Turkey, Bean and Quinoa Chili with Crispy Tortilla Strips image

Number Of Ingredients 17

1/2 cup quinoa
Kosher salt
1/4 cup plus 1 1/2 tablespoons extra-virgin olive oil
1 pound ground turkey
Freshly ground black pepper
1 onion, finely chopped
1 bell pepper, any color, stemmed, seeded and diced
2 jalapeños, 1 minced and 1 thinly sliced
4 cloves garlic, minced
6 corn tortillas, halved and cut crosswise into 1/4-inch-wide strips
3 tablespoons chili powder
2 teaspoons ground cumin
One 28-ounce can whole peeled tomatoes, crushed by hand
2 cups low-sodium vegetable broth
Two 15.5-ounce cans chickpeas, such as Good & Gather, rinsed and drained
Finely grated Parmesan, for serving
Cilantro leaves, for serving

Steps:

  • Preheat the oven to 450 degrees F. Bring a medium saucepan filled two-thirds full of water to a boil. Stir in the quinoa and a small handful of salt. Adjust the heat and simmer 10 minutes. Drain and return the quinoa to the saucepan.
  • Meanwhile, in a large saucepan, heat 1/4 cup of the oil until shimmering. Add the turkey and a generous pinch each of salt and pepper. Cook over medium-high heat, breaking up the meat with a wooden spoon, until the turkey is almost cooked through and starts to brown, 5 to 7 minutes. Add the onion, bell pepper, minced jalapeño, garlic and a pinch each of salt and pepper. Cook, stirring occasionally, until the vegetables soften, 6 to 8 minutes; reduce the heat if the ingredients brown too quickly.
  • Meanwhile, toss the tortilla strips with the remaining 1 1/2 tablespoons oil on a large rimmed baking sheet. Spread the strips in an even layer and bake until browned and crisp, about 8 minutes. Sprinkle with salt and let cool.
  • Add the chili powder and cumin to the saucepan with the turkey and continue to cook, stirring, until fragrant, about 1 minute. Add the tomatoes and broth and bring to a simmer, scraping up any brown bits from the bottom of the pan. Add the chickpeas and cooked quinoa and simmer until thickened slightly, 3 to 5 minutes. Taste the chili and season with salt and pepper.
  • Ladle the chili into bowls and top with the crispy tortilla strips, sliced jalapeño, Parmesan and cilantro.

2 cups sliced baby portobello mushrooms
1 medium onion, chopped
3 garlic cloves, minced
3/4 cup quinoa, rinsed

1/8 teaspoon cayenne pepper

1-1/2 cups vegetable broth
1 medium zucchini, halved and thinly sliced
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn (about 5 ounces)
1/2 cup crumbled feta cheese
Minced fresh cilantro

Steps:

  • In a large saucepan, heat oil over medium-high heat; saute mushrooms and onion until tender and lightly browned, 4-6 minutes. Add garlic; cook and stir 1 minute. Stir in quinoa, seasonings and broth; bring to a boil. Reduce heat; simmer, covered, 15 minutes. Stir in zucchini; cook, covered, until crisp-tender, about 5 minutes., Stir in beans and corn; heat through. Top with cheese and cilantro.

1 pound ground turkey
1 large onion, chopped
5 cloves garlic, minced
¼ teaspoon ground black pepper
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
2 stalks celery, chopped
2 tablespoons chili powder, or more to taste
1 tablespoon Worcestershire sauce
1 tablespoon ground cumin
1 teaspoon dried oregano
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
Himalayan pink salt to taste
4 cups vegetable broth
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
1 cup tri-colored quinoa

Steps:

  • Heat ghee in a Dutch oven over medium heat. Add turkey, onion, garlic, and black pepper. Cook and stir until turkey is browned, about 6 minutes. Drain and discard fat.
  • Stir tomatoes, tomato paste, celery, chili powder, Worcestershire sauce, cumin, oregano, garlic powder, onion powder, and salt into the turkey mixture. Add broth, black beans, and kidney beans; stir to combine. Add quinoa; bring to a boil. Reduce heat to low and simmer until quinoa is tender, about 40 minutes.

1 lb ground turkey
1 scallion, thinly sliced, white and light green parts separated from dark green parts
2 large carrots, cut into 1/4 in (6 mm) pieces
1 cup sweet potato, peeled, cut into 1/4 in (6 mm) pieces
1 red bell pepper, seeded and diced
1 can diced tomato
1 packet McCormick® Chili Seasoning Mix
2 cups vegetable broth
1 teaspoon kosher salt
1 can great northern or cannellini beans, drained and rinsed
½ cup shredded red cabbage
1 tablespoon apple cider vinegar
¼ teaspoon kosher salt
1 ripe avocado
2 tablespoons fresh cilantro leaves
¼ cup plain greek yogurt
1 lime, juiced
½ teaspoon kosher salt
2 cups quinoa, cooked
2 tablespoons fresh cilantro

Steps:

  • In a large pot, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add the turkey and white and light green scallion parts, and cook until the meat is lightly browned, about 5 minutes. Transfer the turkey to a medium bowl.
  • Heat the remaining 2 tablespoons of olive oil in the same pot over medium-high heat. When the oil is shimmering, add the carrots, sweet potato, and red bell pepper. Cook, stirring frequently, until beginning to soften, about 5 minutes.
  • Add the diced tomatoes, McCormick® Chili Seasoning Mix, chicken broth, ground turkey, and salt. Bring to a boil, then reduce the heat to medium and simmer, stirring occasionally, until thickened slightly, about 10 minutes. Add the beans and cook, stirring occasionally, until warmed through, about 5 minutes longer.
  • Meanwhile, make the seasoned cabbage: In a medium bowl, combine the cabbage, apple cider vinegar, and salt. Toss with tongs.
  • Make the avocado lime crema: In a blender or food processor, combine the avocado, cilantro, yogurt, lime juice, and salt. Blend until smooth.
  • Divide the quinoa between 4 bowls. Spoon the turkey chili over the quinoa, then top with a dollop of avocado lime crema, a pile of seasoned cabbage, the dark green scallion parts, and cilantro.

I came up with this recipe tonight after my toddler asked for beans for dinner. It is a combination of a couple of recipes I saw on here, and it was a huge hit! It could be adjusted if you prefer more spice, or easily adapted for rice or Andouille sausage or even beef.

1 cup quinoa
1 teaspoon garlic bouillon or 1 teaspoon vegetable bouillon
1 lb ground turkey
1/2 yellow onion, diced
1 teaspoon cajun seasoning
1 pinch garlic salt
1 (15 ounce) can dark red kidney beans, do not drain
1 (15 ounce) can light kidney beans, drained
1 (14 1/2 ounce) can diced tomatoes (with celery, onion and green pepper)

Steps:

  • Cook quinoa according to directions (usually 1 cup to 2 cups of liquid) adding bouillon to water. Bring to boil, reduce to simmer and cover. .
  • While quinoa is cooking, brown ground turkey (or other choice of meat) most of the way with onions, Cajun seasoning (it could use more, but with my toddler, I kept it on the light side) and garlic salt.
  • When meat is cooked 3/4 of the way, add beans (I drain and rinse only one can) and tomatoes and simmer until most of the liquid is absorbed.
  • Serve meat over quinoa and enjoy!
