These nuts would probably be a hit at your next football party accompanied by some ice-cold beer. The fragrance of the the rosemary is wonderful. From the Union Square Cafe Cookbook, and voted "best bar nuts" award in New York by The New York Press.

Yield 5 Cups (approximately)

Number Of Ingredients 6

1 lb unsalted assorted nuts (peanuts, cashews, brazil nuts, hazelnuts, walnuts, pecans and whole almonds)
2 tablespoons fresh rosemary, coarsely chopped
1 teaspoon cayenne
2 teaspoons dark brown sugar
2 teaspoons kosher salt
1 tablespoon butter, melted

Steps:

  • Preheat the oven to 350º F.
  • Toss the nuts in a large bowl to combine.
  • Spread them out on a cookie sheet, and toast in the oven until they become light golden brown, about 10 minutes.
  • Combine the rosemary, cayenne, brown sugar, salt, and melted butter.
  • While the nuts are still warm, add the rosemary/butter mixture.
  • Thoroughly toss with the warm toasted nuts.

Number Of Ingredients 6

2 1/4 cups (18-ounces) assorted unsalted nuts, including peeled peanuts, cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole unpeeled almonds
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne pepper
2 teaspoons dark brown sugar
2 teaspoons Maldon or other sea salt
1 tablespoon unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the nuts in a large bowl to combine and spread them out on a baking sheet. Toast in the oven until light golden brown, about 10 minutes.
  • In a large bowl, combine the rosemary, cayenne, sugar, salt and melted butter.
  • Thoroughly toss the toasted nuts in the spiced butter and serve warm. And once you eat these, you will never want to stop.

Number Of Ingredients 9

5 cups mixed nuts, such as walnuts, cashews, almonds, pecans, and hazelnuts
t tablespoon extra-virgin olive oil
2 small shallots, thinly sliced crosswise into rings to yield about 1/4 cup
3 garlic cloves, thinly sliced lengthwise
2 tablespoons unsalted butter
1/4 cup coarsely chopped fresh rosemary
1/4 teaspoon cayenne pepper
1 tablespoon firmly packed dark-brown sugar
1 tablespoon coarse salt

Steps:

  • Preheat oven to 350 degrees. Place the nuts in a single layer on 2 rimmed baking sheets. Toast until the nuts are golden and fragrant, 8 to 12 minutes, rotating the pans halfway through cooking. Transfer the nuts to a large bowl, and set aside.
  • Heat the olive oil in a small skillet over medium heat. Add the shallots and garlic; fry until golden, 3 to 5 minutes. Transfer the shallots and garlic to paper towels. Set aside.
  • Melt the butter and pour it over the nuts. Add the rosemary, cayenne, brown sugar, and salt, and stir well to combine. Toss in the crispy garlic and shallots. Serve warm. The nuts may be reheated in a 300-degree oven for 10 minutes.

1 cup pecan halves
1 cup unblanched almonds
1 cup unsalted dry roasted peanuts
3 tablespoons butter, melted
4-1/2 teaspoons Worcestershire sauce
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine the pecans, almonds and peanuts. Combine butter and Worcestershire sauce; pour over nuts and toss to coat., Spread in a single layer in an ungreased 15x10x1-in. baking pan. Bake at 300° until browned, about 30 minutes, stirring occasionally., Transfer warm nuts to a bowl. Combine the chili powder, garlic salt and cayenne; sprinkle over nuts and stir to coat. Serve warm, or allow to cool before storing in an airtight container.

I work at a nature camp, as a counselor for the 4 and 5 year olds, or "Nature Nuts". We whipped these bars up one rainy day using whatever we had in the fridge, and they turned out surprisingly well. The chocolate-covered raisins really seem to add something.

1 (10.5 ounce) package marshmallows
3 tablespoons butter
2 cups chocolate covered raisins
5 ¾ ounces toasted oat cereal

Steps:

  • Melt marshmallows, butter, and raisins together over medium heat, stirring until smooth.
  • Mix in cereal until coated. Scrape the mixture into a greased pan and let chill. (We popped them into the freezer for a few minutes to hurry it up, because the kids just couldn't wait.)
