This Vegetarian Mushroom Pot Pie is the perfect comfort food - fresh mushrooms in a creamy gravy with garlic, thyme, & an easy pastry crust.

2 tablespoons olive oil
2 tablespoons butter ((or use vegan butter))
2 medium onions (chopped)
5 cloves garlic (finely minced)
16 cups sliced fresh mushrooms ((I like to use a combination of white and crimini))
3 sprigs fresh thyme ((leaves only))
a few pinches each of salt and pepper
1/2 cup red wine
1/4 cup all purpose flour
1 1/4 cup vegetable stock
a pinch of nutmeg
1 large sheet of puff pastry ((or use vegan puff pastry, if desired))
1 egg ((optional))
2 tablespoons water ((optional))
flaky sea salt and thyme

Steps:

  • Preheat your oven to 400 degrees Fahrenheit and prepare a large (approximately 9-inch by 13-inch size) baking dish by greasing it with butter or cooking spray. Set aside.
  • Heat a large skillet over medium-high heat and add the olive oil and butter.
  • Add the onions and garlic and saute until the onions soften and become slightly translucent.
  • Add the mushrooms and continue to saute until the mushrooms begin to brown slightly and become nice and soft. The mushrooms will release some liquid, but continue cooking as it evaporates.
  • Add the thyme and salt and pepper and stir to combine.
  • Once the mushrooms begin to caramelize, add the red wine and stir well, scraping any caramelized bits off the bottom of the pan. Continue to cook as the wine cooks off, until there's almost no liquid left.
  • When the liquid is gone, add the flour slowly, stirring so the white of the flour begins to disappear and form a paste over the mushroom mixture.
  • Add the stock slowly, stirring well as it cooks to create a thick, creamy sauce.
  • Stir in a pinch of nutmeg.
  • Scrape the mushroom mixture into the prepared baking dish and top it with one sheet of puff pastry, tucking the edges of the puff pastry under to form a crust around the edges of the pan.
  • Using your fingers, shape the edges into a soft, fluted shape (press the pastry with your right index finger in between your left thumb and index finger to create this shape).
  • Dock the pastry topping with a fork in several places, or use a knife to make slits in the top. This will help the air escape while it's baking and keep the pastry in place as it bakes.
  • Whisk together the egg and water to make an egg wash and brush it all over the top of the uncooked pastry.
  • Top with some flaky sea salt.
  • Bake for about 25 to 30 minutes at 400 degrees Fahrenheit or until the pastry is golden brown.
  • Serve hot from the oven (let stand for about 5 minutes before serving) with a sprinkling of fresh thyme leaves on top.

1 large white or yellow onion, finely diced
Salt + Pepper ((to taste))
1 pound carrots, peeled and finely chopped
1/4 cup unbleached all-purpose flour
1/2 cup dry white wine ((optional // or sub more vegetable broth))
3 cups vegetable broth (DIY or store-bought)
2 tsp fresh thyme ((chopped // or sub 1 tsp dried per 2 tsp fresh))
1 15-ounce can white beans ((rinsed and drained))
1 1/2 cups unbleached all-purpose flour
1/4 tsp sea salt
10 Tbsp cold vegan butter ((or sub room temperature coconut oil*))
4-7 Tbsp cold water

Steps:

