1 tablespoon cumin seeds
1/4 cup fresh lemon juice
1/2 cup extra-virgin olive oil
2 pounds red-skinned new potatoes, unpeeled, cut into 1-inch pieces
1 tablespoon salt
4 large hard-boiled eggs, peeled, coarsely chopped
2 green onions, thinly sliced
3 tablespoons chopped red onion
1/4 cup chopped fresh cilantro
1 heaping tablespoon chopped seeded drained pickled jalapeño chilies from jar, 2 tablespoons liquid reserved

Steps:

  • Toast cumin seeds in heavy small skillet over medium heat until fragrant, about 30 seconds. Cool. Using spice grinder, coarsely grind cumin seeds. Transfer to medium bowl. Whisk in lemon juice, then oil. Season dressing to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Place potatoes in large pot. Add enough cold water to cover. Add 1 tablespoon salt. Boil potatoes until tender when pierced with skewer, about 8 minutes. Drain. Transfer to large bowl. Add eggs, green onions, red onion, cilantro, jalapeño chilies, and 2 tablespoons chili liquid. Pour dressing over salad; toss to coat. Season to taste with salt and pepper. Transfer to serving bowl. Serve warm or at room temperature. (Can be made 2 hours ahead. Let stand at room temperature.)

1 lb baby potatoes
salt, as needed
1/2 teaspoon sugar
1 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
2 -3 garlic cloves, chopped
15 -20 mediterranean oil-cured black olives (such as Kalamata)
3 tablespoons extra virgin olive oil
1/2 lemon, juice of (to taste)

Steps:

  • Place the potatoes in a pot with water to cover; add 1 teaspoon salt and the sugar.
  • Bring to a boil over high heat then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  • Drain the potatoes, return them to the pan and shake in the dry pan for a few minutes, until thoroughly dry.
  • Cut the potatoes into thick slices, several per potato, or into quarters.
  • Place in a bowl and toss with the cumin, paprika, cayenne, garlic and olives.
  • Dress with the olive oil, lemon juice and salt; refrigerate until ready to serve, or serve at room temperature.

1 1/2 lbs potatoes (I tested Yukons)
1/4 teaspoon harissa (to taste)
1 teaspoon ground cumin (if you have time, gently dry roast the cumin powder in a cast iron skillet)
1 large lemon, juice of
2 tablespoons extra virgin olive oil (Shulman uses much less but I love my olive oil!)
1/4 cup plain yogurt, to desired consistency
2 tablespoons fresh cilantro (FRESH!) or 2 tablespoons fresh flat leaf parsley, minced (FRESH!)

Steps:

  • Steam or boil the potatoes until tender-about 15-20 minutes. I *very* slightly undercook the potatoes for best results. *After the potatoes have cooked, refresh under cold water, drain and cut into cubes. *Note: when I made this potato salad recipe I drained the potatoes, placed them in a bowl to cool until just warm and proceeded with the recipe. After the potato salad had cooled in the refrigerator then the fresh cilantro was stirred in just before serving. I wanted to avoid "cooking" the fresh herbs.
  • Combine the remaining ingredients except for the herb(s) in a large bowl and mix well. Add the potatoes to the bowl and toss with the dressing. Can serve warm; or chill and serve (depends on time of year).
  • Stir in the herbs just before serving.

1 teaspoon harissa (Tunisian)
1/2 teaspoon salt
1 teaspoon cumin
1 lemon, juice of
fresh cilantro or parsley, to taste

Steps:

  • Cook potatoes in boiling water for 15 minutes or until tender but not too soft or mushy.
  • Cool and peel, cut into cubes.
  • Heat oil in a small skillet and add harissa, salt, cumin and lemon juice.
  • Bring to a boil and boil for a few seconds. Pour over potatoes and toss.
  • Refrigerate for 1 hour or overnight.
  • Add the chopped cilantro or parsley just before serving. Stir it in or sprinkle on top as you wish.

4 medium potatoes, peeled and cut in 1/4-inch dice
water
salt
1/2 cup vegetable oil
3/4 teaspoon cayenne
1/4 teaspoon cumin
1 tablespoon water
2 tablespoons fresh lemon juice
1 teaspoon ground caraway
1 1/2 teaspoons salt

Steps:

  • Cook potatoes in lightly salted boiling water until tender but still intact.
  • Drain and return to pan.
  • Cook over low heat until potatoes are dry, about 1 minute.
  • Heat oil in a large, heavy skillet over medium heat until a light haze forms above it.
  • Combine cayenne, cumin and water.
  • Add cayenne mixture, lemon juice, caraway and salt to skillet.
  • Cook, stirring constantly, until most of the liquid has evaporated.
  • Remove from heat, add potatoes, and stir gently until evenly coated.
  • Cool to room temperature before serving.

1 teaspoon salt, or as needed
3 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground caraway
1 teaspoon ground coriander
1 teaspoon harissa or other hot sauce
Fresh lemon juice, as needed, optional

Steps:

  • Bring a pot of water to a boil, and add carrots and 1 teaspoon salt. Boil until almost tender, about 15 minutes. Meanwhile, set aside a bowl of ice water. Transfer cooked carrots to the ice bath and chill.
  • Drain carrots, and cut into disks about 1/4-inch thick. Transfer to a bowl and add olive oil. Sprinkle with cumin, caraway, and coriander. Add harissa or hot sauce, and mix gently. Season with lemon juice and salt to taste. Serve at room temperature.

Steps:

  • Whisk vinegar and garlic in small bowl. Gradually whisk in olive oil. Season vinaigrette to taste with salt and pepper.
  • Prepare barbecue (medium-high heat). Place corn, chiles, and bell peppers on grill. Cover and grill until corn kernels are tender and chiles and bell peppers are blackened on all sides, turning frequently, about 5 minutes for corn and 12 minutes for chiles and bell peppers. Transfer vegetables to 2 baking pans. Cover chiles and bell peppers; let stand until cool. Cut corn kernels off cobs; transfer to medium bowl. Peel, seed, and coarsely chop chiles and bell peppers; add to bowl with corn. DO AHEAD: Vinaigrette and vegetables can be made 1 day ahead. Cover separately; chill. Bring vinaigrette to room temperature and rewhisk before using.
  • Stir cumin seeds in small dry skillet over medium heat until fragrant, about 2 minutes. Transfer to small bowl; set aside. Cook potatoes in large pot of boiling salted water just until tender when pierced with knife, about 20 minutes. Drain. Rinse under cold water. Drain and cool slightly. Cut potatoes into 1/3- to 1/2-inch-thick slices. Transfer to large bowl. Add grilled vegetables and vinaigrette; toss to coat. Add cumin seeds, green onions, and cilantro and toss. Season generously with salt and pepper. Cover; chill at least 2 hours. DO AHEAD: Can be made 8 hours ahead. Keep refrigerated. Serve chilled or at room temperature.
