STRAWBERRY COOLER
During the dog days of summer, my family looks for a cold, thirst-quenching drink. I like this ons because it's sparkling, refreshing and fast and easy to make.

VANILLA STRAWBERRY COOLER
A vanilla bean is an extravagance that lends a note of sophistication to this drink, but extract is a fine substitute.
Yield Makes about 1 1/2 quarts
Number Of Ingredients 5
Steps:
- Blend strawberries, lemon juice, sugar, and 2 cups water in a blender, 1 to 2 minutes (in batches if necessary). Scrape seeds from vanilla bean with tip of a knife into blender (or add extract), then blend with strawberry purée. If desired, pour through a very fine sieve into a pitcher to remove strawberry seeds, pressing hard on solids. Stir in remaining 2 cups water and serve over ice.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray 18 muffin cups with nonstick spray.
- Blend cake mix, water, oil, egg whites, almond extract, and vanilla extract in a large bowl at low speed until moistened, about 30 seconds. Beat at medium speed for 2 minutes. Pour batter evenly into the prepared cups.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 15 to 20 minutes. Let cool completely, about 30 minutes.
- While cupcakes cool, smash the fresh strawberries with the back of a fork in a bowl until they are a coarse pulp. Add jam and lemon zest.
- Beat cream cheese in a mixing bowl until fluffy. Mix in fruit mixture and until well combined. Fold in whipped topping. Cover and refrigerate until cupcakes finish cooling.
- Slice off the top half of the cupcakes and spoon a layer of strawberry filling onto each. Cover with the top half. Dust with confectioners' sugar.

VANILLA-STRAWBERRY PUREE
Add some interest to ordinary strawberry puree by styling it up with a hint of vanilla. I like to use it on Greek yogurt parfaits, or drizzling on pancakes, waffles, oatmeal, ice cream, cake, or even stirring some into a glass of lemonade or carbonated water to get some bright berry flavor.

- In a medium bowl, combine the strawberries, sugar, lemon juice, and vanilla bean paste. Use a pastry blender or potato masher to mash the strawberries up a bit with the other ingredients. Stir in the water. Allow the mixture to sit for at least 15 minutes or up to an hour.
- Pour the strawberry mixture into a blender and blend on high until completely liquid. Add the coconut milk and blend again--you can add more if you'd like it creamier.
- Serve the drink over ice with sprigs of fresh mint for garnish. If you'd like to make this ahead of time, store in the fridge and blend well before serving.
