This quick-and-easy mix from Joanne Rocchetti in New London, Connecticut uses only 1 pound of ground beef, yet it can be used to make all the following recipes: Bacon Salisbury Steak, Microwave Meat Loaf, Spaghetti and Meatballs and Meatball Stew. Try them all!

1 egg
1/2 cup dry bread crumbs
2 tablespoons 2% milk
1 teaspoon salt
1 teaspoon dried thyme
1/4 teaspoon pepper
1 pound lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Divide into four portions; place in freezer containers. Freeze for up to 3 months. Thaw in the refrigerator before using., Versatile Beef Mix may be used to prepare the following recipes: Easy Meatball Stew, Easy Spaghetti with Meatballs, Microwave Meat Loaf and Bacon Salisbury Steak

I have found that cooking your sauce all day like my father taught me is the best way. In addition to that, I make my sauce this way whether I am making linguine, stuffed shells or lasagna. I like to utilize convenience whenever possible so I use pre minced and jarred herbs. You can use what ever your preference is for meat, whether it be ground turkey meatballs or chicken Italian sausage. It will always be a hit with your family and friends! Try serving with your favorite pasta.

1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
2 teaspoons dried basil
½ pound beef neck bones
1 (29 ounce) can tomato sauce
1 (14.5 ounce) can stewed tomatoes
2 (6 ounce) cans tomato paste
3 cups water
1 pound lean ground beef

Steps:

  • In a large pot saute onion, garlic, oregano and basil in 1 tablespoon of olive oil. Add the neck bones and let simmer with the lid on until the onions are transparent. Note: if using ground beef cook with onion mixture.
  • Once onions are clear, add the tomato sauce, tomatoes, tomato paste and water. If using meat in your recipe add at this time. Cover and simmer for several hours.
  • Before serving, remove neck bones and discard.

1 portion Versatile Beef Mix, thawed
2 tablespoons all-purpose flour
2 teaspoons canola oil
1 small potato, peeled and quartered
1 small carrot, cut into 1-inch pieces
1/2 cup beef gravy
1/3 cup water
1/3 cup sliced celery
1/4 cup chopped onion
1 teaspoon Worcestershire sauce
1 garlic clove, minced
1/8 teaspoon paprika
Dash dried thyme

Steps:

  • Shape beef mix into three meatballs; coat with flour. In a large skillet, brown meatballs in oil on all sides. Remove and keep warm. , Add remaining ingredients to the skillet. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Stir in meatballs. Bring to a boil. Reduce heat; cover and simmer 15 minutes longer or until meat is no longer pink.

1 teaspoon pepper
1/2 teaspoon , crushed red pepper flake

Steps:

  • In a large pot, brown the beef with the onions, celery, and garlic until meat is cooked through and vegetables are tender drain. Stir in the remaining ingredients. Bring to a boil reduce heat. Simmer, uncovered, for 1 to 1-1/2 hours, stirring occasionally. Cool. Place about a 2 cup portion of the mix into freezer bags or containers. Label and freezer for up to 3 months.

6 frenched lamb shanks (about 8 pounds); or 6 center-cut veal shanks (about 5 pounds); or 8 three-inch short ribs (about 5 pounds)
Coarse salt and freshly ground pepper
1/4 cup plus 1 tablespoon safflower oil
1 large onion, chopped (2 1/4 cups)
3 carrots, peeled and chopped (1 1/4 cups)
2 stalks celery, chopped (3/4 cup)
6 cloves garlic, minced (2 tablespoons)
2 tablespoons tomato paste
3 tablespoons all-purpose flour
1/4 cup low-sodium soy sauce
1 bottle (750 ml) dry red wine, such as Cabernet Sauvignon
1 cup low-sodium chicken broth
2 dried bay leaves
9 sprigs thyme

Steps:

  • Preheat oven to 350 degrees. Season meat with salt and pepper. Heat an 8-quart Dutch oven or other heavy-bottomed ovenproof pot over high heat. Add 2 tablespoons oil. Working in batches, brown meat on all sides, 7 to 10 minutes a batch, reducing heat if meat is browning too quickly. Transfer meat to a platter. Pour off fat and wipe pot clean.
  • Place pot over medium heat. Add remaining 3 tablespoons oil, onion, carrots, celery, and garlic. Cook, stirring occasionally, until onion is translucent, about 5 minutes. Increase heat to high; stir in tomato paste and cook 30 seconds, then add flour and cook, stirring, 30 seconds more. Add soy sauce and wine; bring to a boil. Add broth and herbs.
  • Return meat and accumulated juices to pot, bone-side up (if applicable). Bring to a boil, then cover and transfer to oven. Cook 1 hour, or 2 hours for lamb shanks. Remove lid; rearrange meat pieces on top of pot to bottom and cook until meat is very tender, about 1 hour more.
  • With tongs or a slotted spoon, transfer meat to platter. Strain liquid through a fine-mesh sieve, pressing on solids; if sauce is too thin, simmer in a saucepan until slightly thickened. Serve meat with sauce spooned over top.

I discovered this burger recipe in 2 steps. First, I was out of eggs and second, I wanted to come up with something different for my husband's supper. I hope you like it. It has a nice flavour. It can be used for meatloaf, meatballs or burger patties. The salsa can be omitted if other sauces are being used. Have fun with the different variations, chopped onion can be added and/or play around with the amount and type of spices according to your taste. My husband loves the recipe.

1/4 cup milk
1/2 cup breadcrumbs
1/2 cup salsa

Steps:

  • Combine all ingredients together in bowl until well blended. Form into patties, meatballs or meatloaf. Every oven is different and each form will have a varying time to cook. I find the most common is 350 degrees for 45 minutes or use the frying pan for patties. Makes 4 patties, 20 meatballs or 1 small loaf.
