WEIGHT WATCHERS JALAPENO CHICKEN

Steps:
- In a blender, add honey, lime juice, soy sauce, cilantro, jalapeno pepper, salt, pepper, and garlic. Process until blended and smooth.
- Pour contents of the blender into a ziploc bag. Add chicken to the bag. Seal, place in the refrigerator and let marinate for a minimum of hour or up to 8 hours.
- Preheat grill
- Remove the chicken from ziploc and set aside the bag with marinade for later.
- Coat grill rack with Pam cooking spray. Place the chicken on the grill rack. Cover and grill approx 12 minutes - baste with marinade every once in a while, flip chicken and grill an additional 12 minutes or until done.

WW GRILLED JALAPENO CHICKEN
This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. Steps:
- Place first 8 ingredients in a blender; process until smooth (or chopped them fine).
- Combine lime juice mixture and chicken in a large, heavy-duty zip-lock plastic bag.
- Seal bag, and marinate chicken in refrigerator 1 to 8 hours. (I have done over night).
- Prepare grill.
- Remove chicken from bag, reserving marinade.
- Place chicken on grill rack coated with cooking spray; cover and grill 12 minutes on each side or until done, basting occasionally with reserved marinade.

- Heat oven to 375°F In a small bowl, mix all ingredients except dough until well combined; set aside.
- Unroll dough; separate into 2 long rectangles. Place 1 rectangle on long cutting board; press perforations to seal. Spread half of cream cheese mixture on dough rectangle to within 1/2 inch of edges.
- Starting with one long side, roll up rectangle; press seam to seal. Cut roll into 16 slices; place slices, cut side down, on ungreased cookie sheet. Repeat with remaining dough rectangle.
- Bake at 375°F for 14 to 16 minutes (or until light golden brown). Immediately remove from cookie sheet. Serve warm.

WW JALAPENO CHICKEN
This is out of a WW Cookbook called "Quick Cooking for Busy People" It has only 2 WW Points. DH gave it an excellent rating. Hope you enjoy! For a quick meal serve with grilled slices of veggies (zucchini, yellow squash, onion or peppers). For additional flavor, brush vegetables with remaining marinade before placing them on the grill. Cooking time does not include marinating time.

- Combine first 4 ingredients in a large heavy-duty, zip-top plastic bag.
- Add chicken; seal bag, and shake until chicken is coated well.
- Marinate in refrigerator 8 hours or overnight, turning bag occasionally.
- Remove chicken from marinade, discarding marinade.
- Coat grill rack with cooking spray, and place on grill over medium-hot coals (350-400 degrees).
- Place chicken on rack; grill, covered, 5 minutes on each side or until done.
