TURBOT WITH BROWN BUTTER AND CAPERS

4 turbot fillets
Kosher salt and freshly ground black pepper
2 to 3 tablespoons canola oil
1 1/2 sticks (12 tablespoons) unsalted butter
1/2 cup dry white wine
1/4 cup drained capers
1 lemon, juiced and zested
1/4 cup chopped fresh tarragon, plus 4 sprigs, for garnish

Steps:

  • Sprinkle the turbot on both sides with salt and pepper. Heat a few tablespoons of canola oil in a large saute pan over high heat. When you see a wisp of smoke, add the fillets to the pan (do not overcrowd the pan to achieve a proper sear, so cook in batches if you have to). Add 1 to 2 tablespoons of the butter per fillet to the pan. Cook the turbot on both sides until lightly golden brown and just cooked through, about 2 minutes total. Remove to a plate.
  • Deglaze the pan with the white wine over medium-high heat and let cook all the way down to a dry pan. Add the remaining butter to the saute pan and cook until slightly golden brown. Add the capers and lemon juice, and then add the fish back to the pan. Baste the fish with some of the sauce to warm. Remove from heat, add the tarragon and season with salt and pepper if necessary.
  • Put each fillet on a plate and spoon the sauce over the fish. Garnish with the lemon zest and a sprig of tarragon.

1 -2 kg turbot
50 g dried morels
4 slices of uncooked duck foie gras, about 150g
300 g fresh pasta
1 cup creme fraiche
100 g butter
10 1/2 ounces dry white wine
2 -3 shallots
salt
pepper

Steps:

  • Rehydrate mushrooms by immersing in lukewarm water for 20-25 minutes. Wash mushrooms 2-3x until any grit has been removed. Peel and cut the shallots.
  • Melt 20g butter in a pan and add shallots. Add mushrooms and 7 oz. white wine. Simmer on low heat, 4-5 minute Add creme fraiche and let simmer again for about 10 minute Salt and pepper as desired.
  • Cut foie gras into 1cm pieces. Brown them in butter in a very hot nonstick pan for about 2 minute
  • Cook pasta in salted water. Drain and add butter. Mix pasta with foie gras pieces.
  • Prepare turbot: Melt butter in a hot pan and add turbot and 3.5 oz. white wine. salt and pepper as desired. Cook for about 15 minute Sprinkle shallots on top before serving.

1/4 pound butter
2 ounces truffles, plus extra, for garnish
4 tablespoons almond powder
1/2 cup clarified butter
4 turbot fillets
1/2 cup fleur de sel

Steps:

  • In a saucepan, combine butter, truffles, and almond powder. Once the mixture is well combined, place in blender to create a sauce.
  • Preheat skillet and add clarified butter
  • Once skillet is hot place turbot in pan. Sear turbot on both sides.
  • To plate dish, place cabbage on plate, add turbot on top of cabbage. Drizzle truffle almond sauce over turbot and plate. To garnish add finely chopped truffles and fleur de sel.

1 lb lemon sole (or flounder)
1/2 lb green seedless grape (peeled)
4 tablespoons unsalted butter
2 shallots, chopped
1 garlic clove, minced
1 lemon, juice of
4 ounces half-and-half (room temperature)
1/4 cup white wine
2 tablespoons flour
2 tablespoons butter
1/4 teaspoon salt
1/8 teaspoon ground pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Rinse fish, pat dry and season with salt and pepper.
  • Place fish in pan and pour wine, lemon juice, and melted butter over the fish.
  • Sprinkle on the shallots.
  • Cover the pan with foil and bake for 25 minutes.
  • Pour drippings from fish into saucepan and reduce slightly.
  • Add half and half.
  • Cut the 2 tablespoons of flour and 2 tablespoons of butter together with a fork.
  • Add the flour/butter mixture to the fish drippings and stir until it thickens.
  • Remove saucepan from heat and add peeled grapes.
  • Pour sauce with the grapes over fish.

8 medium-size Yukon Gold potatoes, about 1 pound
Salt
7 tablespoons crème fraîche
8 tablespoons unsalted butter, preferably high-fat European style, diced
Freshly ground black pepper
3 tablespoons extra virgin olive oil
16 pearl onions, peeled
1 large shallot, finely chopped
2 cups St.-Émilion or other dry red wine, preferably merlot
2 cups fish stock
1 pound turbot or sea bass fillets, skinned, in four pieces
1 tablespoon chopped flat-leaf parsley leaves

Steps:

  • Place potatoes in boiling salted water and cook until tender, about 15 minutes. Drain, peel and mash in a ricer. Return to pan, heat briefly and add 5 tablespoons créme fraîche and 1 1/2 tablespoons butter. Season with salt and pepper and set aside in pan, covered.
  • Heat 2 tablespoons oil in a small skillet, add onions and sauté over medium heat until lightly browned and tender. Set aside, covered.
  • Heat remaining oil in a wide saucepan or a sauté pan that can hold fish in a single layer. Add shallots and sauté over low heat 5 minutes. Add wine and stock and bring to a simmer. Slip fish pieces into pan. Poach 3 to 4 minutes, until just firm. Remove fish, draining well. Place on a warm plate and cover to keep warm.
  • Boil cooking liquid until reduced to about 1 cup. Whisk in remaining créme fraîche and season to taste with salt and pepper. Over low heat add remaining butter bit by bit, whisking it in. Sauce will thicken somewhat and turn glossy.
  • Reheat potato purée and spoon into center of each of 4 dinner plates. Place a piece of fish on top and place onions around. Gently reheat sauce and spoon over each portion. Sprinkle with parsley and serve.

4 fillets of turbot, about 6 ounces each
1 lime
2 tablespoons unsalted butter
1 teaspoon fresh ginger, grated
Coarse salt and freshly ground pepper to taste
1/4 cup white wine

Steps:

  • Pat the fillets of turbot dry with paper towels. Pare the lime in strips, without the pith, and blanch the peel. Remove the pith from the rest of the lime and cut the fruit into sections. Finely shred the blanched peel.
  • Put the turbot fillets on a buttered dish, arrange the lime sections on top, sprinkle the grated ginger over all and add the shredded peel. Season with salt and pepper and add the wine. Meanwhile preheat oven to 160 degrees. Bring the mixture to boil on top of the stove.
  • Transfer the mixture to the oven, cover with foil and leave until done (about 10 to 15 minutes). Remove the fillets and reduce the juices on top of the stove to form the sauce.
