QUICK AND EASY FRENCH TOAST FOR TWO
This is the perfect recipe if you are craving a sweet and simple weekend breakfast. Only using six ingredients to make the French Toast, its cinnamon sweet taste pairs very well with syrup, powdered sugar, and fresh fruits. My whole family loved it, and I hope you will love it too! Enjoy!

Steps:
- In a large shallow bowl, whisk the egg and milk until slightly frothy.
- Mix in the brown sugar, then follow with the cinnamon and nutmeg.
- Place a piece of bread into the mixture and allow it to soak on each side. While the bread is soaking, heat the oil in a nonstick pan.
- After 30 seconds on each side in the egg mixture, place the bread into the pan and cook evenly on both sides, until golden to dark brown on each side and the egg mixture does not run from the toast when pressed.
- Repeat steps 3-4 for all your slices of bread or until the mixture runs out.
- If desired, serve your French Toast warm and cut into trangles with the maple syrup, powered sugar, and fruit. Enjoy!

- Make the walnut streusel: Preheat the oven to 375°F (190°C). Line a baking sheet with a nonstick mat.
- In a medium bowl, combine the flour, granulated and brown sugars, salt, and cinnamon. Work the butter into the dry ingredients with a fork until crumbly. Add the chopped walnuts and mix well.
- Spread the streusel on the prepared baking sheet and bake for 20 minutes, stirring halfway, until golden brown. Remove from the oven and let cool slightly, then crumble and let cool completely before using. The streusel will keep in an airtight container for 1 week.
- Make the French toast: In a large baking dish, beat the eggs, then add the milk, cream, vanilla, brown sugar, cinnamon, nutmeg, and salt and whisk well to combine.
- Add the bread in a single layer and press down gently into the custard. Let soak for 5 minutes, then flip and soak for another 10 minutes.
- Melt 1 tablespoon of butter in a large skillet over medium heat. When the foaming subsides, carefully transfer 2 slices of bread from the custard to the pan and cook until golden brown, about 2 minutes per side. Repeat with remaining butter and soaked bread.

- Cut the bread in 2-inch wide pieces. In a large mixing bowl, whisk together the eggs, milk, herbs, 1/4 teaspoon of the salt, and the pepper. Add the bread, toss to coat, and let stand for 10 minutes, stirring gently every now and then to ensure even coating.
- In the meantime, core the tomatoes and slice them horizontally in 1/3-inch slices. Let stand in a colander to drain for 5 minutes. Cut the sun-dried tomato halves in bite-size pieces.
- Preheat the oven to 400 degrees F and grease a large baking dish with 1 teaspoon olive oil. Arrange the tomato slices over the bottom of the dish, reserving nine of the most attractive for the top. Sprinkle with the remaining 1/4 teaspoon salt, drizzle with a little olive oil, and top with the garlic and sun-dried tomatoes.
- Arrange the bread over the tomatoes, pour the remaining egg mixture over the dish, top with the reserved tomato slices, and sprinkle with cheese. (This can be prepared up to 8 hours ahead, covered tightly and refrigerated).
