A sweet citrus marinade infuses fresh strawberries with fantastic flavor that tastes great with creamy ice cream.

1 quart (4 cups) fresh strawberries
1/2 cup powdered sugar
1/4 cup orange-flavored liqueur or orange juice
1 quart strawberry or vanilla ice cream

Steps:

  • Cut strawberries in half; place in large bowl. Sprinkle with powdered sugar and liqueur; stir gently. Cover and refrigerate about 2 hours.
  • Spoon strawberries over ice cream.

Wonderful dessert that is light and refreshing. The strawberries marinate in the wine for hours producing a strawberry flavor wine at the bottom of the bowl that everyone will be fighting for. Adjust the amount of sugar depending on the sweetness of the berries you have. Great way to dress up not-too-sweet strawberries! Champagne may be substituted for the wine.

3 cups fresh strawberries, hulled and quartered lengthwise
¾ cup white sugar, or to taste
1 ½ cups white wine

Steps:

  • Place strawberries into a medium bowl. Dust with sugar, then pour the wine over them. Cover and refrigerate for 2 to 3 hours.
  • Let the strawberries stand at room temperature for 15 to 20 minutes before serving. Spoon berries into 6 dessert cups, and distribute the remaining wine over the berries.

3/4 cup sugar
1/2 cup plus 1 teaspoon butter
1 3/4 cups plus 2 tablespoons flour
1/4 cup cocoa powder
2 teaspoons baking powder
Pinch of salt
3/4 cup whole chocolate milk
8 large scoops of Vanilla Bean Ice Cream
Shaker of powdered sugar
2 pints fresh strawberries, washed and sliced

Steps:

  • In a mixing bowl, combine the strawberries and 1/2 cup sugar. Using a fork, lightly mash the berries. Cover and refrigerate for 1 hour. Preheat the oven to 375 degrees F. Grease a baking sheet with 1 teaspoon of the butter. In a mixing bowl, sift 1 3/4 cups of the flour, cocoa, salt and baking powder together. Add the remaining 1/4 cup sugar and mix well. Add the remaining 1/2 cup butter and work it into the dry ingredients, using your hands, until the mixture resembles coarse crumbs. Fold in the chocolate milk. The dough will be sticky. Dust your work surface with 1 tablespoon of the flour. Turn the dough onto the floured surface. Gently fold each side towards the center. Pick up the dough and dust the work surface with the remaining tablespoon flour. Return the dough to the floured surface and fold each side towards the center again. Turn the dough over and lightly press it out to 1-inch thickness. Cut the biscuits using a 2 1/4-inch round cookie cutter. Place them on the baking sheet and bake until golden, about 30 minutes. Remove from the oven and cool completely. To assemble, cut the biscuits in half. Place a scoop of the ice cream in the center of each biscuit. Place the shortcakes in the center of each plate. Spoon the strawberries over the shortcakes. Garnish with powdered sugar and serve immediately.

1 tablespoon freshly ground black pepper
1/4 cup sugar
2 ounces milk chocolate
1 pint of your favorite chocolate and caramel ice cream
1 bunch fresh mint leaves

Steps:

  • Place strawberries, vinegar, pepper and sugar in a bowl. Stir mixture with back of fork then let stand for 1 hour. Shave the 2 ounces of milk chocolate bar with a vegetable peeler into a small bowl. To plate, place ice cream in the middle of a plate, then top with strawberries, mint, and chocolate.

1 quart strawberries - cleaned, hulled and sliced
1 ½ cups red wine
2 tablespoons confectioners' sugar
¼ cup water
2 oranges, sliced into rounds
¼ cup Cointreau
6 large scoops vanilla ice cream

Steps:

  • In a medium bowl, stir together the wine, water, and Cointreau. Add about 1/4 of the strawberries and the orange slices. Marinate for 2 hours in the refrigerator.
  • Place the remaining strawberries in a separate bowl. Sprinkle the confectioners' sugar over them. Cover and refrigerate as well.
  • To serve, mix both bowls of berries and sauce together. Scoop ice cream into serving bowls, and spoon berries over the ice cream. Drizzle with some of the marinade.
