ITALIAN SAUSAGE LASAGNA



Italian Sausage Lasagna image

It's made with spicy Italian sausage, cooked with onions and peppers, and a nice mixture of cheeses.

2 lb ground spicy Italian Sausage
1 medium yellow onion (sliced)
1 large green pepper (sliced)
12 oz oven-ready lasagna noodles
1 1/2 lb marinara sauce
15 oz ricotta cheese
8 oz shredded pepper jack cheese
1 egg
2 garlic cloves
2 Tbsp minced Italian parsley
Salt
Dash of cayenne pepper
8 oz shredded Italian cheese mix

Steps:

  • Preheat oven to 425 and lightly grease a 9x13 casserole pan.
  • Heat up some vegetable oil in a large cooking pan. Add onions and peppers to the pan and cook until starts to soften.
  • Add ground sausage, cover and cook, stirring occasionally, until sausage is done. Strain the sausage juice.
  • In a mixing bowl, combine ricotta cheese, shredded pepper jack cheese, egg, parsley, salt, cayenne and pressed garlic. Mix very well.
  • Spread a thin layer of marinara sauce over the bottom of the casserole pan. Layer lasagna noodles side by side. (You may have to break one to fit along the side.)
  • Spread cooked (and strained) sausage with onion and pepper over the noodles. Spread a little more sauce over the top.
  • Layer more lasagna noodles over the top, side by side. Spread ricotta mixture over the top, evenly. Spread another thin layer of sauce over ricotta mixture. Layer more lasagna noodles over the top and spread another layer of sauce over it.
  • Spread Italian cheese mix over the top, evenly.
  • Spray one side of the aluminum foil with cooking spray, the side that will be touching the cheese. This will prevent cheese from sticking to the foil.
  • Cover the casserole dish with foil and bake for 45 minutes. Take off the foil and bake for another 15 minutes.

The secret to the most delicious classic lasagna is to start with really, really good Homemade Marinara Sauce that's been slow simmered until it's rich and thick, and filling your whole house with the most intoxicating aroma. Stir in plenty of Italian sausage and then layer it up with sheets of pasta and lots and lots of cheese.

1 tbsp extra virgin olive oil
1 lb ground Italian sausage, spicy or mild or a combination of both
5 1/2 cups perfect homemade marinara sauce
2 cups whole milk ricotta cheese
2 1/2 cups grated parmesan cheese, divided
1 large egg
1 tbsp Italian seasoning
1/2 tsp salt
1/2 tsp ground black pepper
12 oven ready lasagna noodles (*see note)
16 oz (4 cups) shredded mozzarella cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Heat olive oil in a large skillet set over medium-high heat until shimmering. Add the sausage and cook until no pink remains, using the spoon to break the sausage up into small pieces as it cooks. Dump the sausage into the marinara sauce, stir, and set aside.
  • Add the ricotta, 1 & 1/2 cups grated parmesan, egg, Italian seasoning, salt and pepper to a bowl and stir to combine.
  • Ladle about 1/4 cup of the marinara sauce into a 9 x 13 rectangular baking dish and spread it out so it covers the entire bottom of the dish. Lay 4 lasagna noodles over the sauce, across the bottom of the pan. They will overlap a bit. Spread 1/3 of the ricotta mixture over the noodles into an even layer. Ladle 1 & 3/4 cups of marinara sauce and sausage over the ricotta mixture, spreading it out into an even layer. Top the sauce with 1 cup grated mozzarella.
  • Repeat this layering process two more times: 4 noodles, 1/3 of the ricotta mixture, 1 & 3/4 cup marinara sauce, and 1 cup mozzarella cheese. With each layer, gently press the noodles down with your hands or the back of a spatula to compact each layer into the pan.
  • Sprinkle the remaining 1 cup of grated parmesan over the final layer of mozzarella cheese.
  • Spray a sheet of aluminum foil with non-stick baking spray and loosely cover the pan of lasagna. Set the pan on a baking sheet (to catch any drips) and bake for 35 minutes (*see note). Remove the foil and bake for another 20-30 minutes, until the cheese on the top is completely melted and just beginning to brown and the lasagna is bubbly around the edges.
  • Remove the lasagna from the oven and let rest for 15 minutes before serving. Letting it rest is important - it will be "soupy" and difficult to serve straight from the oven.

