  • Mix mayonnaise and dill weed. Spread on one side of each bread slice.
  • Top 4 slices with turkey, cheese, cucumber and lettuce. Top with remaining bread.

½ cup plain fat-free yogurt
2 fresh dill sprigs, gently rubbed under cold running water, chopped
¼ cup onion, scrubbed with clean vegetable brush under running water, chopped
½ cup cucumbers, scrubbed with clean vegetable brush under running water, chopped
⅛ teaspoon black pepper
⅛ teaspoon salt (optional)
8 slices whole wheat bread
8 ounces turkey breast, thinly sliced

Steps:

  • Wash hands with soap and water.
  • Rinse and prepare produce.
  • Mix the yogurt, dill, onion, chopped cucumbers, pepper and salt (optional) in a medium-sized bowl. Spread mixture on 4 slices of bread.
  • Top yogurt mixture with turkey and cover with a slice of bread.
  • Store leftovers in a sealed container in the refrigerator for up to four days.

These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

I use the Neufchatel Cheese because its a lighter taste and less fat than cream cheese. They are also good topped with a single, chilled cocktail shrimp. If you can't find cocktail bread, then a regular slice will do - just cut it in half.

1 country-style round bread loaf, (8 inches in diameter), sliced in half horizontally, insides scooped out
1/3 cup tapenade or pesto
1/2 pound deli turkey, thinly sliced
1 small zucchini, thinly sliced
1 large tomato, thinly sliced
4 ounces provolone, thinly sliced
2 medium cucumbers, cut lengthwise into thin wedges
1/4 cup rice vinegar
2 tablespoons sugar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees. Cover inside of both bread halves with an even layer of tapenade or pesto. Arrange turkey on bottom half of bread. Top with zucchini, tomato, and cheese. Sandwich with top half of bread and wrap tightly in foil. Place on a baking sheet and bake until bread is toasted and cheese is melted, 25 minutes.
  • Meanwhile, in a large bowl, toss cucumbers with vinegar and sugar; season with salt and pepper. Let sit at room temperature, 20 minutes.
  • Unwrap sandwich and cut into 4 wedges with a serrated knife. Serve with pickled cucumbers.

2014-05-17 1 cucumber, thinly sliced. Dried dill. Instructions. In a small bowl, mix whipped cream cheese and dry Italian-style dressing mix. (Optional: let mixture sit for an hour or two to allow flavors to incorporate fully into cream cheese.) Spread equal portions of the mixture on the slices of cocktail bread. Top each bread with a slice of a cucumber.
