1 medium tart apple, cut into 1-inch chunks
1 medium pear, cut into 1-inch chunks
1 tablespoon lemon juice
1 can (8 ounces) unsweetened pineapple chunks, drained
24 grapes (about 1/4 pound)
24 fresh strawberries
COCONUT DIP:
1-1/2 cups fat-free vanilla yogurt
4-1/2 teaspoons sweetened shredded coconut
4-1/2 teaspoons reduced-sugar orange marmalade

Steps:

  • Toss apple and pear with lemon juice. Divide fruit into 12 portions and thread onto wooden skewers. Combine dip ingredients in a small bowl; serve with the kabobs.

Unlike traditional kabobs, these call for turkey breast slices, potatoes and apple chunks. The flavorful honey mustard salad dressing shines through in each delicious bite.

12 small red potatoes, cut in half
1/2 cup honey mustard salad dressing
2 teaspoons dried rosemary, crushed
1 package (17.6 ounces) turkey breast cutlets, cut into 1-inch strips
2 medium green apples, cut into 1-inch pieces

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil; cook for 5 minutes or until crisp-tender; drain. Meanwhile, in a small bowl, combine salad dressing and rosemary; set aside., Fold turkey strips in thirds; thread onto four metal or soaked wooden skewers alternately with potatoes and apples. , Spoon half of the dressing over kabobs. Grill, uncovered, over medium-hot heat for 5-7 minutes on each side or until is no longer pink, basting and turning occasionally with remaining dressing.

2 small yellow summer squash
2 small zucchini
1 can (about 15 ounces) whole potatoes, drained
2 tablespoons olive oil
1 package (20 ounces) turkey breast tenderloins
1/2 teaspoon pepper
1/4 teaspoon salt
1 package (5 ounces) torn mixed salad greens
1 cup salad croutons
1/2 cup red wine vinaigrette

Steps:

  • Trim ends of yellow squash and zucchini; cut crosswise into 1-in. slices. Place slices in a large bowl; add potatoes. Pour oil over mixture, tossing to coat., Cut turkey into 24 cubes; add to vegetables. Sprinkle with pepper and salt; toss again., On 6 metal or soaked wooden skewers, alternately thread turkey cubes, squash, zucchini and potatoes. Grill, covered, over medium heat, turning occasionally, until turkey is no longer pink and vegetables are crisp-tender, 12-15 minutes. Serve on greens with croutons. Drizzle with vinaigrette.

8 ounces Cheddar, cut into 1-inch cubes
8 ounces honey roasted turkey, cut into 1-inch cubes
15 cherry tomatoes
2 medium carrots, peeled, cut into even 1-inch coins
1 large cucumber, seeded, cut into half moons
8 ounces Cheddar, cut into 1-inch cubes

6 firm apricots
4 slightly firm peaches
4, 1-inch pineapple slices
4 tangerines
4 firm bananas
4 apples
3 Tbs. lemon juice
2/3 cup unsalted butter
1 cup powdered sugar
3 Tbs. Grand Marnier
1-2 Tbs. orange juice
2 Tbs. grated orange rind
1/2 cup heavy cream

Steps:

  • Cut apricots in half and remove pits. Cut peaches in eighths (or quarters, depending on size). Cut pineapple in chunks. Peel tangerine and cut in quarters. Peel bananas and cut into 1-inch chunks. Peel apples and cut into eighths. Put apples, peaches and bananas in bowl with lemon juice and coat thoroughly. Place a mixture of fruits on each skewer.
  • To make sauce, melt butter, sugar, orange juice and orange rind in small sauce pan and stir until melted and then add Grand Marnier. Grill kebabs over medium heat, basting frequently. Combine remaining sauce with 1/2 cup cream and serve with hot kebabs.

1/3 cup chili sauce
2 tablespoons lemon juice
1 tablespoon sugar
2 bay leaves
1 pound turkey breast tenderloins, cut into 1-1/2 cubes
2 medium zucchini, cut into 1/2-inch slices
2 small green peppers, cut into 1-1/2 squares
2 small onions, quartered
8 medium fresh mushrooms
8 cherry tomatoes
1 tablespoon canola oil

Steps:

  • In a large bowl, combine the chili sauce, lemon juice, sugar and bay leaves. Pour 1/4 cup marinade into a large resealable plastic bag; add the turkey. Seal bag and turn to coat; refrigerate for at least 2 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade. Discard bay leaves from reserved marinade. On eight metal or soaked wooden skewers, alternately thread turkey and vegetables. Brush lightly with oil. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, uncovered, over medium-hot heat or broil 4 in. from the heat for 9-12 minutes or until meat is no longer pink, turning and basting frequently with reserved marinade.

A delicious summer dessert, especially when you are grilling outside already. You can have these cooking while you are enjoying your burgers or steaks! Excellent over vanilla ice cream.

½ cup margarine
¼ cup honey
3 fresh peaches, pitted and quartered
3 fresh plums, pitted and quartered
3 bananas, cut into 4 pieces each
12 strawberries, hulled
12 skewers

Steps:

  • Preheat an outdoor grill for medium heat and place a large sheet of foil onto the grate.
  • Melt the margarine and honey together in a small saucepan over medium heat. Reduce heat to low and cook gently, stirring occasionally, until slightly thickened, about 5 minutes. Do not let the sauce boil.
  • Thread a peach quarter, a plum quarter, a banana piece, and a strawberry onto each skewer. Place the skewers onto the foil on the preheated grill; spoon margarine-honey mixture over each skewer.
  • Grill until the fruit is softened and the sauce has thickened and cooked onto the fruit, about 5 minutes. Flip the skewers, spoon more margarine-honey sauce over each, and grill for about 5 more minutes on the other side.

Chunks of turkey breast, mango and honeydew melon are separately marinated in lemonade concentrate and skewered. This is a simple, citrusy treat for the grill. If desired, peaches or cantaloupe may be used instead of mango.

1 (6 ounce) can frozen lemonade concentrate, thawed
3 tablespoons soy sauce
3 tablespoons olive oil
1 pound skinless, boneless turkey breast tenderloins - cut into 1 inch cubes
1 mango - peeled, seeded and cut into 1 1/2 inch chunks
1 honeydew melon - peeled, seeded and cut into 1 1/2 inch chunks

Steps:

  • To Marinate: In a small bowl, whisk together the lemonade concentrate, soy sauce and olive oil. Place turkey cubes in a large, resealable plastic bag and pour all but 1/4 cup of the marinade over the turkey. Seal bag and refrigerate for 2 hours or overnight.
  • Preheat grill to medium high heat and lightly oil grate.
  • Place mango and melon in reserved 1/4 cup of marinade. Drain turkey of its marinade and thread onto 10 or 12 inch skewers. On seperate skewers thread mango and melon chunks, alternating fruits.
  • Grill turkey kabobs for 10 to 12 minutes, or until turkey is no longer pink in the center, turning once. Add fruit kabobs to grill when turkey kabobs are turned; grill both turkey and fruit kabobs for another 5 to 6 minutes, turning once, and brush with 1/4 cup reserved marinade.
