This keto meatloaf recipe comes out moist and delicious every time. It's the ultimate gluten-free meatloaf that uses a combination of ground meat and pork and almond flour as a substitute for the bread crumbs. It features a sweet and tangy ketchup sauce that is finger-licking good!

1 pound of ground beef 85/15
1 pound of ground pork
1 medium red of white onion, chopped
6 garlic cloves minced
1 carrot chopped finely
1 1/2 tablespoon of Italian seasoning
2 teaspoons of salt
1/2 teaspoon of black pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/4 teaspoon of chili powder
1 tablespoon of Worcestershire sauce
1 teaspoon of gluten-free tamari soy sauce
2 eggs, room temperature
1/2 cup of almond flour or crushed pork rinds
1/4 cup of grated parmesan cheese
1/2 cup of sugar-free ketchup
2 1/2 teaspoons of apple cider vinegar
1 tablespoon of granulated sugar substitute
1/4 teaspoon of red pepper flakes (optional)
1 teaspoon of Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the dry spices, grated parmesan cheese, and almond flour. Then add the ground beef, ground pork, onions, minced cloves, chopped carrot, Worcestershire sauce, soy sauce, and eggs. Combine the mixture well until just combined. Do not overmix.
  • Transfer the prepared meatloaf into a greased 9x5 inch loaf pan and cover with aluminum foil. Bake the meatloaf for 30 minutes.
  • Prepare the ketchup sauce by mixing all the ingredients in a small bowl.
  • Take the meatloaf out of the oven, remove the foil wrap and spread the ketchup sauce evenly on top of the meatloaf return back into the oven, and bake for another 15-20 minutes until cooked through and the ketchup glaze has set. The meatloaf will be done when it reaches 160 degrees F with a meat thermometer.
  • Allow the meatloaf to rest for about 10 minutes before slicing.
  • Store leftovers in the refrigerator in an airtight container for up to 3 days or freeze for up to 3 weeks.