  • Preheat oven to 400 degrees F (204 C) and arrange 6 (amount as original recipe is written // adjust if altering batch size) ramekins on a baking sheet. Set aside.
  • Heat a large pot over medium heat. Once hot, add oil and onion. Season with a pinch each salt and pepper and stir. Sauté until soft and translucent - 4-5 minutes.
  • Add carrots and season with a pinch more salt and pepper. Cook 2-3 minutes, then add flour and stir well to thoroughly coat.
  • Cook for 1 minute, then slowly add white wine (optional) followed by vegetable broth, whisking to prevent clumps.
  • Add thyme and white beans and bring the mixture to a simmer. Then lower heat to low and simmer for a few minutes. Cover and remove from heat while preparing crust.
  • To prepare pie crust, add flour and salt to a mixing bowl and whisk to combine.
  • Next add vegan butter (or coconut oil) and use a pastry cutter (or fork) to cut the two together, until it resembles wet sand - about 30-45 seconds.
  • Add ice cold water 1 Tbsp at a time and use a wooden spoon to gently mix. Add only as much water as needed to help it come together and form a dough - about 4-6 Tbsp (amount as original recipe is written // adjust if altering batch size).
  • Use your hands to gently knead/form the dough in the bowl and gather any loose scraps. Then transfer directly to a well-floured surface and form into a disc with your hands.
  • Lightly flour the top of the dough, as well as a rolling pin, and gently roll out until about 1/8-inch thick. Add more flour as needed to prevent sticking.
  • Use a pizza cutter or knife to cut into 6 (amount as original recipe is written // adjust if altering batch size) large squares slightly larger than the size of your ramekins.
  • At this time, scoop the white bean filling into the ramekins until almost entirely full (reserve any leftovers to enjoy as soup or future pot pies).
  • Use a lightly floured spatula to scoop each pie crust square onto a ramekin. Repeat until all ramekins are covered. Use a knife or toothpick to create small holes in the top of the pie crust to allow steam to escape.
  • Bake pot pies for 35-40 minutes, or until the filling is bubbly and the pie crust is golden brown. Let cool 10 minutes before serving.
  • Store leftovers covered in the refrigerator for 3-4 days, or in the freezer up to 1 month. Reheat in a 350 degree F (176 C ) oven until completely warmed through.

2 1/4 cups all-purpose flour
1 1/2 teaspoon kosher salt
1/2 cup (1 stick) chilled unsalted butter, cut into pieces
1 large egg, beaten to blend
1 tablespoon distilled white vinegar
Mushroom gravy:
2 tablespoons olive oil
5 tablespoons unsalted butter, divided
1 medium onion, chopped
1 tablespoon tomato paste
1 pound button or crimini mushrooms, stems trimmed, quartered
1/2 cup dry sherry
4 cups low-sodium chicken broth
1/4 cup dried porcini mushrooms
3 tablespoons all-purpose flour
Assembly:
1/2 fennel bulb, chopped
1 cup red pearl onions, peeled
3 tablespoons unsalted butter, divided
Kosher salt, freshly ground pepper
2 sprigs thyme, plus leaves for serving
8 ounces oyster or maitake mushrooms
All-purpose flour (for surface)
1 large egg
Flaky sea salt

Eight 6-oz. ramekins

Steps:

  • Dough:
  • Whisk flour and salt in a large bowl. Work in butter with your fingers until only pea-size pieces remain. Combine egg, vinegar, and 1/3 cup ice water in a small bowl and drizzle over flour mixture; quickly work in with your fingers until a shaggy dough forms.
  • Turn out dough onto a work surface and press together, working just enough to form a smooth ball with no dry spots. Wrap in plastic and chill until very cold, at least 2 hours.
  • Mushroom gravy:
  • Heat oil and 2 Tbsp. butter in a medium saucepan over medium. Cook onion, stirring occasionally, until very soft, 10-12 minutes. Add tomato paste and cook, stirring often, until color darkens and paste completely coats onion, about 1 minute. Add button mushrooms and cook, stirring occasionally, until softened and any liquid has evaporated, 12-15 minutes. Add sherry and cook until almost completely evaporated, about 5 minutes. Add broth and porcini mushrooms. Bring to a simmer and cook until reduced by half (about 2 1/2 cups), about 1 hour. Strain mushroom broth through a fine-mesh sieve into a medium bowl, pressing down on solids; discard solids.
  • Heat remaining 3 Tbsp. butter in a large saucepan over medium. Whisk in flour and cook, whisking often, until flour begins to smell nutty, about 4 minutes. Whisking vigorously to prevent lumps, add mushroom broth and increase heat to medium-high. Bring to a simmer and cook 1 minute. Remove from heat.
  • Assembly:
  • Place a rack in middle of oven; preheat to 425°F. Combine fennel, onions, 1 Tbsp. butter, and 1 cup water in a small saucepan; season with kosher salt and pepper. Bring to a boil over medium-high, cover, and reduce heat. Simmer until fennel and onions are crisp-tender, 5-8 minutes. Uncover; cook until liquid evaporates, 15-18 minutes. Let cool.
  • Heat remaining 2 Tbsp. butter in a large skillet over medium. Cook thyme sprigs and mushrooms, tossing occasionally, until mushrooms are browned and tender, 6-8 minutes. Let cool; pluck out thyme.
  • Divide fennel mixture and mushrooms among ramekins. Spoon gravy over top. Divide dough in half. Working with one at a time, roll out to 1/4" thick. Cut out 2 rounds about 1/2" wider than the diameter of ramekins. Gather up scraps, reroll, and cut out 2 more rounds (for 8 total).
  • Whisk egg, a pinch of kosher salt, and 1 tsp. water in a small bowl. Brush dough with egg wash; place over ramekins, brushed side down. Press firmly around sides to adhere. Brush tops of dough with egg wash; sprinkle with thyme leaves and sea salt. Set pot pies on a rimmed baking sheet and bake until crusts are golden brown and domed, 25-35 minutes.
  • Do Ahead
  • Dough can be made 3 days ahead. Keep chilled. Gravy can be made 3 days ahead. Let cool; cover and chill. Pot pies (without brushing outside of pastry and topping) can be assembled 1 day ahead. Cover pot pies and extra egg wash separately and chill.

