Vegetable Cookies Recipe - (3.3/5) image

Number Of Ingredients 8

20 g butter, at room temperature
20 g caster sugar
30 g egg
100 g self-raising flour
1 tsp baking powder
1 tsp milk
7 or 8 slices of the vegetables of your choice
white sesame, baked in oven for 2-3 minutes until lightly browned

Steps:

  • 1) Mix flour and sugar in a mixing bowl. 2) Add in egg and butter, and then knead mixture into a dough by hand. 3) Add in milk and knead the dough until smooth. 4) Tear off a piece of dough, roll into a ball with palms and then flatten it. (Note: when the ball is flattened, the size should be slightly larger than your sliced vegetables) 5) Press a piece of vegetable onto the dough and then coat both sides with white sesame. 6) Arrange the cookies dough with vegetables on a tray, bake in a pre-heated oven at 180 deg C for 15 to 20 minutes, or until the edges are lightly browned.

1 1/2 cups granulated sugar
1/2 cup firmly packed brown sugar
2 tbsps. milk
3 large eggs, lightly beaten
1 tsp. vanilla extract
4 cups Pillsbury BEST® All Purpose Flour
1 1/2 tsps. baking soda
1 1/2 tsps. cream of tartar
1 tsp. salt
Colored sugar and decors (optional)

Buttery Cream Frosting:

or 1/3 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
1 1/2 tsps. vanilla extract
6 to 7 tbsps. milk
Food coloring (optional)

Steps:

  • COMBINE shortening, granulated sugar and brown sugar in large bowl; beat at medium speed until well blended. Add milk. Beat in eggs, one at a time. Add vanilla.
  • COMBINE flour, baking soda, cream of tartar and salt in separate large bowl. Mix into shortening mixture until well blended. Chill 1 hour.
  • HEAT oven to 350 degrees F.
  • ROLL out 1/3 of dough at a time to about 1/4-inch thickness on floured surface. Cut out with cookie cutters. Place 2 inches apart on ungreased baking sheets. Sprinkle with colored sugars and decors or leave plain and frost when cooled.
  • BAKE 6 to 8 minutes or until edges of cookies are slightly golden. Remove immediately to cooling rack.
  • Buttery Cream Frosting:
  • COMBINE powdered sugar, shortening and vanilla in bowl of electric mixer; slowly blend in milk to reach desired consistency.
  • BEAT on high speed for 5 minutes or until smooth and creamy. Tint frosting with food coloring, if desired.

1 ½ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
1 cup white sugar
1 cup brown sugar
1 ½ cups rolled oats
½ cup flaked coconut
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
  • Bake for 10 to 12 minutes in the preheated oven, cookies should be a very light brown and chewy - not crisp. Cool for a couple of minutes on the baking sheets before removing to wire racks to cool completely.

3/4 cup white sugar
2 cups flour

Steps:

  • Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
  • Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.
  • Flatten with bottom of glass moistened with water and dipped in sugar.
  • Bake at 400°F for 6-10 minutes or just until lightly golden.

100 gm Whole Wheat Flour
50 gm Gram Flour
70 gm Butter (Unsalted)
15 gm Corn Flour
1.5 tsp Salt
1/2 tsp Sugar-free
1 tsp Cumin Seeds
1/3 cup Onions (Finely Chopped)
1 tsp Green Chilis (Chopped)
1/3 cup Green Peas
1/3 cup Carrot (Grated)
1/2 tsp Baking Powder
2 tbs Milk
1 tsp Oil

Steps:

  • Take a non-stick pan and heat 1 tsp oil on it. Sauté cumin seed, chopped onions, and green chili for about 2 minutes and then add grated carrots and green peas.
  • Cook for 2-3 minutes. Switch off the flame. Mash these vegetables. Let them cool down.
  • In a separate bowl take wheat flour, gram flour, cornflour, salt, sugar-free, butter, baking powder, and mashed vegetables. Mix everything with hands to a coarse breadcrumb-like mixture.
  • Add 1 tablespoon milk at a time till you get a smooth dough. I added 2 tablespoons of milk.
  • Now cover the dough with a cling wrap and refrigerate it for 30 minutes.
  • Meanwhile, keep the oven for preheating to 160 °C.
  • After 30 minutes take the dough out of the refrigerator and slice the cookies using a sharp knife
  • Arrange the cookies on a greased baking tray and put them to bake in preheated oven for 15-18 minutes.
  • When baked, take the cookies out from oven and transfer them to a cooling rack.
  • Let the cookies cool down completely before serving.

1/2 cup peas or 1/2 cup mixed vegetables, boiled
1/2 cup cheddar cheese, shredded
1/2 cup margarine or 1/2 cup butter
1 cup whole wheat flour
2 -3 tablespoons milk (as much as it takes, usually 2-3 tablespoons)

Steps:

  • Boil the vegetables; make sure you overcook them (you want to be able to mash them).
  • In a bowl, mix the cheese with the margarine or butter; add mashed vegetables and flour; slowly add milk.
  • Form into a dough.
  • Place in the freezer for 1 hour.
  • Open the dough and with a cookie cutter form into shapes.
  • Bake at 350 degrees Fahrenheit for about 15 to 20 minutes.
  • Let them cool and enjoy.
  • Makes about 20 to 25, depending on the size of the shapes.
