Turkey Pasta Salad image

This is a dish I almost always make when I have leftover turkey. It's inexpensive, delicious and easy to prepare. Plus, my family loves it!

2 cups uncooked spiral pasta
1 cup chopped cooked turkey
1 cup chopped celery
1 medium red onion, chopped
1 medium green pepper, chopped
1 package (1 ounce) ranch dressing mix
1 cup sour cream
1 cup Miracle Whip
1 teaspoon garlic salt
1/2 cup slivered almonds
1 teaspoon paprika
Green pepper rings and tomato slices, optional

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a 2-1/2-qt. salad bowl. Add turkey, celery, onion and green pepper; toss to combine. , Combine dressing mix, sour cream, Miracle Whip and garlic salt. Add to pasta mixture and mix well. Sprinkle with almonds and paprika. Garnish with pepper rings and tomato slices if desired.

2 cups uncooked bow tie pasta
1-1/2 cups cubed cooked turkey breast
1-1/2 cups diced seedless watermelon
1/2 cup sliced celery
2 tablespoons chopped green onion
1/4 cup fat-free plain yogurt
2 tablespoons reduced-fat mayonnaise
2 tablespoons lime juice
1-3/4 teaspoons sugar

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the turkey, watermelon, celery and onion; set aside. , In a small bowl, whisk the yogurt, mayonnaise, lime juice and sugar until smooth. Drain pasta and rinse in cold water; stir into turkey mixture. Drizzle with the yogurt mixture and toss to coat. Refrigerate until serving.

1 1/2 cups elbow macaroni, or small shells (3 cups cooked)
2/3 cup olive oil
1/4 white wine vinegar
1/4 cup finely diced green bell pepper
1/4 cup finely diced pimento
Boston lettuce leaves, washed
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 cups cooked turkey, cut into 3/4-inch dice
2 hard boiled eggs, peeled and chopped
2 tablespoons finely sliced scallion

Steps:

  • Boil the pasta in salted water. When done remove, drain and refresh under cold water to stop the cooking process. While pasta is cooking, make a dressing by whisking together the olive oil and vinegar and season well, to taste, with salt and pepper. Add the bell pepper and pimento and toss with the elbows. Set elbows in a wreath over washed Boston lettuce.
  • Also make a dressing with the mayonnaise and Dijon mustard and combine with cooked turkey. Center this in middle of elbow macaroni wreath and garnish with chopped hard boiled egg and scallions.

2 ounces thinly sliced pancetta (Italian bacon)
4 ounces orecchiette (ear-shaped pasta)
Kosher salt
3 1/2 tablespoons extra-virgin olive oil
2 1/2 tablespoons Champagne vinegar or white wine vinegar
2 cups 1x1x1/4" pieces peeled melon (any variety)
1/3 cup coarsely chopped fresh mint, divided
3 tablespoons thinly sliced scallion
Pinch of crushed red pepper flakes
Freshly ground black pepper
1 ounce ricotta salata (salted dry ricotta), shaved, or crumbled feta
Ingredient info: Look for ricotta salata at Italian markets and some supermarkets.

Steps:

  • Heat oven to 350°F. Arrange pancetta in a single layer on a large rimmed baking sheet. Bake until brown and crisp, 20-25 minutes. (Alternatively, place pancetta on folded layers of paper towels on a microwave-proof plate and microwave on high until brown and crisp, about 5 minutes.) Let pancetta stand until cool enough to handle, then break into bite-size pieces.
  • Meanwhile, cook pasta in a medium pot of boiling salted water, stirring occasionally, until al dente. Drain pasta; run under cold water to cool. Drain and set aside.
  • Whisk oil and vinegar in a large bowl. Add half of pancetta, cooked pasta, melon, half of mint, scallion, and red pepper flakes. Toss to coat. Season to taste with salt and pepper. Transfer to a serving dish and sprinkle remaining pancetta and mint over. Garnish with shaved ricotta salata.

4 medium melon (about 5" dia)s medium cantaloupes, halved and seeded
4 cups cubed cooked turkey breast
1 ½ cups seedless red grapes, halved
1 cup chopped celery
½ cup fat-free plain yogurt
¼ cup reduced-fat mayonnaise
1 teaspoon lemon juice
½ teaspoon ground ginger
⅛ teaspoon salt
½ cup chopped unsalted dry roasted cashews

Steps:

  • Make melon balls from one cantaloupe half; refrigerate remaining cantaloupe halves. In a large bowl, combine the turkey, grapes, celery and cantaloupe balls. In a small bowl, combine the yogurt, mayonnaise, lemon juice, ginger and salt. Pour over turkey mixture and stir gently to coat. Cover and refrigerate for 1 hour. Stir in cashews just before serving. Spoon 1 cup salad into each cantaloupe half.

6 slices bacon, crisply cooked and crumbled
3/4 cup mayonnaise or salad dressing
2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
1 teaspoon grated lemon peel
1 teaspoon lemon juice

Steps:

  • Mix all ingredients for Lemon-Basil Dressing.
  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • Mix pasta, dressing and remaining ingredients in large bowl. Cover and refrigerate 1 to 2 hours to blend flavors.
