I played around with this recipe for 15 years before I got it just right! Served with toasted garlic bread, it makes a wonderful wintertime lunch.-Joyce Toney, Peoria, Arizona

3 cups reduced-sodium chicken broth
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 cup uncooked small pasta shells
1 teaspoon reduced-sodium chicken bouillon granules
1 garlic clove, minced
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup chopped fresh spinach
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 tablespoons grated Parmesan cheese

Steps:

  • In a large saucepan, combine the broth, tomatoes, pasta, bouillon and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until pasta is almost tender. , Stir in the beans, spinach, basil, oregano and pepper; cover and simmer for 10 minutes or until heated through and pasta is tender. Sprinkle with Parmesan cheese.

⅓ cup milk or water
1 (16 ounce) bag frozen vegetable combination (broccoli, cauliflower, carrots), cooked and drained

Steps:

  • Heat the soup and milk in a 1-quart saucepan over medium heat until the mixture is hot and bubbling, stirring occasionally. Divide the vegetables among the pastry shells. Spoon the soup mixture over the vegetables.

12 cups diced peeled potatoes
12 cups frozen sliced carrots
12 cups frozen peas
12 cups frozen lima beans
9 cups frozen cut green beans
9 cups diced celery
1 (16 ounce) package small shell pasta
water to cover
4 quarts tomato sauce
2 (32 ounce) cans chicken broth
10 pounds ground beef
4 cups diced onions
3 tablespoons salt
2 tablespoons dried basil
1 ½ teaspoons pepper

Steps:

  • In several large kettles, combine the first seven ingredients. Add water to cover. Add tomato sauce and broth.
  • In other large skillet, cook ground beef and onions until meat is browned and crumbly, about 5 minutes. Drain. Add to vegetable mixture. Season with salt, basil and pepper; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until celery is tender.

2 medium onions, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
2 medium carrots, chopped (1 cup)
2 cloves garlic, finely chopped
2 cans (14 1/2 ounces each) ready-to-serve chicken broth
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can (15 to 16 ounces) kidney beans, rinsed and drained
1 cup diced cooked chicken
2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
1/2 cup uncooked small pasta shells (2 ounces)
1/4 cup shredded Parmesan cheese

Steps:

  • Heat oil in Dutch oven over medium-high heat. Cook onions, bell pepper, carrots and garlic in oil 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender.
  • Stir in broth, tomatoes, beans, chicken and basil. Heat to boiling; reduce heat to medium-low. Cook 10 minutes, stirring occasionally.
  • Stir in pasta. Cook 10 to 12 minutes, stirring occasionally, until pasta is tender. Top each serving with cheese.

3 tablespoons butter
3 onions, diced small
3 celery ribs, diced small
1 -2 teaspoon herbes de provence
4 carrots, peeled and diced small
1/2 turnip, peeled and diced small
3 large potatoes, peeled and diced small
8 cups vegetable stock or 8 cups chicken stock
4 tablespoons tomato paste
1 cup shell noodles
salt and pepper

Steps:

  • Heat butter in large saucepan, adding onions, celery, and herbes de Provence.
  • Cover and cook 15 minutes over low heat.
  • Stir in carrots, and turnips and continue to cook for another 5 minutes.
  • Add potatoes, chicken stock and tomato paste and bring to a boil.
  • Add noodles and cook 15 minutes over medium high heat.
  • Serve hot.
