Vegan Raita - Made With Cashew Cream image

I gave this a try with dinner tonight and it was pretty delicious. Vegan, gluten-free and added-sugar free. It is totally appropriate for the 21 Day Quantum Wellness Cleanse.

3/4 cup cashews, raw
3/4 cup water
1 lemon, juiced
1/2 cucumber, diced
1/2 cup frozen corn
1 teaspoon salt

Steps:

  • Make the cashew cream by combining the cashews, water and lemon juice in a blender. Puree until it attains a yogurt like consistency. If the cashews are really dry, let them soak in the water and lemon juice for an hour or two before blending.
  • Spoon the cashew cream into a bowl and add the cucumber, corn and salt. Mix well.
  • Serve cold with Indian food.

1 ½ cups unsalted raw cashews
½ cup water
3 tablespoons lemon juice
1 teaspoon apple cider vinegar
¼ teaspoon salt, or more to taste
3 tablespoons chopped fresh chives

Steps:

  • Place cashews in a bowl. Add hot water to cover; soak for 5 to 10 minutes. Drain and transfer to a blender.
  • Add 1/2 cup water, lemon juice, vinegar, and salt; blend until creamy, stopping to scrape down the sides every now and then. Stir in chives.
  • Serve right away or let chill in the refrigerator before serving.
