2 veal cutlets (about 4 ounces each)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter, divided
1 tablespoon olive oil
1/4 pound fresh mushrooms, thinly sliced
1/3 cup chicken broth
2 teaspoons minced fresh parsley

Steps:

  • Flatten cutlets to 1/8-in. thickness. In a shallow dish, combine flour, salt and pepper. Add veal; turn to coat. In a skillet, heat 2 tablespoons butter and oil over medium heat. Add veal; cook until juices run clear, about 1 minute on each side. Remove and keep warm., Add mushrooms to skillet; cook and stir until tender, 2-3 minutes. Spoon over veal. Stir broth into skillet, stirring to loosen any browned bits. Add parsley and remaining butter; cook and stir until slightly thickened, 1-2 minutes longer. Pour over veal and mushrooms.

2 pkgs (about 1 lb each) Wegmans Boneless Thin-Sliced Pork Chops
Wegmans Sea Salt Fine Crystals and cracked pepper
3/4 cup Wegmans Pure Olive Oil
2 Tbsp Wegmans Extra Virgin Olive Oil
1 pkg (5 oz) Wegmans Organic Fresh Baby Spinach
3 Tbsp roasted red tomatoes (Mediterranean Bar), thinly sliced
2 containers (4 oz each) Wegmans Lemon Butter Sauce (Prepared Foods)
1 Tbsp Italian Classics Nonpareil Capers, drained
1 tsp chopped Food You Feel Good About Italian Parsley
Zest of 1/2 lemon

Steps:

  • •Put flour, eggs and bread crumbs in separate shallow bowls. Blend cheese into bread crumbs. Season pork with salt and pepper; coat each chop well with flour. Dip in egg until well-coated; dredge in bread crumbs until completely coated. •Heat pure olive oil in pan on MED-HIGH, 1-2 min. Add pork, 3 chops at a time. Cook about 2 1/2 min, until edges turn golden-brown. Turn over; cook about 2 min, until internal temp reaches 145 degrees (check by inserting thermometer halfway into thickest part of meat). Drain on paper towels. Repeat with rest of pork. Transfer to clean platter. Let rest 5 min. Wipe pan clean. •Add extra-virgin olive oil, spinach and tomatoes to pan on HIGH. Cook, stirring, until spinach is wilted and heated through, about 2 min. Divide spinach mixture evenly on chops. •Add lemon butter sauce, capers and parsley to pan. Add pepper to taste. Heat 2 min to warm through. Serve with sauce. Garnish with lemon zest.

I have been making this recipe for my husband's birthday dinner for the last 15 years. This recipe truly stands on it's own merit and I don't recommend any changes. I originally got this recipe from a cookbook but have modified it over the years to make it simpler.

10 ounces frozen spinach
5 tablespoons butter (divided)
1 (15 ounce) can tomato sauce
2 garlic cloves, minced
1/4 cup dry white wine
1/4 cup water
1 tablespoon tomato paste
1/2 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
4 -6 veal cutlets
1 tablespoon olive oil
4 -6 slices mozzarella cheese

Steps:

  • Cook spinach according to package directions.
  • Drain well and toss with 1 tablespoon of butter; set aside.
  • Heat 2 tablespoons butter in medium sauce pan over medium heat.
  • Add minced garlic and cook for 30 seconds.
  • Add tomato sauce, wine, water, tomato paste, sugar, 1/2 tsp of the salt and 1/8 tsp of the pepper.
  • Bring to a boil then reduce heat to medium-low.
  • Simmer uncovered for 10 minutes, stirring occasionally.
  • Remove from heat and set aside.
  • Mix flour and remaining salt and pepper in a large zip-top bag.
  • Pound veal until 1/4 inch thick.
  • Shake one piece of veal at a time in seasoned flour in bag to coat evenly.
  • Heat oil and 2 tablespoons of butter in large skillet over medium heat.
  • Add veal to skillet; cook turning over once until light brown, 2 to 3 minutes per side.
  • Remove from heat.
  • Top veal with evenly with reserved spinach, (a couple of tablespoons on each -- you won't use it all).
  • Top each with a slice of cheese.
  • Add sauce to skillet; do not let sauce cover cheese.
  • Lift edges of veal to allow sauce to flow under.
  • Heat at medium high heat, until sauce is bubbly.
  • Reduce heat to medium low.
  • Simmer covered 8 minutes.
  • Serve immediately.
  • (I serve this over cooked angel hair pasta).

