Summer Turkey Salads image

Tender turkey is treated to a yummy walnut coating in this dressy salad that just begs to be served outside. Add a cold glass filled with Arnold Palmer mix-lemonade and iced tea-and enjoy! -Taste of Home Test Kitchen

1/4 cup all-purpose flour
1/2 teaspoon salt
1 large egg, beaten
3/4 cup finely chopped walnuts
1/2 teaspoon dried rosemary, crushed
1/2 pound turkey breast cutlets, cut into strips
1 tablespoon olive oil
1 package (5 ounces) spring mix salad greens
2 plum tomatoes, cut into wedges
1 cup fresh blueberries
1/2 cup mandarin oranges
2 green onions, thinly sliced
BLUEBERRY VINAIGRETTE:
1/4 cup red wine vinegar
1/2 cup fresh blueberries
1 tablespoon honey
2 teaspoons Dijon mustard
1/4 cup olive oil

Steps:

  • Combine flour and salt in a shallow bowl. Place egg in a separate shallow bowl. Combine walnuts and rosemary in another shallow bowl. Coat turkey in flour mixture, then dip in egg and coat with walnut mixture., In a large skillet over medium heat, cook turkey in oil in batches for 2-3 minutes on each side or until meat is no longer pink. , Divide salad greens among four serving plates; top with tomatoes, blueberries, oranges, onions and turkey strips. , In a blender, combine the vinegar, blueberries, honey and mustard. While processing, gradually add oil in a steady stream. Serve with salad.

This Turkey Bacon Summer Salad makes for the perfect side to any entree. Made with turkey bacon, broccoli, cauliflower, Cheddar cheese, and creamy salad dressing for 180 calories per serving.

6 slices JENNIE-O® Turkey Bacon, crumble
1 head fresh broccoli, diced
1 small head cauliflower, chopped
¾ cup shredded sharp Cheddar cheese
¼ red onion, chopped
½ cup creamy salad dressing
½ cup white sugar
2 tablespoons white vinegar

Steps:

  • Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
  • In large bowl, add broccoli, cauliflower, cheese and onion; mix together.
  • In small bowl, whisk salad dressing, sugar and vinegar until sugar is dissolved; pour over broccoli mixture and toss to coat.
  • Refrigerate at least 30 minutes.
  • Stir crumbled bacon into salad just before serving.

2 medium sweet peppers, chopped
1 medium zucchini, thinly sliced
1 yellow summer squash, thinly sliced
1/2 cup finely chopped red onion
2 cups cubed cooked turkey or chicken
3 tablespoons chopped fresh parsley
1/2 cup peppercorn ranch salad dressing
1/4 teaspoon salt
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain and rinse with cold water; drain well., Place pasta, vegetables, turkey and parsley in a large bowl; toss with dressing and salt. Sprinkle with cheese.

Great pasta salad, you can substitute your favorite pasta dressing instead of the Lemon Basil. My adaptation of a recipe from Betty Crocker.

3/4 cup mayonnaise
2 tablespoons basil leaves, fresh, chopped or 1 teaspoon dried basil
1 teaspoon lemon, rind of, grated
1 teaspoon lemon juice
7 ounces pasta shells, small
6 slices bacon, cooked crisp, crumbled
1 1/2 cups turkey, smoked cut into strips
1 1/2 cups lettuce, shredded
1 cup cheese, shredded, your favorite kind
1 large tomatoes, chopped (1 Cup)

Steps:

  • Cook pasta as directed on package; omitting salt.
  • Rinse pasta in cold water; drain.
  • Mix together mayonnaise, basil, lemon peel and lemon juice in a large bowl to form dressing.
  • Add pasta, bacon (reserving 2 Tbl for topping), turkey, lettuce, cheese and tomato to dressing.
  • Mix well.
  • Cover and refrigerate 1-2 hours to blend flavors.
  • Sprinkle with reserved bacon.
  • Serve.
