Turkey Meatballs with Ginger and Garlic image

1 pound dark meat ground turkey
3/4 cup panko breadcrumbs
3 tablespoons low-sodium soy sauce
1 teaspoon freshly grated ginger
1 teaspoon toasted sesame oil
2 scallions, minced
1 clove garlic, minced
Vegetable oil, for shallow frying
2 tablespoons honey
1 tablespoon sambal oelek
1 tablespoon rice wine vinegar

Steps:

  • Make the meatballs: In a medium bowl, combine the ground turkey, panko, soy sauce, ginger, sesame oil, scallions and garlic. Mix thoroughly and set aside.
  • Heat 1/4 inch of oil in a large, high-sided cast-iron pan over medium heat.
  • Using a small ice cream or cookie scoop, scoop the ground turkey mixture and roll in your hands to make 1-inch meatballs. Cook the meatballs in a single layer in the heated oil until brown all over and cooked through, 7 to 8 minutes. (Alternatively, you can brown the meatballs in the oil then bake in a preheated 350 degree F oven to finish cooking for 5 to 6 minutes.)
  • Meanwhile, make the sauce: In a small bowl, combine the honey, sambal and vinegar. Whisk together and set aside.
  • Remove the meatballs from the oil and drain on a paper-towel-lined plate. Serve warm with the sweet and spicy dipping sauce.

1 pound ground turkey
¼ cup corn flake crumbs
1 egg
3 scallions, chopped
1 tablespoon minced fresh ginger root
1 tablespoon low-sodium soy sauce
2 teaspoons sesame oil
1 teaspoon dried parsley
½ teaspoon salt
1 clove garlic, minced
2 tablespoons low-sodium soy sauce
2 tablespoons water
1 tablespoon chile-garlic paste (sambal oelek)
1 tablespoon palm sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a large baking tray with cooking spray.
  • Combine turkey, corn flake crumbs, egg, scallions, ginger, soy sauce, sesame oil, parsley, salt, and garlic in a large bowl. Shape into 1-inch meatballs. Arrange on the prepared baking tray.
  • Combine soy sauce, water, chile-garlic paste, and palm sugar in a separate bowl to make the glaze.
  • Bake meatballs in the preheated oven until no longer pink on the outside, about 10 minutes. Coat the meatballs with the glaze. Continue baking until glaze thickens, 10 to 12 minutes.

We enjoy these tasty meatballs served over a bowl of rice or wrapped in lettuce cups. They're balanced with flavors of spicy, salty, tangy, and sweet, and also make wonderful appetizers. Leftover meatballs may be stored in the freezer in a resealable plastic bag.

1 pound lean ground pork
¼ cup panko bread crumbs
1 large shallot, minced
2 tablespoons lemongrass paste (such as Gourmet Garden®)
1 tablespoon finely chopped mint
1 tablespoon fish sauce
1 tablespoon brown sugar
2 cloves garlic, crushed
1 teaspoon finely grated ginger root
¼ teaspoon salt
¼ cup water
3 tablespoons fish sauce
2 tablespoons fresh lime juice
1 tablespoon white sugar, or more to taste
1 teaspoon rice vinegar
1 small Thai chile pepper, minced
1 small garlic clove, finely chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper and set aside.
  • Combine ground pork, bread crumbs, shallot, lemongrass paste, mint, fish sauce, brown sugar, garlic, ginger root, and salt in a large bowl. Using a 1-tablespoon cookie scoop, shape mixture into meatballs, and place on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the center and cooked through, about 15 minutes.

1 tbsp. grated fresh ginger
1 garlic clove, minced

14 small lettuce leaves
4 green onions, thinly sliced

Steps:

  • Preheat oven to 350 degrees. Lightly grease a baking sheet. In a small bowl, combine the vinegar, sugar, 1 tablespoon of the fish sauce, Sriracha, cilantro and mint. Whisk until the sugar is dissolved. In a large bowl, combine the turkey, water, remaining 2 tablespoons fish sauce, lemongrass, ginger, garlic and salt. Roll the meat mixture into 1-inch balls and place on the prepared baking sheet. Heat a large nonstick skillet over medium heat. Pour in the oil and heat until shimmering. Add the meatballs and pan-fry, turning them to brown evenly on all sides, about 5 minutes total. Drain on paper towels. 1/4 cup All-Bran
1 teaspoon Worcestershire sauce
1/2 teaspoon grated lemon zest
1 pound lean ground turkey
2 cups chicken broth
2 tablespoons cornstarch
1/2 cup fat-free plain yogurt
2 teaspoons lemon juice
1 small carrot, shredded
1 green onion, sliced
4 cups hot cooked noodles

Steps:

  • In a large bowl, combine the egg, bran, Worcestershire sauce and lemon zest. Crumble turkey over mixture; mix well. Shape into 20 meatballs. , In a large nonstick skillet coated with cooking spray, brown meatballs. Add broth; bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until turkey is no longer pink. 1 egg
1 lb ground turkey
2 tablespoons olive oil
1 tablespoon butter
1/2 cup chicken broth
1 (12 ounce) jar mango chutney

Steps:

  • In a large saucepan, heat 1 tablespoon olive oil over medium heat.
  • Add onion and garlic; cook and stir for 5 minutes.
  • Remove from heat and place onion mixture in large bowl.
  • Add salt, pepper, ginger, ginger root, bread crumbs and eggs and mix well.
  • Add turkey and mix gently until combined.
  • Roll into 1 ½ inch balls, cover and chill for 2-3 hours.
  • When ready to eat, combine 2 tablespoons olive oil and butter in large saucepan.
  • Cook meatballs , turning occasionally, until tender and golden brown, about 10-12 minutes.

  • Heat the oil in a large skillet over medium-high heat. Add the shallots and cook until softened, about 4 minutes. Add the garlic and lemon grass and cook for one minute longer. Take the pan off of the heat and set aside so that the shallot mixture can cool down a little.
  • Transfer the ground turkey to a bowl and create a well in the center of the ground turkey. Add the ginger, soy sauce, fish sauce, chili paste, bread crumbs, cilantro and salt and pepper along with the reserved shallot mixture to the well. Mix with your hands or a spoon until just combined. Dampen your hands and shape the mixture into meatballs. This will make 18 to 20 2” meatballs.
  • Place the meatballs on the prepared baking sheet and refrigerate for about an hour.
