Vegan Royal Icing (How to decorate sugar cookies) image

This is the only vegan royal icing recipe you need! Just two ingredients and so easy, your vegan sugar cookies will look professionally decorated for the holidays!

Your favorite vegan sugar cookie recipe
4 cups powdered sugar
3-5 tbsp aquafaba
1 tsp vanilla extract (optional)
Plant-based food coloring*

Steps:

  • Bake and cool the sugar cookies in the shape that you desire.
  • this will be to prevent the more liquid royal icing from running over the cookie. Mix together the powdered sugar with 2-3 tbsp of aquafaba to start. Add more if you need help creating more of a paste than a liquid and runny royal icing. If you are making multiple colors, such as the snowman's hat, you'll divid some of the vegan royal icing into a separate bowl and add the coloring. Spoon the icing into a piping bag and cut the very end of the tip with scissors. Pipe a clean border around the sugar cookie that will block the vegan royal icing from flooding.
  • towel. This will prevent the royal icing from hardening.
  • in the same bowl, add another tablespoon of aquafaba and mix until the royal icing easily drips from the spoon. If you need more aquafaba, add in a tbsp at a time- you don't want to make it too drippy, or it will thin. Do this for all of the colors that you've made, and spoon the icing into another piping bag. Cut the tip of the piping bag and fill the middles of your cookie only a little to start. Then use a toothpick to carefully push the royal icing to the border that we made in Step 2.
  • Allow the royal icing to set for 15 minutes before you pipe more royal icing on top (like a scarf, facial features, mittens etc.).
  • Allow the cookies to finish setting for 15 minutes and enjoy! Store in the freezer for up to 3 months.

Vegan royal icing, easy, sweet, and creamy. You can use it to decorate your vegan sugar cookies. It's ready in 10 minutes with 4 ingredients!

2 tbsp aquafaba (30 ml), the liquid from a can of chickpeas
1 tsp vanilla extract
4 cups powdered sugar (480 g)
Gel food coloring (optional), you can use 1-2 tbsp or unsweetened plant milk of your choice instead (I used soy milk)

Steps:

  • Drain the liquid from a can of chickpeas into a large bowl and set the chickpeas aside to make any recipe that calls for chickpeas. You're going to need only 2 tbsp or 30 ml.
  • Add the aquafaba to an electric mixer bowl and beat on high speed until the mixture is fluffy and stiff peaks form (about 3-5 minutes). You could also use a regular large bowl and a hand mixer.
  • Incorporate all the remaining ingredients and blend again until smooth and well combined. If you're not going to use gel food coloring, your vegan royal icing will probably be too thick, so add 1- 2 tbsp of unsweetened plant milk of your choice until you get the desired consistency. If you use gel food coloring and your vegan royal icing is also too thick, add a little bit of milk until you get the proper consistency, but keep in mind that the icing has to be thick to solidify when you decorate the cookies. If your icing is too thin, add a little more powdered sugar.
  • Use immediately to decorate cookies like vegan sugar cookies.
  • Keep the leftovers in an airtight container at room temperature for 3 days or in the fridge for up to 1 week. It will dry, so blend again before using.

I found this on the Wilton forums when searching the web for an eggless royal icing substitute. I made a batch this morning and used it to assemble a gingerbread house. The pieces stuck together easily, the icing isn't running, and the roof isn't slipping at all. I'm very pleased! (Note: I'm posting the recipe as I found it, but I had to add an extra tsp of liquid - I used water, total of 3 tsp - as it was very pellet-like at first.)

1 cup confectioners' sugar
2 teaspoons non-dairy milk substitute (like rice milk, or water)
2 teaspoons light corn syrup
1/4 teaspoon almond extract (or clear vanilla)
favorite paste food coloring or powder food coloring

Steps:

  • 1. In a small bowl, stir together confectioners' sugar and first liquid (water or rice milk) until smooth.
  • 2. Add corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
  • 3. Divide into bowls, and add food colorings to each to desired intensity. Remember, colors will lighten slightly when dry. Dip, pour or paint with a brush onto the cookies. Set aside to dry.
  • 4. Cover icing with damp cloth when not using to prevent crusting.

  • Put your aquafaba into your bowl or stand mixer and beat on high for several minutes until light and frothy.
  • Add 5 cups of your powdered sugar (sifting it first helps remove clumps that may clog up your icing nozzle) to your frothy aquafaba and mix on medium speed until smooth and glossy.
  • Add in your corn syrup and the other 1.5 cups of powdered sugar and beat again until well incorporated. If you don’t want to use the corn syrup, you can skip it, but it helps to make the icing dry shinier and be a little more smooth for decorating.
  • Now, once your icing is smooth and glossy, check the consistency to make sure it’s thick enough for any outlining you may want to do. I feel like this vegan icing needs to be a little thicker than you would normally make an egg-based icing for outlining, so if you’ve made egg-based royal icing before, try and shoot for a little thicker than usual. If you pull up the beater on your mixer, you want the icing to make a peak that will droop and almost drop, but will hold in place on the beater. That’s usually a good outline consistency for me.Also, since I make it a little thicker, I would suggest using piping bags and metal tips for outlining as thicker icing can sometimes be a struggle to get out of icing bottles and you can more easily push the icing out of a bag you are squeezing than a bottle.
