A healthy banana oatmeal recipe to make for a delicious and wholesome breakfast.

1/2 cup rolled oats
1/4 tsp salt
1 cup milk of choice
1/4 cup water or additional milk of choice
1 large very overripe banana, (mashed)
optional 1/4 tsp cinnamon
optional crushed walnuts, (mini chocolate chips, shredded coconut, etc.)
sweetener of choice, (if needed)

Steps:

  • Combine all ingredients in a small pot. Bring to a boil over medium heat. Once boiling, stir only occasionally to prevent sticking or boiling over. It will eventually thicken. Sweeten as desired. Add your favorite toppings. I like peanut butter, mini chocolate chips, or the healthy nutella recipe linked earlier in this post. Serve hot, or refrigerate overnight and serve either hot or cold the next day.View Nutrition Facts

½ cup shortening
1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup milk
½ teaspoon ground cinnamon
1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  • Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
  • Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.

I saw a video on how to get really creamy whipped like oats and here is my take on it. Any sweetener or toppings can be subbed here with great results. I like to soak my oats overnight for quick cooking- I soak them in 1/2 cup water with 1 tbs plain yogurt and add 1/2 cup water in the morning when I cook them. They take 5 minutes.

1/2 cup old-fashioned oatmeal
1 cup water (can use milk for even creamier oats)
1 pinch salt
1/2 banana, sliced
1 dash cinnamon (optional)
1 tablespoon raisins
1 tablespoon walnuts
1 tablespoon maple syrup, the real kind
1 tablespoon milk or 1 tablespoon cream

Steps:

  • combine oats and water or milk with banana, salt and cinnamon if using (sometimes i add raisins now to plump them up too).
  • bring to a simmer over medium high heat and reduce to medium.
  • stir vigorously and oats will take on a creamy look and not have as much of a shape individually, banana will mostly get beaten into them.
  • cook until the consistency you like or most liquid is absorbed.
  • top with nuts, syrup and cream, and the other half of the banana sliced if you want.

1/2 Tablespoon cinnamon
1 teaspoon baking soda
½ teaspoon salt
1/2 cup chopped walnuts
3 ripe bananas (mashed)
2 eggs
1/4 cup maple syrup
1 teaspoon vanilla
1/2 cup unsweetened almond milk

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9x13 pan with cooking spray and set aside.
  • In a large bowl, combine oats, cinnamon, baking soda, salt, and walnuts. Toss until well combined.
  • In a separate bowl, mash bananas and stir in eggs, maple syrup, vanilla, and almond milk.
  • Pour wet ingredients into the bowl of dry ingredients and stir to combine until all oats are coated.
  • Pour oat mixture into 9x13" pan. Top with additional walnuts and sprinkle with cinnamon if desired.
  • Bake for 30 minutes and serve warm.

1 banana, mashed
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
1 dash nutmeg
1 cup quick-cooking oats
2 teaspoons brown sugar
1 scoop protein shake mix (probably could do two scoops just add a little extra milk)

Steps:

  • Heat milk and mashed banana to boiling.
  • Reduce to medium heat
  • Add in rest of ingredients except vi-shape and cook 5 mins or until oats are soft.
  • Remove from heat and stir in vi-shape.
  • Enjoy.
