Vegan Banana Muffins are light and fluffy, made with ripe bananas and topped with a sprinkle of cinnamon. They're perfect to grab and go on a busy morning, plus they're dairy, egg, and gluten free!

3 cups gluten free all-purpose flour
2 cups mashed ripe bananas
1 cup brown sugar
1 cup almond milk
1 cup coconut oil (melted)
1/2 cup white sugar
1 tbsp lemon juice
2 tsp double acting baking powder
1 1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp salt

Steps:

  • Preheat oven to 350F. Grease a muffin tin and set aside.
  • In a bowl whisk together all dry ingredients, except cinnamon. Add remaining ingredients while mixing gently, taking care not to over mix.
  • Distribute batter evenly among muffin tins. Sprinkle tops with cinnamon and bake 10-12 minutes, or until muffins are golden brown and a toothpick comes out clean.

3 medium bananas, mashed (approx. 365g)
2 tbsp coconut sugar (20g)*
3-4 tbsp non-dairy milk (45ml)
1 tsp vanilla, optional
1 tsp cinnamon, optional
1 cup + 2 tbsp gluten free flour (138g // I use half oat flour + half gluten free flour blend)
2.5 scoops of neutral or vanilla vegan protein powder (75g)*
1.5 tsp baking powder
1 tsp baking soda

Steps:

  • Pre-heat oven to 425 F (220 C)
  • Add mashed banana, coconut sugar, 3 tbsp non-dairy milk, vanilla and cinnamon into a large bowl and whisk until combined. Add in the flour, vegan protein powder, baking powder and baking soda. Use a spatula and mix until a thick batter forms. If the batter looks too thick, add an extra tbsp of non-dairy milk (refer to video/photos).
  • Divide the batter into 8 muffin tins. Bake for 5 minutes and then reduce the temperature to 350 F and bake for another 15-20 minutes or until cooked through. Check doneness by inserting a toothpick in the centre of one of the muffins, it should come out clean.
  • Remove from oven and let it cool in the pan for 5 minutes. Carefully transfer to a cooling rack and allow the muffins to cool for another 10 minutes before eating.

10 dates, pitted
1/2 cup applesauce, unsweetened
1/4 cup oil, I use grape seed
3 bananas, overripe is best
1 teaspoon vanilla
1 cup rice flour
1 cup almond meal
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Turn the oven to 350°F Grease a 12-muffin pan, or line with paper muffin cups.
  • Combine the dates, applesauce, oil, bananas and vanilla in a blender or food processor. Mix until the dates are completely broken down.
  • Combine all the dry ingredients in a large bowl and whisk until thoroughly mixed.
  • Add the banana mixture to the dry ingredients and mix just until combined.
  • Pour into the prepared tin.
  • Bake for 15-20 minutes.