4 Tablespoons butter
1/2 cup onion, chopped
3 medium carrots, chopped
2 celery stalks, chopped
1 large russet potato, sliced thin and cubed ((about 1 1/2 cups))
12 ounces button mushrooms, chopped or quartered
2 cloves garlic, minced
1 1/4 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt or to taste
1/2 teaspoon pepper or to taste
1/2 cup all-purpose flour
2 cups vegetable broth
3/4 cup heavy cream or half & half
1 cup frozen green beans or peas
1 sheet puff pastry, thawed

Steps:

  • Preheat oven to 400°F.
  • Spray a 10-12 inch baking dish with non-stick cooking spray and set aside. Remove one puff pastry sheet from the freezer to thaw while you prepare the filling.
  • Melt 4 tablespoons butter in a large saucepan over medium-high heat. Add the onions, carrots, celery, potatoes. Cook for about 5 minutes or until the vegetables are slightly tender.
  • Add the mushrooms, garlic, thyme, parsley, salt, and pepper. Cook and stir for 3 more minutes until the mushrooms are softened.
  • Sprinkle the flour over the cooked vegetables and stir well to combine.
  • Add the vegetable stock and slightly increase the heat. Cook 5-7, minutes, stirring frequently until the mixture reaches a low boil and thickens.
  • Whisk in the heavy cream until the mixture is thick and creamy.
  • Remove from heat and fold in the frozen greens beans.
  • Pour the mixture into the prepared pan. Unfold the puff pastry and carefully place it in the center of the pan on top of the vegetable filling. Drape the pastry over the edges of the pan. Brush the pastry with an egg wash (1 egg whisked with 1 tbsp water).
  • Bake for 25-30 minutes until the crust is golden brown. Let the pie rest for 5 minutes before serving in bowls. Enjoy!

FOR THE MUSHROOM STOCK:
1 medium onion
3 medium carrots, unpeeled and cut in large chunks
2 garlic heads in their skins, cut in half horizontally
2 cup mixed dried mushrooms, well ground in a blender or food processor
1 cup white mushrooms, cleaned and trimmed
1/2 cup canned tomatoes, coarsely chopped
1 tablespoon butter, at room temperature
1 tablespoon all-purpose flour
1 tablespoon lemon juice
2 tablespoons Madeira
Salt and freshly ground black pepper
FOR THE FILLING:
2 tablespoons butter
1 pound wild mushrooms or cultivated exotic mushrooms
3 cups assorted vegetables that have been peeled, trimmed, and cut into 1/2-inch slices or dice, or very small vegetables (such as carrots and fingerling potatoes) left whole
FOR ASSEMBLY:
2 tablespoons finely chopped, of two to four of these fresh herbs: tarragon, parsley, chives, chervil
1 tablespoon truffle butter, chilled and cut into tiny pieces, optional
2 sheets puff pastry, defrosted in the refrigerator 2 to 3 hours before use, or according to the instructions on the package.

