Make this highly concentrated, savory paste to use with pasta, in sauces, as a condiment, dip, marinade ingredient, basting sauce or as a "secret sauce" ingredient in soups, stews, chilis and gravies.

Ingredients

1 Tablespoon Anchovy Paste
1 Tablespoon Reduced Sodium Soy Sauce
1 Tablespoon Tomato Paste
2 Tablespoons Fresh Grated Parmesan Cheese
2 Tablespoons Olive Oil
1 Teaspoon Asian Fish Sauce
2 Cloves Garlic, minced
3 or four Shitake Mushrooms, chopped finely
1/2 Teaspoon Red Miso Paste (skip this if you don't have any on hand)
1/2 Teaspoon Balsamic Vinegar
A pinch of crushed red pepper or a little squirt of Sriracha Sauce

Steps:

Combine all ingredients in a mini food processor. Process until well blended and smooth. Taste and adjust ingredients if desired. Store in a jar in the refrigerator.

4 clove garlic minced
1 Tbsp fish sauce
4 shiitake mushrooms finely chopped
1 tsp red miso paste
1 tsp balsamic vinegar
1/2 tsp red pepper flakes

Steps:

1. place all ingredients in food processor. Blend until smooth
2. Store in fridge

COPYCAT UMAMI SEASONING

Copycat Umami Seasoning image

This umami seasoning -- inspired by Trader Joe's version -- gets its savory flavor from porcini mushroom powder. It can be scaled up easily and keeps well, so make a double batch to keep on hand to use when you're looking to add a flavor boost to any dish.

2 1/2 teaspoons porcini powder
2 teaspoons white mushroom powder
2 teaspoons onion powder
1 teaspoon crushed red chile flakes
1 teaspoon mustard powder
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper

Steps:

Combine the porcini powder, white mushroom powder, onion powder, chile flakes, mustard powder, thyme, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Transfer to an airtight container. Umami seasoning keeps up to 3 months at room temperature.
Here are two of our favorite ways to use the seasoning.
Mac and Cheese: Stir 1 tablespoon umami seasoning into the cheese sauce from your favorite boxed mac and cheese before you toss it with the pasta.
Popcorn: Pop a 3.5-ounce package of natural microwave plain popcorn. Drizzle with 1 tablespoon olive oil and sprinkle with 1 teaspoon umami seasoning.

Ingredients

1/4 cup Worcestershire sauce
3 tablespoons coconut aminos or soy sauce
2 tablespoons finely ground dried shiitake or porcini mushrooms
One 6-ounce can tomato paste
1/2 cup grated Parmesan
1 teaspoon fish sauce

Steps:

In a microwave-safe bowl, whisk together the Worcestershire, coconut aminos and ground mushrooms. Microwave for 45 seconds. Let steep for an additional 5 minutes, whisking frequently.
Add the tomato paste, Parmesan and fish sauce. Keep refrigerated in an airtight container for up to 2 weeks.

Heat oil in a medium saucepan over medium-high heat. Add onion and salt. Cook, stirring frequently and reducing the heat as necessary, until very dark golden brown, 15 to 20 minutes.
Reduce heat to medium, add garlic and cook until fragrant, 15 to 30 seconds. Stir in water, tomato paste, liquid aminos, ground mushrooms and pepper. Adjust heat to maintain a simmer. Cook, stirring occasionally, until thick and pasty, 15 to 18 minutes.
Remove from heat and stir in nutritional yeast. Let stand for 10 minutes to concentrate and meld flavors. Transfer to a mini food processor and process until smooth.
