1 tbsp. extra-virgin olive oil
3/4 lb. Boneless Skinless Chicken Breast
3 tbsp. dijon
1 tsp. honey
1/2 lb. thinly sliced deli ham
1/4 lb. thinly sliced gruyere

Steps:

  • Preheat oven to 350 degrees F. On a floured work surface, roll out crescent rolls into one large rectangle, pinching together seams.
  • In a large skillet over medium-high heat, heat oil. Cook chicken until cooked through and golden, 4 to 6 minutes per side. Transfer to a cutting board and thinly slice.
  • In a small bowl, stir together Dijon and honey. Spread honey mustard all over Crescent rectangle and layer with ham, chicken, and gruyere.
  • Starting from the bottom, tightly roll up the rectangle like a cinnamon roll, then slice into four rolls. Transfer to a glass baking dish and bake until puffed and golden, 15 to 20 minutes.

8 thin slices deli ham
8 slices Swiss cheese
2 eggs
1 cup 2% milk
2 cups crushed cornflakes
1/2 teaspoon garlic powder

Steps:

  • Flatten chicken to 1/4-in. thickness. Top each with a slice of ham and cheese. Roll up and tuck in ends; secure with toothpicks. , In a shallow bowl, whisk eggs and milk. In another shallow bowl, combine cornflakes and seasonings. Dip chicken in egg mixture, then roll in crumbs. , Place on a greased baking sheet. Bake at 350° for 40-45 minutes or until chicken is no longer pink. Discard toothpicks.

  • Preheat oven to 350°. Season chicken with salt and pepper, then place Dijon and bread crumbs in two separate shallow dishes. Dip chicken in Dijon until fully coated, then toss in bread crumbs. Transfer to a cutting board.
  • Top each chicken breast with a slice of ham and 1/4 cup gruyère. Roll up chicken breasts and transfer to a baking dish.
  • Top with more gruyère and bake until chicken is cooked through, 25 minutes.

1/2 cup baby spinach
4 slices (0.75 oz each) Swiss cheese

1 egg white, beaten with 1 tablespoon water

Steps:

  • Heat oven to 375°F. Lightly spray rimmed baking pan with cooking spray.
  • In 8-inch skillet, cook Topping ingredients 6 to 8 minutes over medium heat, stirring frequently, until crumbs are deeply browned. Reserve.
  • Meanwhile, place chicken breasts on cutting board. Cut each breast in half horizontally into two 4-oz pieces. Place each breast piece between pieces of plastic wrap or waxed paper. 8 slices cooked ham
4 slices Swiss cheese, cut into 1 inch pieces
salt and pepper to taste
1 teaspoon dried thyme
¼ cup melted butter
½ cup cornflakes cereal crumbs
1 (10.75 ounce) can condensed cream of chicken soup
½ cup sour cream
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
  • Place melted butter in a small bowl and place cereal crumbs in a shallow dish or bowl. Dip each chicken roll in butter or margarine, then roll in crumbs, turning to coat thoroughly. Place coated rolls in a lightly greased 9x13 inch baking dish.

⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.

3 tablespoons butter, divided
2 pounds boneless, skinless chicken breast halves, sliced into thin strips
salt and ground black pepper to taste
2 tablespoons all-purpose flour
2 cups milk
1 cup shredded Swiss cheese
1 egg
1 (16 ounce) package egg roll wrappers
1 (8 ounce) package thinly sliced deli ham
1 (8 ounce) package thinly sliced Swiss cheese, slices cut in half
½ cup vegetable oil for frying

Steps:

  • Melt 1 tablespoon butter in a skillet. Cook chicken strips until no longer pink in the center, about 10 minutes. Season with salt and pepper. Transfer chicken to a plate.
  • Melt the remaining butter in the same skillet over medium-low heat. Whisk in flour until smooth. Cook, whisking constantly, until well combined, about 1 minute. Increase heat to medium. Add milk gradually. Cook, stirring constantly, until thickened and bubbling, about 7 minutes. Add shredded cheese, salt, and pepper. Cook and stir the sauce until the cheese melts, about 2 minutes. 1 1/2 cups cooked chicken (diced very small)
4 ounces black forest ham (sliced deli thin and then chopped into 1/4" pieces)
4 ounces Swiss or Havarti cheese (sliced deli thin and then chopped into 1/4" pieces)
1 package spring roll wrappers
1 egg (beaten)
2 cups coconut oil (or flavorless cooking oil of your choice)
Honey Mustard Dipping Sauce

Steps:

  • In a medium size bowl, combine the chicken, ham and cheese pieces and stir to mix thoroughly. Separate the spring roll wrappers and set aside. Beat the egg in a small bowl and set aside as well.
  • Place a single wrapper on a large plate and scoop a heaping tablespoon of the mixture into the center of it. Roll from the corner in and fold in the sides as you go. Dip a finger in the beaten egg and seal the edge with egg. Set aside on a clean plate. Repeat until all of the egg rolls have been made.
  • FRYING INSTRUCTIONS: In a heavy weight sauce pan, heat the oil. For my stove, medium high works best. The oil should never be hot enough to smoke, but it should be hot enough to sizzle when you place an egg roll in the oil. Cook the egg rolls in batches, turning them as needed in the shallow oil. Remove the egg rolls using your tongs and set aside to drain slightly on a wire rack over a pan or on a paper towel lined plate.
  • BAKING INSTRUCTIONS: Preheat oven to 425 degrees. Place the rolls on a silicone lined baking sheet (or grease the metal baking sheet). Brush the rolls lightly with oil and then place in the oven. Turn the rolls over after 10 minutes cooking and bake about 5 minutes more, or until they are golden brown.
  • Let rest for a few minutes before eating. The cheese will be very hot. Serve warm with Honey Mustard Dipping Sauce. Enjoy!

24 egg roll wrappers
Oil for frying
HONEY MUSTARD DIPPING SAUCE:
1/2 cup mayonnaise

  • In a large bowl, combine the first six ingredients. Place about 1/4 cup filling in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filing. Moisten remaining corner with water; roll up tightly to seal. Repeat., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls, a few at a time, for 1-2 minutes on each side or until golden brown. Drain on paper towels. , In a small bowl, combine mayonnaise and mustard. Serve with egg rolls.

1 cup breadcrumbs
1/2 cup flour
1 1/2 cups milk

  • Lay down cutlet of chicken and put a slice of ham and a slice of cheese on top and roll it up, sealing it with 2 toothpicks. Dip it in milk bath and then roll it in flour. What makes this more special than the traditional cordon bleu rolls is the delicious combination of proscuitto and swiss. They complement one another perfectly. Serve this dish with rild rice and asparagus or a nice risotto for a quick - yet elegant - weeknight meal. I adapted this recipe from a crockpot cookbook I once had.

6 chicken breasts, pounded to 1/4 inch thickness
6 pieces prosciutto
6 slices swiss cheese
salt and pepper
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup dry white wine

Steps:

  • On each chicken breast, place one piece of prosciutto and cheese. Roll up each chicken breast and secure with a toothpick. Season each roll with salt and pepper. Place in the Crock-Pot slow cooker.
  • In a small bowl, whisk together the soup, milk and white wine. Pour half of this mixture over the chicken breast rolls, placing the other half in the refrigerator for later. Cover and cook on Low for 4 to 6 hours or on High for 3 to 4 hours.

Bake at 400 degrees F (200 degrees C) for about 40 minutes or until chicken is golden brown and juices run clear. Serve with cordon bleu sauce, if desired.
