  • Melt butter in 8-inch nonstick skillet until sizzling; carefully break eggs into skillet, leaving yolks intact.
  • Cook over low heat until egg whites are completely set. Spoon melted butter over egg yolks; continue cooking until yolks begin to thicken but are not hard. Sprinkle with salt and pepper, if desired.

1/2 cup half-and-half or whole milk
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 shallots, sliced
2 large green bell peppers, seeded and cut into 1/2-inch strips
1 1/2 cups cherry tomatoes, halved
1/4 pound thinly sliced ham, cut into 1-inch pieces
4 slices sourdough bread, torn into pieces (about 2 cups)
2 tablespoons chopped fresh parsley, plus more for topping
8 large eggs

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Whisk the half-and-half, cayenne, 1/2 teaspoon salt, and black pepper to taste in a small bowl.
  • Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the shallots and cook until just softened, 1 to 2 minutes. Add the bell peppers; cook until the peppers are soft and the shallots are golden, 5 to 6 more minutes. Add the tomatoes, ham, bread, parsley and 1/4 cup water and cook until most of the liquid is absorbed, about 3 minutes. Season with salt and black pepper. Remove from the heat.
  • Make 8 evenly spaced indentations in the bread mixture with the bottom of a ladle or small measuring cup. Crack an egg into each indentation. Slowly pour the half-and-half mixture over the eggs. Bake, rotating the skillet a few times, until the whites are set, about 15 minutes. Top with parsley.

4 large free-range eggs
1/16 teaspoon sea salt
freshly ground black pepper, to taste

Steps:

  • Get your frying pan on a medium to low heat and add enough olive oil to lightly coat the bottom of a large nonstick pan (about 1 tablespoon).
  • Crack the eggs into the pan. As the oil gets hotter you'll see it start to change the color of the eggs. If the oil starts to spit it's because it's too hot, so turn the heat right down. Cook until the tops of the whites are set but the yolk is still runny.
  • When they're ready, remove the pan from the heat and take the eggs out using a spatula. Place on a plate and dab them with some paper towels to soak up any excess oil. Serve on toast - no need to butter it - with a sprinkling of the sea salt and freshly ground black pepper.
  • Delicious served on some 7-grain bread.

  • Heat the oil in a medium nonstick skillet over low heat until slightly shimmering, about 5 minutes. 1 lb diced baked ham
1 tablespoon oil
1 medium green pepper, diced
1 medium onion, diced
1 cup sliced mushrooms
4 eggs
2 cups milk
1 loaf whole wheat bread, 12 - 18 slices
6 ounces shredded cheddar cheese
salt
pepper

Steps:

  • Cook ham in oil until it sizzles. Add pepper, onion and mushrooms. Season to taste. Saute until tender.
  • Beat eggs and milk in a medium bowl.
  • Spray 13 X 9" casserole with Pam. Line with 1/3 bread; sprinkle with 1/2 ham mixture and 1/2 cup cheese. Repeat. Top with bread.
  • Pour egg mixture over layers and top with cheese.
  • Refrigerate 1-24 hours.
  • Bake uncovered at 350 for 1 hour or until set.

1/2 cup each shredded cheddar, part-skim mozzarella and Monterey Jack cheeses

  • In a large skillet, cook the sausage, onion, mushrooms, salt and pepper over medium heat until meat is no longer pink; drain and set aside., In a blender, process eggs and milk for 1 minute or until smooth. Pour into a greased shallow 1-1/2-qt. baking dish; bake at 400° for 5 minutes. Cover with tomatoes and the sausage mixture.
