VANILLA COFFEE PROTEIN SMOOTHIE



Vanilla Coffee Protein Smoothie image

This Vanilla Coffee Protein Smoothie is sweetened with agave nectar, vanilla, and dates! Adjust the sweetness and coffee vibe as desired! And in place of a banana, we're using steam cauliflower for a rich, creamy, neutral flavor! {Vegan + GF}

1 cup coffee, chilled
1/2 cup almond milk
2 tablespoons agave nectar (more or less to taste)
1/2 teaspoon vanilla
1 handful steamed-then-frozen cauliflower
2 scoops vanilla-flavored protein powder
1/4 cup dates, pitted and chopped
1 handful ice cubes, optional

Steps:

  • Brew a batch of coffee, let cool, and store in the refrigerator to chill.
  • Steam cauliflower florets and let cool. Store in freezer-safe containers, about a handful per container.
  • In a high-speed blender, combine the cold coffee, almond milk, agave nectar, vanilla, frozen cauliflower, protein powder, and dates and mix on a high speed until smooth. If the smoothie gets hot, then blend in a handful of ice cubes.
  • Enjoy right away or store in the refrigerator for up to 24-36 hours.
