These can also be made with dairy ingredients. My 10-year-old daughter has been making these on her own for a year now. Vegan chocolate truffles are always a hit with the family and crowds.

8 ounces dairy-free cream cheese (such as Tofutti®)
3 cups confectioners' sugar
12 ounces vegan chocolate chips, melted
1 ½ teaspoons vanilla extract
¼ cup unsweetened cocoa powder
¼ cup shredded coconut
¼ cup chopped almonds

Steps:

  • Beat cream cheese until smooth. Add confectioners' sugar gradually, beating until well blended. Add melted chocolate and vanilla extract. Chill in the refrigerator for 1 hour.
  • Shape the chocolate mixture into 1-inch balls. Roll in cocoa powder, coconut, or almonds. Store in the refrigerator.

36 chocolate sandwich cookies
8 oz cream cheese, softened
12 oz white chocolate, melted

Steps:

  • In a food processor, finely crush the cookies, reserving about 2 tablespoons of the mixture for sprinkling on top of the truffles.
  • In a large bowl, combine the cookie crumbs and cream cheese, stirring until evenly mixed. Chill the mixture for about an hour or until it can be rolled into a ball and hold its shape.
  • Divide and roll the mixture into golf ball-sized balls. Dip the truffles in the melted white chocolate and place on a baking sheet lined with parchment paper. Sprinkle the reserved cookie crumbs on top of the truffles before the chocolate hardens.
  • Enjoy!

3 cups chocolate chips
½ cup heavy cream
24 cookie sandwich fillings
1 cup semi-sweet chocolate chips, melted
24 cookie sandwich crumbs

Steps:

  • Take 24 cookie sandwiches and remove the filling from the center. Collect those in one small bowl, and collect the cookies in another small bowl.
  • Place remaining cookies in a resealable bag and smash the cookies with a pan into fine crumbs.
  • Save the white filling for later.
  • In a medium-sized pan, combine white chocolate chips, heavy cream, and cookie sandwich fillings over low heat. Mix until you achieve a smooth consistency.
  • Pour mixture into a bread pan.
  • Allow to sit in the refrigerator for an hour to cool down.
  • With an ice cream scoop, form balls from the mixture (refreeze if truffle begins to melt).
  • In a small bowl, melt semisweet chocolate. On a cutting board, crush cookies.
  • Dip the truffle in melted semisweet chocolate.
  • Roll in cookie crumbs.
  • Place back in the fridge for 10 minutes.
  • Enjoy!

This is a sweet cake! It's an American-style vanilla butter cake (it's definitely sweet) with a fabulous cookies-and-cream frosting. You can either use vegan store-bought cookies or make your own. Either way it's a sweet winner!

1 cup vegan butter, at room temperature, cubed
2 cups powdered sugar
2 tablespoons vanilla bean paste
3 cups all-purpose flour
¼ cup cornstarch
2 tablespoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 ½ cups soy milk, at room temperature, or more as needed
2 tablespoons white vinegar
2 tablespoons vegetable oil
½ cup vegetable shortening, at room temperature
½ cup vegan butter, at room temperature
1 tablespoon vanilla bean paste
5 cups powdered sugar, sifted
3 tablespoons soy milk, or more as needed
1 cup crushed vegan chocolate cookies

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease and line two 6-inch cake tins with parchment paper.
  • Beat 1 cup vegan margarine using an electric mixer on low speed in a bowl until soft; add 2 cups powdered sugar and 2 tablespoons vanilla paste gradually on medium-low speed until creamy.
  • Sift flour, cornstarch, baking powder, baking soda, and salt together in another bowl; mix well.
  • Pour 2 1/2 cups soy milk into another bowl and add vinegar; stir until it thickens. Add vegetable oil and stir to combine.
  • Alternate adding small amounts of flour mixture and soy milk mixture to sugar mixture, beating on low speed, until you have combined all ingredients. Divide batter evenly between the two prepared cake tins, being careful not to fill over 3/4-full.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, 80 to 90 minutes.
  • Remove from the oven and let cakes cool completely, about 30 minutes.
  • Mix shortening and vegan butter for frosting together in the bowl of a stand mixer using a paddle attachment on medium-low speed until fluffy. Add vanilla paste and mix to combine. Add powdered sugar and soy milk gradually until desired consistency is reached. Add cookie crumbs slowly and mix until combined. Fill a piping bag with frosting.
  • Place 1 layer of cooled cake on a plate and frost top and sides with frosting; place remaining cake layer on top and frost completely.

1 (16 ounce) package semi-sweet chocolate chips

Steps:

  • Crush 36 cookies into fine crumbs with a food processor or chopper. You could also do this by placing the cookies in a plastic bag and crushing them with a rolling pin.
  • In a medium bowl, mix the cookie crumbs and the softened cream cheese until well blended.
  • Roll the cookie mixture into balls, about 1 inch in diameter.
  • Melt the chocolate.
  • Coat the balls in the chocolate and place on waxed paper to firm up.
  • If desired, crush any leftover cookies and sprinkle them on top of the truffles.
  • Refrigerate until firm, for about an hour.
