Vietnamese Avocado Shake (Sinh to bo) image

A rich and creamy drink, best suited for dessert. Small portions are recommended.

1 cup ice cubes
1 ripe Hass avocado (skin removed)
1/2 cup milk (plus extra to thin if needed)
1/2 cup condensed milk (or to taste)

Steps:

  • Add the ice cubes, avocado, milk and some of the condensed milk to the blender.
  • Cover and blend on high until the mixture is smooth.
  • Check the consistency. If it's too thick, add more milk to achieve desired consistency.
  • Cover and blend on high again. Check for sweetness and add more condensed milk, if desired.
  • Stir before pouring into small glasses or dessert dishes.
  • Enjoy cold or room temperature. Store covered in the fridge for up to 12 hours (discoloration may occur).

There are numerous Sinh Tos just as there are numerous kinds of fruit. This is from an old newspaper clipping I found in my grandmother's recipe box. She liked to colect international recipes long before it was popular to do so.

1 tablespoon fructose
2 teaspoons water
2 ounces avocados
2 ounces star fruit
2 ounces apples
2 ounces dried bananas
2 ounces papayas
2 ounces jackfruit
1/4 cup dried raisins
2 ounces sapodilla
1/2 teaspoon peanuts
1/2 cup crushed ice cube
1/8 cup coconut milk

Steps:

  • Boil the fructose and water for about 4 min to get fructose syrup.
  • Blend all the ingredients, except for the ice and coconut milk, until smooth, then pass the mixture through a fine-mesh sieve.
  • To serve, pour the drink into chilled tall glasses, add the ice cubes and top with coconut milk.
  • This beverage is also usually served with a shot glass of iced water to remove any aftertaste.
