Steps:
- Place cooked turkey meat, celery, green onions and red bell pepper in a blender or food processor. Finely chop using the pulse setting.
- Transfer the turkey mixture to a medium bowl. Mix in mayonnaise, prepared Dijon-style mustard, cider vinegar, white sugar and salt. Cover and refrigerate 8 hours, or overnight, before serving.

- In a blender, combine the cranberry sauce, vinegar, jam and salt. Cover and process until smooth. While processing, gradually add oil in a steady stream. Refrigerate until chilled., To serve, combine the spinach, half of the kiwi, 1/2 cup raspberries and cranberry sauce in a large bowl. Add 1/2 cup dressing; toss to coat. Transfer to a serving platter. Arrange the turkey, macadamia nuts and remaining fruit over top; drizzle with remaining dressing. Serve immediately.

- Mash 1/2 cup raspberries through a fine sieve set over a bowl. Press and extract as much pulp as possible.
- Add vinegar and sugar to pulp and stir to dissolve.
- Whisk in oil and cream.
- Combine lettuce, raisins and nuts in a large bowl.
- Lightly coat lettuce leaves with dressing, add salt and pepper to taste; toss.
- Divide among plates and sprinkle with remaining raspberries.
