2 tablespoons grated Parmesan cheese
2/3 cup shredded Colby-Monterey Jack cheese blend
2/3 cup grape tomatoes, chopped
Pinch Italian seasoning
Salt and pepper to taste

Steps:

  • Heat oven to 350 F. Spray 12 regular-size muffin cups with cooking spray; line each cup with ham slice (arrange to fit cup if necessary).
  • In medium bowl, beat eggs with fork or wire whisk until well mixed. Add in all remaining ingredients; gently stir until blended.
  • Divide egg mixture evenly among muffin cups. Bake about 20 minutes or until centers are set.

My own recipe. Hearty frittata for two with broccoli. Very filling. The pancetta adds a lot of flavor, but you may omit for a still flavorful vegetarian version.

8 ounces broccoli florets
1 tablespoon butter
1/4 cup shallots or 1/4 cup onion, minced fine
2 ounces pancetta or 2 ounces bacon, finely chopped
1 garlic clove, minced
4 large eggs
1/2 teaspoon dried thyme
1/2 teaspoon dried tarragon
1/2 teaspoon dried parsley
1/4 teaspoon sea salt
pepper
1/4 cup swiss cheese or 1/4 cup gruyere cheese, shredded

Steps:

  • Preheat oven to 375 degrees F.
  • Steam or microwave broccoli just until tender.
  • In an oven safe skillet, saute onions and pancetta until onions are translucent. Add garlic. Saute for additional 2-3 minutes.
  • Add broccoli to skillet and mix all ingredients well. Remove pan from heat.
  • In a small bowl, lightly beat eggs and seasonings together.
  • Pour egg mixture over skillet ingredients. Do not stir. Sprinkle cheese on top.
  • Place skillet in oven and bake on center rack for 17-20 minutes.
  • Slice into wedges and serve warm or cold.

Steps:

  • Beat eggs, salt and pepper in medium bowl with fork or wire whisk until well mixed. Stir in cheese; set aside.
  • Melt butter in ovenproof 10-inch nonstick skillet over medium heat. Cook bell peppers and onion in butter, stirring occasionally, until onion is tender. Pour egg mixture over pepper mixture. Cover and cook over medium-low heat 8 to 10 minutes or until eggs are set and light brown on bottom.
  • Set oven control to broil. Broil frittata with top 4 to 6 inches from heat about 2 minutes or until golden brown. Cut into wedges.
