This is my grandmother's old-fashioned bread stuffing recipe. It may be cooked as directed, or inside the turkey. It's enough to stuff a very large bird.

30 slices white bread, lightly toasted
2 tablespoons butter
1 large onion, finely chopped
2 stalks celery, finely chopped
2 eggs, lightly beaten
2 cups chicken broth
2 teaspoons rubbed sage
1 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Allow the toasted bread to sit approximately 24 hours, until hard.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Crush the bread into crumbs with a rolling pin. Place the crumbs in a large bowl.
  • Melt the butter in a medium saucepan over medium heat. Stir in the onion and celery and slowly cook until soft. Remove from heat and drain.
  • Mix the eggs and chicken broth into the bread crumbs. The mixture should be moist, but not mushy. Use water, if necessary, to attain desired consistency. Mix in the onion, celery, rubbed sage, garlic powder, salt and pepper.
  • Press the mixture into the baking dish. Bake 1 hour in the preheated oven, or until the top is brown and crisp.

When my grandmother passed away, I received a number of things from her estate. None were as important to me as her handwritten recipe for dressing. Not only is it the BEST dressing I've ever tasted, but it's also not too "sage"y...wonderful for those of us who don't adore sage. I add mushrooms and sometimes finely chopped oysters for personal preference. The shared secret recipe is written out on "General Shale Brick" notepaper, the company my grandfather worked for before he died.

1 (14 ounce) bag Pepperidge Farm Herb Stuffing (cubed)
1/2 cup onion, chopped
1/2 cup celery, chopped
1 teaspoon sage
1 teaspoon salt
1 teaspoon pepper
4 tablespoons bacon grease or 4 tablespoons cooking oil
2 cups water
4 whole eggs

Steps:

  • In large fry pan cook celery and onions in grease or oil and water over low for about 1/2 hour.
  • Put bread, sage, salt and pepper in large bowl. Pour onion/celery mix (including liquid) over bread and mix well.
  • Beat eggs and add to bread mixture. Mix well.
  • Put dressing in greased baking dish and bake about 45 minutes in 350 oven, covered.
  • Doubles well, extremely good cold.
  • Can be made in well greased crockpot on low in about 3 hours.

This is our oldest family recipe. It is the essential stuffing and is the taste of our family meals.

1 1/2 cups celery, chopped
1 cup onion, chopped
1/2 cup butter
1 teaspoon poultry seasoning
1/2 teaspoon lemon pepper
12 cups dry breadcrumbs
1 cup chicken broth
1 egg, beaten
milk

Steps:

  • Preheat oven to 325 degrees.
  • In a large skillet cook celery and onion in melted butter over medium heat until tender, but do not let get brown. Remove from heat.
  • Stir in seasoning and lemon pepper.
  • Place bread cubes in a large bowl; add onion mixture and beaten egg.
  • Drizzle with enough chicken broth to moisten; toss lightly to combine. Add a little milk for flavoring.
  • Spoon stuffing into neck and body cavities of the turkey.
  • If you have some leftover, place it in a buttered casserole dish. Bake covered for 30-45 minutes or until heated through. You will want to add more chicken broth so that it isn't so dry. When it cooks inside the turkey it gets very moist, but in a baking dish it gets dry.
  • Recipe makes enough for a 15 pound bird.

My wonderful SIL brings this every year for thanksgiving. Moist stuffing that's not cooked in the bird yet still delicious.

1 cup finely chopped celery
1/2 cup chopped onion
1/2 cup butter
1/8 teaspoon pepper
1/2 teaspoon salt
1 teaspoon poultry seasoning
8 cups bread cubes (potato bread is good)
1 cup chicken broth

Steps:

  • Place bread cubes in a large bowl and set to the side.
  • Preheat oven to 375.
  • In a saucepan saute celery and onion in butter till soft.
  • Remove from heat and add salt, pepper & poultry seasoning.
  • Add the onion mixture to the bread cubes and combine. Drizzle with broth to lightly moisten then toss lightly.
  • Bake covered for approximately 30 minutes.
  • This can be prepared a day in advance. Let stuffing come to room temp before baking and add additional broth to moisten.

2 cups milk or 2 cups water

4 quarts bread, cubes firmly packed

Steps:

  • Cook celery and onion in butter or margarine over low head, stirring occasionally, until onion is tender but not brown.
  • Meanwhile, blend bread cubes and seasonings.
  • Add celery, onion and butter or margarine; toss lightly to blend.
  • Pour the broth, milk or water gradually over the surface of bread mixture, tossing lightly.
  • Bake in 325 degree oven 45 minutes, until browned on top.
