- Heat oven to 350°F.
- Prepare Dinner in large saucepan as directed on package.
- Meanwhile, cook turkey with peppers in large nonstick skillet on medium heat until done, stirring frequently. Remove from heat. Stir in pasta sauce.
- Add 1/2 cup shredded cheese and 1 Tbsp. Parmesan to prepared Dinner; mix lightly.
- Spoon into 8-inch square baking dish sprayed with cooking spray; top with turkey mixture and remaining cheeses.
- Bake 20 to 25 min. or until heated through.

- Preheat oven to 350°. In a large bowl, combine turkey, macaroni, 1-1/2 cups cheese, soup, milk, mushrooms and pepper. Pour into a greased 2-qt. baking dish. , Cover and bake until macaroni is tender, 60-65 minutes. Uncover; sprinkle with remaining 1/2 cup cheese. Bake until cheese is melted, 5-10 minutes longer.

TURKEY CHILI MAC
There are two things that make for a great Thanksgiving leftovers recipe. The first one is, it shouldn't remind you of the original meal. Plus, and just as important, it should be super easy and simple to make. Not only does this turkey chili mac satisfy those two requirements, it also happens to be incredibly delicious and pretty nice to look at. Garnish with grated cheese, onions, sour cream, and cilantro if desired.

Steps:
- Heat olive oil in a pot over medium-high heat. Add onion and 1 teaspoon salt; cook, stirring, until it starts to soften and turns translucent, about 5 minutes.
- While onion cooks, make the spice mixture by combining chili powder, chipotle pepper, cumin, black pepper, cocoa, cinnamon, and oregano in a small bowl.
- Add garlic and the spice mixture to the onion and cook, stirring, 1 to 2 minutes.
- Stir in 4 cups chicken broth, diced tomatoes with chiles, and tomato sauce. Raise the heat to high and bring to a simmer. Reduce the heat to medium-low and simmer, stirring occasionally, for 15 minutes.
- Add the leftover turkey meat along with additional chicken broth if needed, and cook, stirring occasionally, for another 15 minutes.
- Taste for salt and other seasonings and adjust as needed. Raise the heat to high and bring to a boil. Stir in pinto beans and elbow macaroni and cover tightly with a lid. Cook, covered, until the pasta is just barely tender, about 5 minutes.
- Turn off the heat, remove the lid, and stir very well. Cover back up and let sit with the heat off for 5 minutes. Uncover, stir in Cheddar cheese, and serve immediately.

STOVETOP TURKEY CHILI MAC AND CHEESE
Steps:
- In a large pot of salted boiling water, cook the pasta until al dente. Using a heatproof measuring cup, scoop out 1 cup of the pasta water. Drain the pasta in a colander. Add 1 tablespoon of olive oil to the pasta and toss to coat.
- Wipe out the pot and heat 2 tablespoons of olive oil in it. Add the poblanos, onion, and a generous pinch of salt. Cook over medium-high heat, stirring, until softened, 5 to 7 minutes. Add the ground turkey and cook, stirring, until the meat is just cooked through and any liquid has evaporated, about 8 minutes.
- Meanwhile, in a small skillet, heat the remaining 1 tablespoon of olive oil. Add the panko and cook over medium-high heat, stirring, until golden, about 3 minutes. Remove from the heat and stir in the lemon zest and parsley. Season the breadcrumbs with salt and pepper.
- Add the flour to the pot and cook, stirring, until the turkey mixture is well coated, about 1 minute. Stir in the tomatoes, chipotles, and 1/2 cup of the reserved pasta water. Simmer until the mixture is thickened, 2 to 3 minutes. Remove the pot from the heat and stir in the pasta, cheese, and cream, if using; add more pasta water if needed. Fold in the arugula until just wilted; season the chili mac with salt and pepper. Serve the chili mac in bowls, topped with shredded cheddar cheese and the breadcrumbs.

MAC AND CHEESE WITH GROUND TURKEY CASSEROLE
This was a total experiment. For my first try it actually didn't come out too bad. It was a little dry so I think for next time I will omit one egg, add more milk (or even some fat free half and half), and not sure if I want to add the ricotta again. The recipe you see below though is exactly the amounts that I used. Try it and play around with the ingredients as much as you like. I found this recipe on Johanna's Recipe Blogg. I have not tried this recipe, but I'm posting it for safe keeping.

- Preheat the oven to 350° F.
- Grease a 13x9 casserole dish, and set aside.
- In a large saute pan brown ground turkey. Once completely brown add packet of the Lipton onion soup mix. (may add more salt and pepper to your liking) Set aside and let cool.
- Mix ricotta, 1 egg, 1/2 tsp salt, and 1/2 pepper.
- Whisk together the remaining eggs, milk, salt, and paprika in a bowl.
- Add a little bit of of ground turkey mixture to ricotta to temper eggs. Once done add ricotta mixture to the ground turkey mixture and mix completely.
- Mix cooked macaroni and ground turkey mixture together.
- Layer the cooked macaroni mixture with 1 1/2 cups of the cheese in the casserole dish. Pour milk, egg and spice mixture over everything. Top with the remaining cheese, and sprinkle a liberal amount of Parmesan cheese and add a little sprinkle of breadcrumbs.
- Bake it for 40 to 45 minutes or until the mixture is set in the middle.
- This is the finished product. Yum!

- Cook macaroni according to package directions, drain. Meanwhile, in a medium, saucepan melt butter over med-low heat. Add celery and onion, cook until tender. Blend in soup, milk and cheese. Cook until the cheese is melted. Combine cheese with macaroni, turkey, and salt. Spray 3 q casserole dish with non-stick spray. Transfer to baking dish and top with crushed potato chips. Bake 350 for 30 min or until hot and bubbly and the chips are toasted.
THANKSGIVING LEFTOVER MAC AND CHEESE
I had some leftover turkey and veggies and ran out of gravy and ideas, so I decided to turn my leftovers into the ultimate comfort food. I'm not an "exact science" cook, so please adjust according to your preferences! Also, good mac and cheese is all about the roux.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain pasta, then rinse with cold water and drain again. Set aside.
- While the pasta is cooking, melt 1 1/2 tablespoons butter in a skillet over medium heat. Add onion and saute until translucent, 5 to 7 minutes. Add garlic and cook until fragrant, 1 to 2 minutes. Add carrots and celery; saute until soft, 3 to 5 minutes. Add leftover turkey and cook until warm and flavors are incorporated, about 1 minute. Season with parsley, sage, rosemary, thyme, salt, and pepper. Add broth if mixture seems dry. Remove from the heat and set aside.
- Melt remaining butter in a large saucepan over medium (or slightly higher) heat. Whisk in flour; cook, whisking constantly, until the mixture becomes paste-like and light golden brown, 2 to 3 minutes. Whisk in milk (about 1 to 2 tablespoons); keep stirring to make sure flour is blended and there are no lumps. Cook until roux is brown and very fragrant. Add Cheddar, Monterey Jack, Gouda, and Parmesan cheeses; cook until sauce thickens and the cheese melts. Slowly add enough milk so the roux/cheese mix is creamy; just add it in small increments so it's not too juicy.
- Add macaroni to the cheese sauce and mix to combine. Add the turkey mixture. Mix well and transfer to a baking dish. Top with bread crumbs.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place mac and cheese under the broiler until browned, 5 to 10 minutes.
