1 tablespoon oil, or as needed
3 medium onions, diced
2 medium green bell peppers, diced
3 medium carrots, diced
3 medium tomatoes, diced
2 small Thai green chiles, chopped
¼ cup water
1 cube vegetable bouillon
1 teaspoon curry powder, or to taste
1 teaspoon chili powder
salt and ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat; stir in onions and bell peppers. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Add carrots, tomatoes, green chiles, water, bouillon cube, curry powder, chili powder, salt, and pepper. Cook until mixture is well combined and thickened, 15 to 20 minutes.

4 tablespoons oil
1 large onion, finely chopped
4 -5 garlic cloves, crushed
2 tablespoons gingerroot, peeled & grated
3 small chilies, seeded & chopped (or not if you don't want it hot)
2 tablespoons curry powder
1 (14 ounce) can whole canned tomatoes, coarsely chopped
1 green pepper, seeded & chopped
2 carrots, coarsely grated
1 (8 ounce) can pork and beans in tomato sauce
1/2 head cabbage, shredded
salt & pepper, to taste

Steps:

  • Heat oil in a large saucepan & sauté onions until soft & transparent.
  • Add garlic, ginger & chilli, cook for a minute or two before adding curry powder, then cook for another minute to develop flavour.
  • Add vegetables, bring to the boil then turn down the heat & simmer gently for about 15-20 minutes or until vegetables are cooked, adding water if necessary. Season to taste.

3/4 lb all-purpose flour
1 (23 ounce) can clam juice
1 (25 ounce) can clams, chopped
1 1/2 cups diced celery
1 1/2 cups diced onions
1 1/2 cups diced green peppers
1 2/3 quarts hot milk
1 2/3 ounces salt
1/4 teaspoon white pepper
1/4 teaspoon ground thyme
1 1/2 cups diced potatoes (1/2 inch cubes)

Steps:

  • With melted margarine, combine celery and onions, cook for 5 minutes or until transparent.
  • Add flour to make roux and mix until smooth.
  • Let it cook for a few minutes, then add hot clams and juice and half of the hot milk. Mix until all the flour lumps are smooth.
  • Continue cooking for about 10 minutes.
  • Add green peppers, potatoes and seasonings.
  • Combine, cook until potatoes and peppers are done, then add the remainder of the milk.

Like chutney in India or salsa in Mexico, no one in South Africa prepares chakalaka, a spicy vegetable relish, the same way. And if you ask anyone who makes the best version, they will likely name their own mother or grandmother. Here is our version, full of vegetables and spices. It's akin to giardiniera (the Italian mix of pickled vegetables that includes cauliflower and carrots) and also to English piccalilli relish, whose roots are in South Asian pickled vegetables, which is to say that cultures all across the world have some version of preserved vegetables that enhance many meals. Serve the chakalaka with bread, rice, grilled meats or fish, stews...anything. It's particularly delicious with grilled sausages or tucked into a grilled cheese sandwich.

2 tablespoons canola oil
1 small red or yellow onion, finely diced
2 garlic cloves, minced
1 jalapeño, stemmed and minced
1 tablespoon minced ginger
2 teaspoons ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon kosher salt, plus more as needed
1 small red bell pepper, stemmed, seeded, and finely diced
1 small yellow bell pepper, stemmed, seeded, and finely diced
3 large carrots, coarsely grated
1/2 small green cabbage, finely chopped (about 3 cups)
One 28-ounce can crushed tomatoes
2 tablespoons white vinegar or freshly squeezed lemon juice

Steps:

  • Warm the oil in a large Dutch oven or other heavy pot set over medium heat. Stir in the onion, garlic, jalapeño, and ginger. Cook, stirring occasionally, until the onion begins to soften, about 5 minutes. Add the turmeric, cumin, coriander, and salt. Cook, stirring, just until the spices are wonderfully fragrant, about 30 seconds. Stir in the bell peppers, carrots, cabbage, and tomatoes. reduce the heat to medium-low and cook, uncovered, giving the mixture a stir every so often, until all the vegetables are tender and most of the liquid has evaporated, about 30 minutes. Turn off the heat, stir in the vinegar, and season the chakalaka to taste with salt. Let the chakalaka cool to room temperature and season it to taste one final time. Serve immediately or store in an airtight container in the refrigerator for up to a week, then serve it either cold or at room temperature.

My daughter and I had the most magical lunch in Cinderella's Castle at Walt Disney World with my daughter's aunt and cousin. The dessert that was served was simply amazing. I'm sure the atmosphere had something to do with it, but it was delicious. I found the recipe on a couple different Disney sites and after adding and changing a few things, this is my take on it. Even my husband, who is a pure chocoholic, loves it. Hope you try it!

6 tablespoons butter, melted
1 egg
1 egg yolk
1/3 cup whole milk
3/4 teaspoon vanilla
3/4 cup granulated sugar
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
2 cups fresh blueberries
6 ounces cream cheese, whipped
1 teaspoon lemon rind
1 -2 teaspoon lemon juice
lemon sorbet
3 tablespoons butter
1/2 cup flour
3 1/2 tablespoons sugar
1/4 teaspoon cinnamon (I use a bit more)

Steps:

  • Preheat oven to 375. Grease muffin tins or use muffin cups.
  • In medium bowl add melted butter. Whisk in milk, eggs and vanilla.
  • In another bowl, mix all dry ingredients together, then add milk mixture and stir until combined. Do not overmix. Gently fold in blueberries. Divide batter among muffin pans.
  • Fold lemon rind and lemon juice to the whipped cream cheese. Insert 1 teaspoons of cream cheese mixture into the center of each muffin.
  • For topping, rub together all ingredients until crumbly. Sprinkle over each muffin.
  • Bake for 18-20 minutes, or until toothpick comes out clean. Cool in muffin pan for 10-15 minutes then remove from pan. Serve warm with lemon sorbet.

My husband worked at WDW for 30 years and during the days when the cafeteria was supplied by WDW this was a favorite by the employees. It was printed by the Orlando Sentinel years ago and I copied it. It makes a lot, so reduce it for your family.

1 1/2 cups onions, diced
1 1/4 cups celery, diced
1 3/4 cups flour
1/2 gallon hot milk
1 quart clam
1 quart clam juice
1 1/2 cups green peppers, diced
1/4 teaspoon white pepper
1/4 teaspoon thyme
2 cups potatoes, steamed for 12 minutes,diced

Steps:

  • Melt margarine in dutch oven, add onions, celery and saute until tender.
  • Add flour to make a roux and cook over low heat 10 minutes, stirring constantly to prevent scorching.
  • Gradually add hot milk, stirring constantly to maintain smoothness.
  • Add clam juice and chopped clams and cook 20 minutes more.
  • Add green pepper, thyme and pepper.
  • When green peppers are tender, add potatoes cut into small chunks and cook 10 minutes more.
