1 tablespoon orange marmalade or apricot preserves

Steps:

  • Heat broiler of toaster oven (or oven). Lightly toast bread, then top with cheese and marmalade or preserves. Broil until cheese is melted, 1 to 2 minutes.

2 boxes (12.5 ounces each) frozen cinnamon-swirl French toast, Krusteaz
4 eggs
3 cups milk
2 cups pure maple syrup
1 teaspoon pumpkin pie spice, McCormick
1/3 cup marmalade, Smuckers
1 banana, sliced

Steps:

  • Spray two 9x13-inch baking pans with cooking spray. Place French toast pieces evenly in the bottoms of prepared pans; set aside.
  • In a medium bowl, whisk together eggs, milk, 1 cup of the maple syrup, and the pumpkin pie spice until well combined. Pour evenly over French toast slices in each pan. Cover with plastic wrap; let sit for 1 hour, occasionally pushing French toast down into mixture.
  • Preheat oven to 350 degrees F. Remove plastic wrap and place pans in oven. Bake about 1 hour or until golden brown.
  • In a small saucepan, heat the remaining 1 cup maple syrup, the marmalade, and sliced banana over medium-low heat until heated through. Serve warm over French toast.

2 cups unbleached all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
4 large eggs
3/4 cup vegetable oil
3/4 cup sugar
2/3 cup packed golden brown sugar
1/2 cup orange marmalade
1/2 cup orange juice
3 cups (lightly packed) grated peeled carrots
3/4 cup chopped toasted walnuts
Frosting
4 8-ounce packages cream cheese, room temperature
2 cups powdered sugar
1 1/4 cups (about) orange marmalade
6 tablespoons (3/4 stick) unsalted butter, room temperature
2 teaspoons grated orange peel
1 1/4 cups finely chopped toasted walnuts (about 6 ounces)

Steps:

  • For Cake:
  • Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Sift first 5 ingredients into medium bowl. Beat eggs, oil, sugars, marmalade and juice in large bowl until blended. Stir in dry ingredients. Fold in carrots and nuts. Divide batter between cake pans. Bake until tester inserted into centers comes out clean, about 40 minutes. Transfer cakes to racks; cool 15 minutes. Turn out cakes onto racks; cool completely.
  • For Frosting:
  • Using electric mixer, beat cream cheese and sugar in large bowl until smooth. Add 3/4 cup marmalade, butter and orange peel and beat just until smooth. If necessary, cover and chill until firm enough to spread.
  • Place 1 cake on plate. Spread with 1/4 cup marmalade. Spread 1 cup frosting over. Top with second cake. Spoon 2 cups frosting into pastry bag fitted with large star tip. Spread remaining frosting smoothly over top and sides of cake.
  • Pipe frosting in 4 parallel lines atop cake, spacing evenly. Pipe 5 lines atop cake in opposite direction, forming lattice. Press 1 cup nuts onto sides of cake. Pipe ring of frosting around top edge of cake. Stir 1/4 cup marmalade to loosen; spoon some into 1 row of lattice diamonds. Spoon some of remaining nuts into next row of diamonds. Repeat, alternating marmalade and nuts, filling rows completely. (Can be made 2 days ahead. Cover with cake dome and chill.)

8 thick slices challah (or other egg bread)
1/2 cup whipped cream cheese, at room temperature
6 tablespoons orange marmalade
canola oil or clarified butter, for cooking
unsalted butter, at room temperature, for serving
pure maple syrup, for serving

Steps:

  • Preheat the oven to 350°.
  • Have ready a rimmed baking sheet.
  • In a large shallow bowl, whisk together the eggs, milk, orange zest and juice, and vanilla.
  • Lay 1 bread slice on a work surface and spread with one-fourth each of the cream cheese and marmalade.
  • Top with another slice.
  • Repeat with the remaining bread, cream cheese, and marmalade.
  • Place a griddle over med-high heat until hot.
  • Lightly oil the griddle.
  • One at a time, dip the sandwiches in the egg mixture and turn gently to coat evenly, keeping the sandwiches intact.
  • Let stand until the bread has soaked up some of the egg mixture, about 30 seconds.
  • Remove the sandwiches from the egg mixture, letting the excess drip back into the bowl, and place on the hot griddle.
  • Cook until the bottoms are golden brown, about 2 minutes.
  • Flip the sandwiches and brown the other sides, about 2 minutes more.
  • Transfer to the baking sheet.
  • When all 4 sandwiches are on the sheet, place the sheet in the oven and bake until the cream cheese, melts, about 10 minutes.
  • Serve the French toast sandwiches at once with butter and maple syrup.

12 slices sourdough bread
3/4 cup orange marmalade
4 large eggs
2 tablespoons 2% milk

Steps:

  • Spread cream cheese over six slices of bread; top with marmalade and remaining bread. In a shallow bowl, whisk eggs and milk., Lightly grease a griddle; heat over medium heat. Dip both sides of sandwiches into egg mixture. Place sandwiches on griddle; toast 2-3 minutes on each side or until golden brown. If desired, serve with syrup.

1/8 teaspoon ground nutmeg
2 tablespoons (1/4 stick) butter
Orange Syrup

Steps:

  • Preheat oven to 300°F. Place baking sheet in oven. Cutting through top crust of each bread slice, make 4-inch-long by 2-inch-deep pocket. Stir cream cheese and marmalade in small bowl. Spoon 1 generous tablespoonful cream cheese mixture into each bread pocket.
  • Whisk eggs, milk, vanilla extract, cinnamon and nutmeg in pie plate.
  • Dip 4 stuffed bread slices into egg mixture, coating completely. Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add dipped bread to skillet. Cook until golden brown, about 2 minutes per side. Transfer French toast to baking sheet in oven. Repeat dipping and cooking with remaining 4 bread slices, egg mixture and 1 tablespoon butter. Serve with Orange Syrup.

Steps:

  • Preheat oven to 300°F.
  • Place baking sheet in oven.
  • Cut a 4-inch long by 2-inch deep pocket through the top crust of each slice of bread.
  • Mix cream cheese and marmalade together.
  • Spoon 1 generous Tablespoon of cream cheese mixture into each bread pocket.
  • Whisk eggs, milk, vanilla extract, cinnamon, and nutmeg together in a pie plate.
  • Dip 4 stuffed bread slices into egg mixture, thoroughly coating them.
  • Over medium heat, melt 1 Tablespoon butter in large, nonstick skillet, then add the 4 bread slices.