1/2 cup unbleached all-purpose flour
1/2 teaspoon hot paprika
1/2 teaspoon garlic salt
1/2 teaspoon black pepper (or to taste)
4 veal cutlets (flatten down to 1/2-inch thick)
2 tablespoons clarified butter, divided
2 tablespoons olive oil, divided
1/2 cup shallot, finely chopped
8 ounces button mushrooms, sliced
1 pinch sea salt
1/2 tablespoon lemon zest
2 garlic cloves, pressed
1/4 cup dry white wine
1/2 cup heavy cream
1 tablespoon butter
10 ounces Baby Spinach
1/2 cup parmesan cheese, grated
1/2 cup mozzarella cheese, grated
1/2 tablespoon parsley, chopped (for garnish)
1/2 lb spaghettini, cooked

Steps:

  • In a re-sealable bag, combine flour, paprika, garlic salt and black pepper; set aside. Pat dry veal and place it on a cutting board lined with plastic wrap. Place another cling film over the meat and pound down to ½-inch thick using a meat mallet. Place one cutlet at a time in flour mixture; shake off excess flour, transfer to a plate while dredging the others.
  • Preheat oven to 375ºF. In a large skillet over medium high-heat, add 1 tablespoons clarified butter and 1 tablespoons oil. When hot, working in batches, put in couple veal cutlets; sear them 1 ½ minutes per side. Transfer cutlets in a 9x13 baking dish lightly greased.
  • When cutlets are all done, in the same skillet, add another tablespoons clarified butter and 1 tablespoons oil. Add shallots and sauté for 1 ½ minutes. Add mushrooms and sprinkle a pinch ground sea salt; cook until golden brown, about 5 minutes. 3 minutes after mushrooms are sautéing, add lemon zest; continue cooking the ingredients. Add garlic and sauté for 1 minute. Pour in wine and half-and-half; stir and simmer for 5 minutes.
  • Meanwhile, in a large pot over medium-high heat, add butter and when melted, add spinach, stir well and cover for 30 seconds. Stir again and cover; this shouldn't take more than 1 ½ minutes to wilt spinach. Transfer to a colander to drain.
  • In a bowl, combine parmesan and mozzarella cheese; mix well.
  • To assemble the dish, spoon sauce over cutlets and top with spinach. Sprinkle with cheese mixture and chopped parsley. Transfer to preheated oven and cook for 10-15 minutes or until the internal temperature reaches 165ºF and cheese is lightly browned. Serve over spaghettini. Makes 4 servings.

6 oz fresh spinach
Warm salted water
6 Tbsp butter
1 can (14.5oz) whole peeled tomatoes
2 cloves garlic, minced
1/4 cup dry white wine
1/4 cup water
1 Tbsp tomato paste
1/2 tsp sugar
3/4 tsp salt
1/4 tsp pepper
1/4 cup all-purpose flour
4 veal cutlets, cut 3/8" thick (~4oz each)
1 Tbsp olive oil
4 slices mozzarella cheese

Steps:

  • Rinse spinach in large basin of warm salted water to remove sand; drain. Trim stems. Stack leaves; cut crosswise into coarse shreds. Place spinach with water that clings to leaves in medium saucepan over medium heat. Steam covered, stirring occasionally, until tender, about 4 minutes. Add 2 Tbsp of the butter; cook and stir uncovered until butter is absorbed. Remove spinach from pan. Reserve. Press tomatoes and their liquid throu sieve into bowl; discard seeds. Heat 2 Tbsp of the remaining butter in medium saucepan over medium heat. Add garlic; saute 30 seconds. Add sieved tomatoes, the wine, 1/4 cup water, the tomato paste, sugar, 1/2 tsp of the salt and 1/8 tsp of the pepper to pan. Heat to boiling; reduce heat to low. Simmer uncovered, stirring occasionally, 10 minutes. Remove from heat. Mix flour and remaining 1/4 tsp salt and 1/8 tsp pepper in small bag. Pound veal cutlets until 1/4" or less thick. Pat dry with paper toweling. Shake one piece of veal at a time in seasoned flour in bag to coat evenly. Heat oil and remaining 2 Tbsp butter in large noncorrosive skillet over medium heat. Add veal to skillet; cook, turning once, until light brown, 2 to 3 minutes per side. Remove from heat. Spoon off excess fat. Top veal with reserved spinach, dividing evenly; top each with 1 slice of cheese. Pour tomato sauce into skillet around veal; do not let sauce cover cheese. Lift edges of veal to let sauce flow under. Cook uncovered over medium heat until sauce is bubbly; reduce heat to very low. Barely simmer covered 8 minutes. Serve at once.

I serve this with a salad tossed with raspberry vinaigrette and goat cheese crumbles, greens sauteed in garlic and olive oil, Italian bread, and plenty of white wine! Go all out - you can also serve this over angel hair pasta.

2 pounds boneless veal medallions, pounded to 1/4 inch thickness
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon ground white pepper
¼ cup olive oil
1 pound mozzarella cheese, shredded
½ cup sherry wine
½ cup butter
3 tablespoons all-purpose flour
3 tablespoons sherry wine
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together the 1 cup flour, salt and white pepper in a shallow dish. Set aside. Heat olive oil in a large skillet over medium-high heat. Coat veal medallions with the flour mixture and shake off the excess. Fry for about 1 minute on each side, just to brown but not cook through.
  • Arrange the veal in a 9x13 inch baking dish. Sprinkle the mozzarella cheese over the top. Clean out the pan from the veal, and melt butter with 1/2 cup of sherry over low heat. In a small bowl, mix the 3 tablespoons flour with 3 tablespoons sherry, and whisk into the pan. Continue whisking over low heat until the mixture is thickened. Season with salt and pepper to taste. Pour the sherry sauce over the veal and cheese.
  • Bake for 20 to 30 minutes in the preheated oven, until cheese is melted and gooey. Sauce will be runny. Soak it up with Italian bread!
