Vegan Chocolate Pie image

This no-bake, 4-ingredient vegan chocolate pie is perfect for those days when you don't have time or when your oven is tied up. Top with coconut whipped cream and you'll have a vegan dessert.

2 cups almond milk (such as Silk®)
1 (5 ounce) package non-instant chocolate pudding mix (such as JELL-O® Cook and Serve)
¼ cup vegan chocolate chips (such as Enjoy Life®)
1 vegan graham cracker crust (such as Annie's®)
½ cup vegan whipped cream (such as So Delicious® Cocowhip™)

Steps:

  • Combine almond milk and pudding mix in a saucepan and bring to a boil, stirring constantly, over medium heat. As soon as pudding boils, reduce heat to low and continue cooking and stirring until pudding thickens, about 5 minutes.
  • Remove from heat and stir in chocolate chips until melted. Pour into graham crust and refrigerate until set, about 2 hours.
  • Top with vegan whipped cream.

This is very rich. I invented it because I have to be on a dairy-free diet, and I really miss those fancy mochas and lattes. Soy milk doesn't do it for me. I think this is a really tasty treat, and I might just keep drinking it, even when I can reintroduce dairy!

1 tablespoon cocoa powder (rounded)
1 tablespoon sugar (level)
3/4 cup strong coffee
3/4 cup hemp milk (or a nut milk)
1 ounce dark chocolate (70%)
1/2 teaspoon vanilla extract
1 tablespoon Soy Whip (optional)

Steps:

  • Place cocoa powder and sugar in a large mug.
  • Add hot coffee. (I brew mine directly into the mug).
  • Stir to dissolve cocoa and sugar.
  • Add hemp milk and stir.
  • Add chocolate. Microwave until hot, but not boiling. (This takes 90 seconds on my rather low-powered microwave). (Boiling will cause the hemp milk to separate).
  • Add vanilla extract and stir to blend in the chocolate. (This takes more than a quick stir).
  • Top with soy whip, if desired.

1 cup water
1 teaspoon agar-agar flakes
2 teaspoons instant espresso
12 ounces firm silken tofu, well-drained
1 cup maple syrup, fancy grade
1/4 cup unsweetened cocoa powder
1 tablespoon vanilla extract
1/4 teaspoon sea salt
1 vegan pie crusts, precooked

Steps:

  • In a small saucepan, combine water and agar-agar flakes and bring to a boil.
  • Gently simmer until agar has dissolved completely, about 5 minutes.
  • Add espresso and stir until dissolved. Cool slightly.
  • In a food processor or blender, blend tofu, maple syrup, cocoa powder, vanilla, salt and cooled espresso mixture until completely smooth.
  • Pour into the prepared pie shell. Refrigerate for several hours or overnight until firm.
  • Serve topped with non-dairy topping.