Steps:

  • For the mushroom stock: In a large pot, combine onion, carrots, garlic, ground dried mushrooms, fresh white mushrooms and 10 cups water. Bring to a boil over high heat, then reduce heat to low and simmer uncovered for 1 1/2 hours; there will be about 4 cups. Pour through a strainer lined with cheesecloth, reserving stock and discarding the solids.
  • Return stock to the pot, and add tomatoes. Place over high heat and boil until reduced by half. Strain into a clean pot, and return to medium heat. Knead together the butter and flour, and add to the broth. Simmer for 5 minutes, and add lemon juice, Madeira, and salt and pepper to taste. Cool the stock by placing the pot in a large bowl of ice, then cover and refrigerate until well-chilled. May be refrigerated for up to 3 days, or frozen for up to 2 months.
  • For the filling: In a large sauté pan over medium heat, melt the butter and add fresh wild or cultivated mushrooms. Sauté until the mushrooms release their liquid, 5 to 7 minutes, and immediately remove from heat. Add the liquid to the chilled mushroom stock. Cover and refrigerate the mushrooms until well-chilled; there should be about 1 cup cooked mushrooms.
  • Bring a large pot of water to a boil, and set aside a large bowl of ice water. Cook or blanch vegetable one at time until each is barely tender, about 10 minutes for fingerling potatoes, 5 minutes for whole baby carrots, parsnips or turnips. Leeks and squash do not need to be blanched. Remove the vegetables with a slotted spoon and place in the ice water to cool. When all vegetables are blanched and cooled, drain the vegetables, cover and refrigerate until well-chilled; there should be about 3 cups cooked vegetables.
  • For assembly: Preheat oven to 400 degrees. Divide chilled vegetables and mushrooms between two 1-quart ceramic soufflé dishes about 6 inches in diameter and 3 1/2 inches deep. Pour 1 cup chilled stock into each dish; reserve any remaining stock for another use. Top each dish with 1 tablespoon chopped herbs and 1/2 tablespoon truffle butter, if using.
  • Cut rounds of puff pastry large enough to overhang the dish by 1 1/2 to 2 inches. In a small bowl or cup, beat the egg with the milk. Brush the edge of each round with the egg wash, then invert and place on the dish so the egg helps seal the dish. The puff pastry should not touch the filling or it won't puff when cooked. Brush tops of pies with remaining egg wash. Place dishes on a baking sheet and bake for 25 minutes. Check to see if pastry is golden, and if necessary, bake 5 to 10 more minutes.
  • To serve, run a sharp knife around the inside edge of each dish, lifting off the dome in one piece. Place the dome at an angle, top side down, and ladle the vegetables onto half the dome so they spill onto the plate like a cornucopia.

  • Heat a large Dutch oven or similar deep, heavy-bottomed pan over medium-high heat. Add the butter. Once hot, add the mushrooms and cook for 6 minutes, until mushrooms are beginning to brown, stirring occasionally. Add the celery, garlic powder, salt, and pepper. Cook until the mushrooms have browned more deeply and the celery begins to soften, about 3 additional minutes.
  • Sprinkle the flour over the top of the vegetables and cook 2 minutes, until the white disappears (the vegetables will seem dry). Slowly pour in the almond milk, adding a few splashes at a time, stirring constantly. Bring to a low boil, scraping any brown bits from the bottom of the pan. Continue to let bubble until thickened, about 3 to 5 minutes, stirring very often and scraping a spatula along the bottom of the pot to prevent sticking. Stir in the beans, peas and carrots, onions, thyme, and vinegar. Spoon the mixture into the prepared pie dish.
  • Roll the pie dough into a circle large enough to cover your dish. Brush the edges of the pie dish with the egg wash, then lay the dough over the top so that it overhangs the sides. Trim the overhang to a 1/2 inch larger than edge of the dish. Gently press the dough onto the sides of the dish so that it sticks, then brush all over with the remaining egg wash. With a sharp knife, cut 5 slits in the top.