3/4 pound 85-percent lean ground beef
3/4 pound sweet Italian sausage, removed from casing
1 medium onion, chopped (1 1/2 cups)
2 carrots, peeled and chopped (3/4 cup)
2 celery stalks, chopped (3/4 cup)
Kosher salt
6 garlic cloves, minced (2 tablespoons)
2 teaspoons dried oregano
1/2 teaspoon red-pepper flakes
3 tablespoons tomato paste
2 cans (28 ounces each) whole peeled tomatoes in juice
24 ounces whole-milk ricotta (3 cups)
1 cup whole milk
3 large eggs
4 ounces Parmigiano-Reggiano, finely grated (1 1/4 cups)
1 pound low-moisture mozzarella, shredded (4 cups)
3/4 cup chopped flat-leaf parsley
Kosher salt and freshly ground pepper
18 dry lasagna noodles

Steps:

  • Preheat oven to 375 degrees.
  • Meat Sauce: Heat oil in a large saucepan over medium-high. Add beef, sausage, onion, carrots, celery, and 1 teaspoon salt. Cook, stirring occasionally and breaking up meat into bite-size pieces, until vegetables soften and meat has browned, about 10 minutes. Add garlic, oregano, and red-pepper flakes; cook until fragrant, 1 minute. Add tomato paste; cook 2 minutes more. Puree tomatoes in a blender or food processor; add to pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until reduced and thickened slightly but still very loose, about 15 minutes. Remove from heat.
  • Cheese Mixture: In a large bowl, whisk together ricotta, milk, eggs, 1 cup Parmigiano-Reggiano, 2 1/2 cups mozzarella, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Assembly: Spread 2 cups meat sauce evenly in a 9-by-13-inch baking dish, preferably ceramic or enameled cast iron. Arrange 3 lasagna noodles over sauce (space noodles evenly; they will expand as the lasagna cooks). Spread 2 cups cheese mixture over noodles; top with 3 more noodles. Repeat layering of meat and cheese mixtures between noodles twice more. Spread 2 cups meat sauce evenly over top layer of noodles. Sprinkle evenly with remaining 1 1/2 cups mozzarella and 1/4 cup Parmigiano-Reggiano. Loosely cover with parchment-lined foil and transfer to a rimmed baking sheet.
  • Bake until noodles are tender but still al dente (easily pierced with the tip of a knife), 40 to 45 minutes. Uncover; continue baking until bubbly and puffed slightly along edges and golden brown in places on top, 20 to 25 minutes more. (There may appear to be a lot of liquid in the dish. It will be absorbed as the lasagna cools.) Transfer dish to a wire rack and let cool slightly and set, about 20 minutes; cut into squares to serve.

1 pound bulk Italian sausage
½ cup warm water
1 cup sliced black olives
1 pinch basil
2 teaspoons garlic powder
1 tablespoon dried oregano
1 ½ teaspoons dried sage
2 teaspoons ground black pepper
2 tablespoons minced garlic
1 tablespoon dried onion flakes
2 (14 ounce) jars marinara sauce
1 (16 ounce) package lasagna noodles
8 ounces ricotta cheese
1 pound mozzarella cheese, shredded

Steps:

  • Brown the ground beef and Italian sausage in a large skillet over medium-high heat. Drain excess grease. Stir in the water and black olives, and season with basil, garlic powder, oregano, sage, pepper, minced garlic, and onion flakes. Simmer for about 15 minutes, stirring frequently. Stir in the marinara sauce, and remove from the heat.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place a layer of the meat and sauce in the bottom of a 9x13 inch baking dish. Cover with a layer of dry noodles. Spread a thin layer of ricotta cheese over the noodles, and sprinkle with a little mozzarella cheese. Cover with another layer of sauce, and repeat layering ending with the meat and sauce on top. Reserve about 1/2 cup of mozzarella cheese for later.
  • Bake for 45 minutes in the preheated oven, but check after 30 minutes depending on how thick the lasagna is. Lasagna is cooked when you can easily stick a knife into it. Sprinkle the reserved cheese over the top, and return to the oven for about 10 minutes for a nice melted cheese topping.

3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Place the sausage in a skillet over medium heat and cook until browned and crumbly, about 10 minutes. Drain the sausage and set aside.
  • To make bechamel sauce, melt the butter in a saucepan over medium heat and whisk in the flour. Allow the flour and butter to cook until light and foamy, about 2 minutes, whisking constantly; whisk in milk, a little at a time. Whisk in the salt and nutmeg and bring the sauce to a bare simmer, whisking constantly until thickened, about 10 minutes. Remove sauce from the heat and set aside.
  • In a bowl, beat the egg and stir in the ricotta cheese and parsley until thoroughly combined.
  • To assemble lasagna, pour about 1 1/2 cup of marinara sauce into the bottom of the prepared baking dish and top the sauce with 4 lasagna noodles, overlapping if necessary. On the noodles, layer 1/3 of the ricotta mixture, followed by 1/3 of the cooked sausage, 1/3 cup of mushrooms, 1/4 of the bechamel sauce, 1 cup of the mozzarella cheese, 1/8 cup of the Parmesan cheese and 1 more cup of marinara sauce. Repeat the layers twice more, ending with a final layer of noodles topped with a layer of marinara sauce, bechamel sauce, the remaining mozzarella cheese, and remaining Parmesan cheese. Cover the dish with foil.
  • Bake in the preheated oven until bubbly and the noodles are tender, about 1 hour. Remove foil and bake until the top cheese layer is browned, about 5 more minutes. Allow the lasagna to stand for 10 minutes before cutting.
