HEALTHY CHIPOTLE TURKEY CHILI
If you love hot and spicy you will love this chili. Adjust chili powder and chipotle pepper for spiciness.

Steps:
- Heat oil in large skillet over medium-high heat.
- Add onion, garlic, chili powder, and oregano. Stir for about 3 minutes.
- Stir in tomato paste, chipotle peppers, and adobe sauce; cook 1 minute.
- Add turkey, breaking it up and cooking until the meat loses its raw color, about 8 minutes.
- Add chicken broth and simmer until reduced by about half; about 10 minutes.
- Add tomatoes, crushing them through your fingers into skillet along with their juices and beans.
- Bring to a boil, uncovered, stir occasionally until thick, about 10 minutes.
TWO-BEAN AND CORN CHIPOTLE TURKEY CHILI (HEALTHY!)

Steps:
- Heat olive oil in a large pot over medium high heat. Add in garlic, onions and red bell pepper and saute for 5-7 minutes or until onions and bell pepper soften. Add the chili powder, cumin, oregano; stir, and cook another minute.
- Next add in ground turkey, making sure to break up the lumps; cook until turkey is no longer pink.
- Add in tomato sauce, fire-roasted tomatoes, chipotle peppers, water, corn, black beans and kidney beans. Add a little salt and pepper.
- Bring chili to a boil, then reduce heat and simmer for 30 minutes, stirring ocassionally. Taste the chili and adjust seasonings as necessary. Makes 8 servings. 1 serving equals about 1 cup. Serve with sour cream, shredded cheese, cilantro and tortilla chips for serving, if desired.

- Heat deep skillet or wide pot over medium high heat. Add oil and turkey. Crumble meat as it cooks, 3 minutes. Add the onions and garlic, chili powder, and chipotle. Cook another 5 minutes. Season with salt. Add beer and cook another minute, stirring to loosen any bits from the bottom of the pan. Add the stock, tomatoes, and beans and bring to a bubble. Reduce heat and simmer 10 minutes.
- Heat a nonstick griddle pan over medium high heat. Mix batter and cheese together. Rub grill with butter, nesting the butter in a paper towel to hold on to it. Ladle the batter to make 3-inch cheese and corn cakes. Cook 3 minutes on each side, until golden. Transfer them to a plate and cover with foil to keep warm.
- Serve bowls of chili with cheese-corn toppers -- like a spicy, corn topped chili pot pie.

Steps:
- Brown turkey in large skillet or large, but shallow pot. After 1 minute, add onion, red bell pepper and spices. Cook until turkey is no longer pink.
- Add canned ingredients and bring to a boil.
- Reduce heat, cover, and simmer 30-45 minutes or until onions and peppers are soft.
- If you have some wiggle room, garnish with light shredded jack and/or cheddar cheese, dollop of light sour cream, fresh cilantro, crushed tortilla chips, etc.

- 1. In a skillet, heat oil over medium heat. Add onions and celery and cook, stirring, until celery is softened, about 5 minutes. Add garlic and cook, stirring, for 1 minute. Add cumin, oregano, peppercorns and lime zest and cook, stirring, for 1 minute. Add cornmeal and toss to coat. Add broth and cook, stirring, until mixture boils, about 1 minute. Add tomatoes with juice and return to a boil. MAKE AHEAD: Complete Step 1. Cover and refrigerate for up to 2 days. When you're ready to cook, continue with the recipe.
- 2. Transfer to slow cooker stoneware. Stir in turkey, pinto beans and green beans. Cover and cook on Low for 6 hours or on High for 3 hours, until turkey is tender and mixture is bubbly. Add chile powder solution, green and red bell peppers, mild green chiles, and jalapeño pepper, if using. Cover and cook on High for 30 minutes, until bell peppers are tender.

- In a skillet over medium heat heat oil for about 30 seconds or so.
- Add onions to skillet (if using celery stalks add the celery too), cook stirring for 5 minutes.
- Stir in garlic and cook stirring for another minute.
- Stir in oregano, celery seed, pepper, zest of the lime and cumin, and cook for another minute.
- Stir in cornmeal .
- Stir in chicken broth and cook until mixture boils (1 minute or so).
- Stir in tomatoes (with juice). Transfer mixture to crock pot.
- Stir in turkey, pinto beans and green beans. Cover and cook on low for 8 hours (or high for 4 hours).
- Combine chili powder and lime juice in a cup and add to crockpot along with bell peppers, green chilies and jalapeno. Cover and cook on high for 30 minutes.
