HONEY-GLAZED PEAR UPSIDE-DOWN CAKE
This delightful cake emerges from the oven as golden as a pear tarte Tatin, but with a moist, cake-y layer that sops up all of the luscious pear drippings. Let the oohs and aahs begin.

Steps:
- Preheat oven to 350 degrees. In a 9-inch ovenproof skillet (not nonstick), simmer honey until it begins to reduce, caramelize and darken in color, 6 to 10 minutes. Do not let honey burn; if it starts to smell burned, turn off heat.
- Arrange pears, close together and cut-side up, in a circular pattern in skillet, stem ends pointing toward center. Simmer over medium heat, turning them from one cut side to the other, until they begin to turn golden, about 10 minutes.
- Flip pears over to cut-side down and scatter with thyme sprigs if using. Transfer skillet to oven and roast, uncovered, until very tender, about 25 minutes.
- Meanwhile, in a large bowl, whisk together sugar and lemon zest. Whisk in eggs and vanilla. Fold in flour and salt; stir in 1/2 cup butter.
- When pears are soft, remove skillet from oven, discard thyme sprigs and brush edges of pears with remaining 1 tablespoon melted butter. Pour batter on roasted pears and scatter almonds over batter. Bake until a toothpick inserted in center comes out clean, 25 to 30 minutes. Let cake cool for 30 minutes in pan. Run an offset spatula along edges of pan to loosen cake; carefully invert cake onto a serving platter. Serve warm or cooled.

- Preheat oven to 325°. Securely wrap a double thickness of heavy-duty foil (about 18 in. square) around and under a greased 9-in. springform pan. In a bowl, combine crushed gingersnaps and sugar; stir in 4 tablespoons butter, adding more as necessary. Press onto bottom and 1-1/2 in. up sides of prepared pan., Beat cream cheese until fluffy, gradually adding 2/3 cup honey, lemon juice and minced ginger root. Add eggs; beat on low speed just until blended. Fold in 1 cup chopped pears and raisins. Pour into crust. Place springform pan in a larger baking pan; add 1 in. hot water to larger pan. Bake until center is just set and top appears dull, 1-1/2 to 1-3/4 hours. Remove from oven; remove springform from water bath. , Cool cheesecake on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. Remove rim from pan., In a large skillet, melt butter over medium heat. Add remaining honey and pears; cook and stir until pears are tender. Stir in pecans. Top cake with pear-pecan mixture.

FRESH PEAR CAKE
This is the recipe that I like to use with the fresh pears that I get from my trees in late August. It's also lower in fat and cholesterol than most regular cakes.

- Combine the pears and the sugar and let stand for one hour.
- Preheat oven to 325 degrees F (165 degrees C). Spray a 10 inch bundt pan with non-stick cooking spray.
- Slightly beat the egg whites and combine them with the oil, chopped pecans and pear mixture.
- Stir the flour, salt, baking soda, nutmeg, cinnamon and cloves. Stir in the pear mixture. Pour batter into the prepared bundt pan.
- Bake at 325 degrees F (165 degrees C) for 1 hour and 10 minutes. Remove from oven ant let cool on a wire rack for 10 minutes before removing form pan.

- Preheat oven to 325 degrees. Butter a 10-inch springform pan. Dust with flour; tap out excess. Whisk together the flour, baking powder and soda, salt, and cinnamon in a bowl; set aside. Mix eggs and sugars on high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 3 minutes.

- Preheat oven to 325F with rack on lower middle position. Generously grease a bundt pan, followed by a sprinkling of flour on bottom/sides of pan; tap out excess flour from pan and set aside.
- In a medium bowl, beat egg whites until bubbly. Stir in the oil and honey until combined. Add pears, folding just enough to combine.
- In a separate bowl, stir together the flour, salt, baking soda, cinnamon, ginger, nutmeg, and cloves. Fold flour mixture gently together with the egg mixture, just until incorporated (do not over-mix) Batter will be thick. Use rubber spatula to transfer batter into greased/floured bundt pan.
- Bake 60-70 minutes or just until a toothpick inserted in center of cake comes out with a few tender crumbs attached. Let cool completely in pan on wire rack. Run thin knife around edges to loosen, if needed. Turn pan upside down on serving platter and give it a few firm pats to remove cake. Serve as is or frost as desired.
WARM HONEYED PEAR CAKE

- Preheat oven to 350 degrees. Butter a 10-inch springfrom pan using about half a tablespoon of the butter.
- Toss the pears with the lemon juice and set aside.
- Sift flour with three tablespoons of the sugar, the baking powder and salt into a bowl. Cut in five tablespoons of the butter until the mixture resembles coarse meal. This step may be done in a food processor, first blending the dry ingredients, then pulsing in the butter.
- Beat the egg and milk together and lightly stir into the butter-and-flour mixture until a soft, sticky dough forms.
- Spread the dough in the baking pan and sprinkle with the remaining tablespoon of sugar. Arrange the pears on top and drizzle with about a third of a cup of the honey. Dot with remaining butter.
- Bake 50 minutes to an hour, until nicely browned.
- Remove from the oven and serve while still warm, first removing the sides of the pan and drizzling the top of the cake with the remaining honey.

- Core pears from bottom, leaving stems intact. Peel pears; cut 1/4 in. from the bottom of each to level if necessary., In a large saucepan, combine the water, sugar, honey, lemon halves, cinnamon and cloves. Split vanilla bean and scrape seeds; add bean and seeds to sugar mixture. Bring to a boil.
