2 navel oranges, peeled and sliced
1 red bell pepper, ribs and seeds removed, diced
1/2 cup diced red onion
1/4 cup torn fresh mint leaves
1 tablespoon red-wine vinegar
Coarse salt and ground pepper
1 tablespoon vegetable oil, plus more for grates
4 tuna steaks (each 6 to 8 ounces and 3/4 inch thick)
1 teaspoon ground coriander
Boston lettuce (optional)

Steps:

  • Make salsa: In a medium bowl, toss together oranges, bell pepper, onion, mint, and vinegar; season with salt and pepper. Set aside.
  • Heat grill to high; oil grates. Rub tuna with oil, coriander, salt, and pepper. Place on grill; cook, turning once, until browned in spots but still pink in the center, 4 to 6 minutes. Serve topped with salsa. Garnish with lettuce leaves, if desired.

2 large oranges peeled sectioned and chopped
1 teaspoon(s) orange zest
1 large tomato seeded and chopped
1 small jalapeno seeded and chopped
2 tablespoon(s) green onions chopped
1/4 cup(s) fresh cilantro chopped
1 tablespoon(s) lime juice
salt and pepper

Steps:

  • Cook the Tuna steaks however you like. Sear/Grill/ Broil
  • Mix all the ingredients together for the salsa and serve on top of tuna steaks

Seared Tuna with Citrus Salsa image

2 tuna steaks (about 6 to 8 ounces each)
2 tablespoons black peppercorns, crushed
2 oranges
1 red onion, chopped
1/2 cup cilantro leaves, chopped
1 tablespoon olive oil
1 lime
Salt
Cayenne pepper

Steps:

  • Rub tuna steaks with peppercorns and set aside while you make the salsa.
  • To make the salsa, section oranges, removing all peels and pith. Chop orange sections into 1/2-inch pieces. Combine orange with onion, cilantro, olive oil and lime juice. Toss together, season with salt and cayenne and set aside. Rub a cast iron grill pan with oil and heat. Grill tuna, turning once, until desired degree of rareness is reached, from 2 to 5 minutes per side, depending on thickness. Serve topped with citrus salsa.

Super simple grilled tuna topped with a delicious and fresh citrus salsa.

2 medium oranges, (peeled and diced (cut off any white pith))
1 medium red bell pepper, (seeded and finely chopped)
½ cup diced red onion
¼ cup torn fresh mint leaves
2 tablespoons red wine vinegar
sea salt and freshly ground black pepper, (to taste)
Four 6-ounce fresh tuna steaks
1 tablespoon extra-virgin olive oil
1 teaspoon ground coriander
sea salt and freshly ground black pepper

Steps:

  • In a medium bowl mix together the oranges, pepper, onion, mint and vinegar. Season with salt and pepper and set aside.
  • Heat the grill to high-heat. Oil the grates generously with vegetable oil (not cooking spray), and let heat up. Rub each tuna steak with a little bit of olive oil, and then sprinkle with coriander, salt and pepper. Place the tuna steaks on the grill and cook 4 to 6 minutes, turning just once. It will still be pink in the center.
  • Top with salsa, and serve.

This recipe is from the America's Test Kitchen Family Cookbook. It is a delicious light recipe that comes together very quickly. Leave the tuna pink in the center for the best flavor. For an alternative preparation omit the sesame seeds and press 1/2 teaspoon cracked black peppercorns onto each side of the oiled tuna steaks before cooking.

1 large orange, peeled and cut into 1/2 inch pieces
1 avocado, pitted and cut into 1/2 inch cubes
2 tablespoons minced red onions
4 teaspoons fresh lime juice
1 small jalapeno chile, stemmed, seeded, and minced
2 tablespoons minced fresh cilantro
salt
3/4 cup sesame seeds
4 tuna steaks, 1 inch thick (8 oz. each)
2 tablespoons vegetable oil
salt and pepper

Steps:

  • For the salsa:
  • Combine all of the ingredients in a small bowl and season with salt to taste.
  • For the fish:
  • Spread the sesame seeds in a shallow dish.
  • Pat the fish dry with paper towels, then rub thoroughly with 1 tablespoon of the oil.
  • Season the fish with salt and pepper.
  • Press both sides of each steak into the sesame seeds to coat.
  • Heat the remaining 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat until just smoking.
  • Gently lay the tuna in the pan and cook until the seeds are golden brown 1.5 - 2 minutes.
  • Carefully flip the fish and continue to cook until just golden brown on the second side, 1.5 - 3 minutes depending upon your desired doneness.
  • Serve with the salsa.
