VEGAN HOMEMADE POP-TARTS®
A vegan take on a breakfast favorite! Cover tarts with any icing you like, or powdered sugar. Tip: they're just as good toasted the day after as they are fresh out of the oven.

Steps:
- Scoop tablespoons of shortening onto a plate and chill in the freezer for 10 minutes.
- Meanwhile, combine flour, sugar, and salt in a bowl and chill for 5 to 10 minutes.
- Crumble shortening into the flour mixture with your fingers until no large clumps remain. Add 1/2 cup ice water to the mixture, a little at a time, until dough reaches a shaggy consistency. Knead on the countertop a couple of times to combine. The dough should appear a little too dry.
- Place dough back into the bowl or a large container and cover with a lid. Refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll dough into a large rectangle, about 1/8-inch thick. Cut into twelve 4x6-inch rectangles.
- Place about 1 1/2 tablespoon of strawberry jam in the center of 6 of the rectangles. Brush the edges with water and top with the other dough halves. Seal the edges of each tart with a fork. Trim the edges for neater tarts, if desired.
- Bake in the preheated oven until the edges are lightly browned, 15 to 25 minutes. Let cool, 20 to 30 minutes.
- Combine powdered sugar, almond milk, and food coloring in a bowl for icing. Drizzle icing over the cooled tarts.

VEGAN POP TARTS
These vegan pop tarts are fun to make and absolutely delicious! Made with your choice of fillings sandwiched between flaky pastry and topped with sweet, gooey glaze, these delicious little pastries are even better than store bought pop tarts. Perfect for an indulgent breakfast or a sweet snack!

- Note: It's a good idea to read through the entire recipe before getting started. Also note that you will choose one filling (don't make all three, or you'll have way too much!).
- To make the pastry, first stir the flour, sugar, and salt together in a large mixing bowl.
- Cut the shortening and butter into the flour mixture using a pastry cutter. Continue until the mixture resembles coarse crumbs.
- Begin adding cold water to the flour mixture, stirring in a tablespoon or two at a time using a fork, until the mixture just holds together. You can add up to 1/2 cup of water.
- Divide the dough into two halves. Roll each half into a ball, wrap it in plastic, and place it into the refrigerator to chill for 30 minutes.
- When the dough has only a few minutes left to chill, prepare your filling of choice. If making fruit filled pop tarts, measure your jam. For chocolate filled pop tarts, melt the chocolate chips by microwaving in 30 second increments and stirring in between, then stirring coconut milk into the melted chocolate. For brown sugar cinnnamon pop tarts, stir the filling ingredients together in a small bowl.
- Preheat the oven to 350°F and line a couple of baking sheets with parchment paper.
- Remove one of your dough balls from the fridge and unwrap it.
- On a lightly floured surface, use a rolling pin to roll the dough to 1/8 inch thick.
- Cut the dough into 3 inch by 4 inch rectangles (you should get about 9) and arrange them on the baking sheets.
- Remove the other dough ball from the fridge and roll it to 1/8 inch thick in the same manner. Cut into 3 inch by 4 inch rectangles.
- Use a bit of water to moisten the edges of the 9 rectangles that you've placed on the baking sheet, then spoon a 1 to 2 tablespoons of filling into the centers of the rectangles. Be careful not to use too much filling or it will spill out during baking.
- Place another rectangle over each of the filling topped rectangles, press the edges to seal, then crimp them with a fork. Poke a few holes in the tops with a toothpick.
- Bake the vegan pop tarts until golden, about 25 minutes.
- Brush them with melted butter once they come out of the oven, then carefully remove them from the baking sheets and place them on a cooling rack.
- When the pop tarts are cool, stir the glaze ingredients together in a small bowl, along with add-ins of choice.
- Spoon the glaze over the pop tarts and serve.

- In a large mixing bowl, add flour and salt. Using a measuring cup, add in oil and non-dairy milk to the bowl of flour.
- Using your clean hands, mix the crust until the dough forms. Be careful not to overmix. When it is just formed, you are done.
- On a floured surface, divide your dough into two balls. Roll each ball out and cut out 4-5 rectangles from each bit of dough. You should have between 8-10 small rectangles of dough. If you want, you can roll out one giant rectangle from one dough ball, but I find that working with smaller batches is easier.
