This simple, but hearty turkey stuffed sweet potatoes and chipotle Brussels sprouts will keep both you and your tastebuds more than satisfied!

4 small Sweet Potatoes
1 lb. Ground Lean Turkey
8 oz. Tomato Sauce
1 Tbsp. Avocado Oil
2 Tbsp. Sliced Green Onion
2 Tbsp. Fresh Cilantro
2 Tbsp. Feta Cheese
1 Tbsp. Cumin
1 Tbsp. Smoked Paprika
1 Tbsp. Chopped Garlic
1 tsp. Pink Himalayan Salt
1 tsp. Ground Black Pepper
1 lb. Brussels Sprouts (cut into halves)
1 lime (juiced)
1 Tbsp. Avocado Oil
2 tsp. Siete brand Chipotle Hot Sauce
1 tsp. Garlic Powder

Steps:

Preheat oven to 450℉ and line 2 baking sheets with parchment paper.
Using a fork, pierce the potatoes all over to all steam ventilation while cooking. Then, place onto one baking sheet and place onto middle oven rack - bake for 45-50 mins. or until softened.
Next, prepare filling by placing a skillet over medium-high heat. Once heated, add avocado oil and then garlic. Next, Add ground turkey, tomato sauce, garlic, and seasonings/spices, stirring occasionally until turkey is browned and fully cooked.
During the last 15 minutes of the potato's baking time, place all Brussels sprouts ingredients onto second baking sheet and gently roll around until well-coated. Place on rack directly un-der potatoes and bake for 15 minutes.
Once everything has finished cooking, assemble potatoes by filling with seasoned turkey and topping with feta, cilantro, and green onion - serve alongside Brussels sprouts.

Pierce the sweet potatoes all over with a fork. Cook in the microwave on HIGH until tender when pierced with a fork, 4 to 5 minutes per side. Let the potatoes rest until cool enough to handle.
Cut the potatoes in half lengthwise. Carefully scoop the flesh out of the potatoes and place in a medium-sized bowl. Reserve the skins. With the back of a fork, mash the potato flesh until most lumps are gone. Stir in the olive oil, ½ teaspoon cumin, ¼ teaspoons salt and ¼ teaspoon pepper. Divide the mashed sweet potato evenly between the potato skins. Place on a baking sheet.
Heat a large nonstick skillet over medium-high heat. Lightly coat with cooking spray. Add the ground turkey and cook, breaking up with a wooden spoon, until cooked through. Stir in the garlic, chili powder, remaining ¾ teaspoon cumin, oregano, paprika, and remaining ⅛ teaspoon salt and pepper. Cook for 1 minute. Stir in the crushed tomatoes.
Preheat the broiler. Spoon the turkey mixture into each sweet potato skin. Top each with 1 tablespoon grated cheese. Broil until the cheese is melted, about 30 seconds. Garnish with parsley. Serve.
