WAFFLE COOKIES I
Steps:
- Preheat the waffle iron on medium setting.
- In a large mixing bowl, cream the butter and sugar. Stir in the vanilla and salt. Add eggs one at a time, mixing after each addition. Then stir in the flour.
- Drop the batter by heaping soupspoonful onto the waffle grid. Close the cover and bake for about 3 minutes and 20 seconds. Every waffle iron is a little different so you may want to test it on the first couple of cookies. Place finished cookies onto a wire rack to cool.

VANILLA WAFER COOKIES THAT ARE BETTER THAN STOREBOUGHT
This recipe comes from my favorite cookbook from a church. It is simple, easy, inexpensive and delicious! Not to mention it tastes better than the vanilla wafers you can buy at the store! You can make the cookies bigger if you'd like, they just won't have as crispy of an outside. We like to add a slice of banana between two cookies, dip them in chocolate, and then freeze them (;

Steps:
- Blend flour with light brown sugar and salt in a large bowl or roaster. De-lump the sugar with fingers until most of lumps are out. Add eggs and stir into batch with your hands. Add melted butter and again work in with hands. Add pure vanilla plus enough imitation vanilla to draw the mixture together by kneading thoroughly with hands until you obtain one large mass. Place in bowl and let it stand for a day at room temperature before rolling out cookies. Roll out cookies by hand into worms about the size of a tootsie rolls before cooking. Cook on a Belgian Cookie Iron or Pizzelle Iron. Will make about 120 to 150 cookies.

VANILLA WAFER COOKIES
These buttery cookies bake up chewy and crispy at the same time. Sprinkle these vanilla wafers with colored sugar or leave them as-is. Their simplicity is beauty enough! -Edith MacBeath, Gaines, Pennsylvania

WAFFLE COOKIES
My mom made these cookies years ago. They are good with or without the frosting. Sorry, the recipe didn't say how long they cook (so I guessed on the prep and cook time), or how much powdered sugar to use, and I haven't made these in awhile so I don't remember. I'm also not sure about how many dozen this makes, I just guessed.

- Heat a waffle maker to medium-high heat (or 350°F if you have that option). Line a cookie sheet with parchment paper.
- Cream butter and sugar until fluffy, 1-2 minutes, then mix in eggs and vanilla. Mix dry ingredients into wet and mix until smooth. Dough will be thick like cookie dough but will be sticky.
- Working in batches, drop 1-tablespoon size balls of dough in your waffle maker. If you’re using a standard 7-8-inch waffle maker, you should be able to place 4 cookies at a time (one in each quadrant of the circle). Close waffle maker and cook for 3-5 minutes, depending on heat and size, or until the cookies are golden brown. Use a fork to help you pop them out of the waffle iron (be careful not to burn yourself). Place on cookie sheet to cool.
