4 medium, skinless, boneless chicken breast halves (1.5 lbs)
2 limes
1 TBSP olive oil
1 medium pineapple, peeled and cut into 1/2 inch slices
1/4 cup loosely packed fresh mint leaves, chopped
Salt and pepper

Steps:

  • With meat mallet, pound chicken to an even 1/2 inch thickness. From 1 lime, grate 1 tsp peel and squeeze 2 TBSP juice. Cut remaining lime into 4 wedges: set aside. In small bowl, combine oil, lime peel, and juice. Lightly brush pineapple on both sides with lime mixture. Stir mint into remaining lime mixture and pat onto both sides of chicken. Sprinkle with salt and pepper. Grill chicken and pineapple 7-10 minutes on each side or until chicken is browned on both sides and cooked throughout, turning over once. Serve chicken with pineapple and lime wedges. Good with rice

2 limes
1 tablespoon olive oil
1 medium pineapple, peeled and cut into 1/2-inch thick slices
1/4 cup loosely packed fresh mint leaves, chopped
salt and pepper

Steps:

  • Prepare grill for direct grilling on medium, or preheat large ridged grill pan on medium heat.
  • Meanwhile, with meat mallet, pound chicken to an even 1/2-inch thickness.
  • From 1 lime, grate 1 teaspoon peel and squeeze 2 tablespoons juice. Cut remaining lime into 4 wedges; set aside. In a small bowl, combine oil, lime peel and juice. Lightly brush pineapple on both sides with lime mixture; set aside remaining lime mixture in bowl.
  • Place pineapple slices on hot grill rack and cook 10 minutes or until browned an both sides, turning over once.
  • Stir mint into remaining lime mixture and pat onto both sides of chicken. Sprinkle chicken with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper to season both sides. Place chicken on hot grill rack and cook 5 minutes or until chicken is browned on both sides and no longer prink throughout, turning over once. Serve chicken with pineapple and lime wedges.

1/4 tsp table salt
1/8 tsp cayenne pepper
3 oz buttermilk
3/4 cup corn flakes crumbs
1 pound boneless, skinless chicken breast(s), four 4 oz pieces

Steps:

  • Preheat oven to 365ºF. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside. Combine flour, salt and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes crumbs in 2 separate shallow bowls. Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then corn flakes crumbs. Place coated chicken breasts in prepared baking dish. Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking).

1/4 cup low sodium soy sauce
3 tablespoons lime juice, fresh
2 teaspoons lime zest, finely grated
2 tablespoons gingerroot, finely minced
2 garlic cloves, minced
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon crushed red pepper flakes
1/4 cup cilantro, chopped and divided
1 lb boneless skinless chicken thighs
2 tablespoons scallions, finely minced

Steps:

  • In small glass bowl, combine soy sauce, lime juice, lime zest, ginger, garlic, honey, oil, crushed peppers and 2 tablespoons of cilantro. Remove and reserve 2 tablespoons marinade to use for basting when cooking chicken.
  • Place chicken in plastic zipper bag and add marinade.
  • Squeeze the air from the bag and close it. Place bag of chicken in the refrigerator to marinate for 2-4 hours.
  • Grill chicken over medium high heat for 6-8minutes. Flip and brush with reserved marinade. Grill until chicken is cooked through, 6-8 minutes more.
  • To serve, place chicken on platter and sprinkle with scallions and remaining cilantro.

1/2 of a medium sweet red pepper, finely chopped
2 tablespoons fresh cilantro or 2 tablespoons parsley, chopped

1 fresh jalapeno pepper, seeded and finely chopped

Steps:

  • In a small bowl combine 1/2 tsp of the cardamom, the salt, and black pepper. Rub both sides of chicken with oil; sprinkle evenly with spice mixture.
  • Grill chicken on the rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until chicken is no longer pink (170°F), turning once.

I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. Steps:

  • Place first 8 ingredients in a blender; process until smooth (or chopped them fine).
