1 1/2 cups flour (I used unbleached flour)
1 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon allspice
1/4 teaspoon clove
1/2 cup raisins
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/3 cup oil
1 cup ginger ale

Steps:

Combine flour, sugar, baking powder, salt and spices in a mixing bowl.
Add vinegar, vanilla, oil, and ginger ale to the dry ingredients - stirring until just mixed.
Fold in raisins.
Pour batter into a greased and floured 8x8 cake pan.
Bake at 350F for 30-40 minutes or until cake tester comes out clean.

Our daughter needed an Irish dish for a heritage-themed event at school. This traditional Irish fruitcake recipe received some "kind" treatment, as well as removing the beer from the ingredients. The cake is pleasantly spiced and has a moist crumb like gingerbread-so while delicious anytime of the year, it is especially suited for a holiday table!

1 cup oat flour
1 1/4 cups spelt flour
1/2 cup coconut sugar
11/2 teaspoons ground cinnamon
1/4 - 1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup raisins
1 - 1 1/2 teaspoons grated lemon zest
1 cup vanilla or plain nondairy milk
3/4 cup unsweetened applesauce
2 tablespoons macadamia nut butter (cashew butter, or raw almond butter (optional; see note for nut-free))
1 tablespoon blackstrap molasses
1 tablespoon rice vinegar (apple cider vinegar, or fresh lemon juice)
1 teaspoon pure vanilla extract

Steps:

Preheat the oven to 350. Lightly wipe an 8" x 12" baking dish with oil and line with parchment paper. In a large bowl, combine all the dry ingredients, including the raisins and zest. In a medium bowl, whisk together the milk, applesauce, nut butter, molasses, vinegar, and vanilla. Add the wet ingredients to the dry and mix until just combined. Transfer to the prepared baking dish. Bake for 26-29 minutes, until a toothpick or skewer inserted in the center of the cake comes out clean. Remove from the oven, and let the cake cool in the pan.

This cake is beautifully moist and incredibly simple to make; it's also 100% vegan and nut free, so it's an all-around winner in my book. It can easily be cut into bars or squares, and you could even add icing on top for an extra something. I hope you enjoy this as much as I do!

1 cup water
1 tablespoon instant coffee, or as needed
1 teaspoon oil for greasing
2 ¾ cups all-purpose flour
1 cup white sugar
2 ½ teaspoons pumpkin pie spice
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon nutmeg
½ teaspoon ground ginger
¾ cup vegetable oil
¾ cup water
3 tablespoons pumpkin puree
1 teaspoon vanilla extract

Steps:

Boil 1 cup water and mix with instant coffee in a measuring cup or mug. Set aside to cool.
Preheat the oven to 350 degrees F (175 degrees C). Grease a rectangular 9x13-inch baking pan.
Combine flour, sugar, mixed spice, baking powder, salt, cinnamon, nutmeg, and ginger in a bowl and mix well. Add cooled coffee, oil, and 3/4 cup water and mix until well combined. Fold in pumpkin puree and vanilla extract; mix well. Pour batter evenly into the prepared baking pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean or almost clean, as this cake can be quite sticky, about 30 minutes.
Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert cake carefully onto a serving plate or cooling rack. Cool at least 15 minutes more before cutting.

Mix the flax seed meal with water and set aside. In a large bowl combine 1.5 cups of flour, sugar, salt, baking powder, baking soda, sugar, cinnamon, ginger, cardamom, cloves and nutmeg. Whisk well. Fold in the dates.
Add the applesauce, flax seed mix, oil and vanilla if using. Mix to just about combine into a slightly stiff mixture. (Mix in grated apple if using). If batter is not stiff add flour 1 to 2 tbsp at a time and mix it. Transfer the batter in a prepared cake pan and spread it using a spatula.
Bake for 30-35 minutes or until a toothpick from the enter comes out clean.( 20-22 mins for muffins, 45 to 50 mins for a loaf).
