oil. 90 seconds on both sides will achieve perfect rare. Remove from heat let rest 3 minutes
  • Slice tuna 1/8" slices and place on top of salad. Garnish with red pepper and scallions. Dress with vinegrette

1 large unpeeled pear, chopped (1 1/2 cups)
1 medium hot or mild yellow chile, chopped (2 tablespoons)
2 medium green onions, chopped (2 tablespoons)
2 tablespoons chopped fresh cilantro
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1/2 teaspoon salt
6 small yellowfin tuna, swordfish or halibut fillets (1 1/2 lb)

Steps:

  • In small glass or plastic bowl, mix all salsa ingredients. Cover; refrigerate at least 1 hour to blend flavors but no longer than 24 hours.
  • Set oven control to broil. Spray broiler pan rack with cooking spray. Place fish on rack in broiler pan. Broil with tops about 4 inches from heat about 5 minutes or until fish flakes easily with fork. Serve tuna topped with salsa.

1 tuna steak (8 ounces)
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
4 cups torn romaine
2 medium navel oranges, peeled and sectioned
1 cup cherry tomatoes, halved
DRESSING:
1/4 cup minced fresh basil
1/4 cup olive oil
1 tablespoon orange juice
1 tablespoon balsamic vinegar
1 teaspoon grated orange zest
1 garlic clove, minced
1/2 teaspoon Dijon mustard
1/4 teaspoon sugar
1/8 teaspoon pepper

Steps:

  • In a large saucepan, bring 4 cups water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. 1 tablespoon soy sauce
1/2 lime, juiced
1 teaspoon grated ginger
1 teaspoon Chinese mustard
1 tablespoon chopped cilantro
1/2 cup canola oil
1 1/2 pounds Ahi tuna loin, cut in 4 strips
Salt and pepper
2 tablespoons dark sesame oil
1/3 cup sesame seeds
1 bunch mizuna greens
1 bunch arugula greens
3 cups torn red leaf lettuce
3 cups torn green leaf lettuce
2 green onions, chopped
1/2 cup fried rice noodles
1/4 cup slivered almonds, toasted
1 navel orange, peeled and sectioned

Steps:

  • In a small bowl, whisk together the vinegar, soy sauce, lime, ginger, mustard and cilantro. Pour in the oil and continue to whisk until emulsified.
  • Season the tuna fillets with salt and pepper; lightly coat with oil. Put sesame seeds on a plate. Coat top and bottom of each fillet with seeds. Heat a large, dry skillet over high heat. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.
  • Mix the greens together and spread out on a platter. Add the green onions, rice noodles almonds, and orange segments. Lay the tuna strips on top then drizzle with the vinaigrette. Season with salt and pepper and serve immediately.

1 cup cherry tomatoes, sliced
1/3 cup red onion
1/3 cup black olives, sliced
2 tablespoons soy sauce
1 tablespoon rice vinegar

2 teaspoons sesame seeds, toasted
1/2 teaspoon garlic, minced
1/2 teaspoon gingerroot, minced

Steps:

  • In a skillet or grill pan sprayed with cooking spray, cook tuna over medium high heat for about 5 mnutes, turning once, or until medium rare. Set aside.
  • To make salad; In a serving bowl, toss lettuce, tomatoes, onion s and olives.
  • Dressing: In a small bowl, combine dressing ingedients, reserving 1 tsp sesame seeds.
  • Slice tuna thinly; place over top of salad. Pour dressing over; toss gently. Sprinkle with cilantro and remaining sesame seeds.

Steps:

  • Prepare barbecue (medium-high heat). Stir soy sauce and brown sugar in pie dish until sugar dissolves. Using mortar and pestle or spice mill, coarsely grind peppercorns. Dip both sides of tuna steaks in soy mixture. Sprinkle both sides of tuna generously with peppercorns, pressing to adhere. Grill tuna to desired doneness, about 2 minutes per side for medium-rare.
  • Combine greens and radishes in large bowl. Toss with enough Caesar Vinaigrette to coat salad. Season to taste with salt and pepper. Divide salad among 6 plates. Cut tuna crosswise into thin slices; place alongside salad. Drizzle tuna and greens with remaining vinaigrette.
