MUSSELS WITH PERNOD AND CREAM



Mussels with Pernod and Cream image

Yield Serves 2; can be doubled

Number Of Ingredients 7

1 1/3 cups sliced leeks (white and pale green parts only)
1 1/4 cups dry white wine
1/4 cup diced red bell pepper
2 pounds mussels, scrubbed, debearded
1/2 cup whipping cream
3 tablespoons Pernod or other anise liqueur
3 tablespoons chopped fresh parsley

Steps:

  • Combine sliced leeks, dry white wine and red bell pepper in large pot. Add mussels. Bring to boil over high heat. Cover pot and cook until mussels open, about 5 minutes. Using tongs, transfer mussels to medium bowl (discard any mussels that do not open). Add whipping cream and Pernod to pot; boil until liquid is slightly reduced, about 4 minutes. Mix in chopped parsley. Return mussels and any accumulated juices to pot. Simmer until mussels are warmed through, about 1 minute; season with salt and pepper. Serve mussels with broth.

4 chicken breasts
350 ml white wine
350 ml chicken stock
150 ml cream
2 garlic cloves
4 spring onions (chopped)
1 stick celery (chopped)
2 slices bacon (chopped)
2 teaspoons tarragon
1 teaspoon thyme
1 chili pepper
2 teaspoons Pernod
2 teaspoons cornflour

Steps:

  • Place all ingredients except cream and pernod into a casserole dish and cook in the oven at 190 C for about 25 minutes or until chicken is cooked through.
  • Drain liquid through a sieve into a saucepan. Cover chicken to keep warm.
  • Reduce the liquid slightly, then add the cornflour (mixed with a little water) and the pernod.
  • Lower the heat and add the cream - do not boil after adding cream or it might split.
  • Pour sauce over chicken and serve.

I first enjoyed this shrimp dish at an outdoor cafe on St. Denis street in Montreal (a long, long, time ago). Sharing so you can enjoy it, too. This would make a perfect, romantic dinner.

8 fresh shrimp, very large, shelled & deveined
2 tablespoons butter
1 teaspoon green peppercorn
2 tablespoons Pernod
2 tablespoons chopped fresh chives
1/2 cup cream

Steps:

  • Melt the butter in a skillet, add the peppercorns and sauté for about 1 minute.
  • Add the shrimp and cook 1 to 1 1/2 minutes on each side or until they are just pink.
  • Pour over the Pernod and flame. Add chives and cream and heat just to simmer. Serve immediately with lots of crusty bread to mop up the sauce!

SEARED SEA SCALLOPS IN PERNOD CREAM SAUCE

This recipe was given to me by my butcher's wife who learned it in cooking school

2 lbs Large Sea Scallops
3 TBS butter (smart balance)
3 TBS olive oil
1 large shallot chopped (fine)
3/4 cup white wine
1/2 lemon, juiced
3/4 heavy cream
1 TBS Pernod ( to cut fat can substitute w/evaporated milk)
2 TBS chopped tarragon
salt and pepper to taste
16 oz Barilla Plus multigrain Farfalle

Steps:

  • Pernod is an anise flavored liqueur - Bev Mo carries it
  • This makes 8 servings which is 3 scallops per person served over 2 oz of pasta per person.
  • Sauce - heat olive oil in a pan. Saute the tarragon with the shallots until they are soft and starting to carmelize. Add the wine and lemon juice and reduce until thick. Add the cream and Pernod and turn down the heat to keep it warm, but be sure not to let it bubble.
  • Heat another saute pan (I prefer stainless for searing) and when pan nice and hot add butter - when butter has stopped bubbling add scallops in a single layer (don't over crowd them). Sear on one side till golden brown (about 2 minutes) than flip over and sear the other side (about 1 to 1 1/2 min).
  • Transfer scallops to a plate then add the cream sauce to the pan that you seared the scallops and deglaze. Place the drained pasta in the sauce and stir to coat.
  • Place pasta on each dish, topped by the scallops.
  • Pairs nicely with a glass of white wine
